1 (13 1/2-ounce) bag store-bought large tortilla chips
1 cup refried beans
3/4 cup shredded Monterey Jack cheese
3/4 cup shredded cheddar cheese
1/2 cup chopped pickled jalapeno chiles
1 jalapeno chile, seeded, ribs removed, and minced
1/2 cup canned sliced black olives
Fresh cilantro leaves
Chili sauce or hot-pepper sauce
Chopped tomatoes, for serving (optional)
Sour cream, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. Top each chip with about 1 teaspoon beans and 1 1/2 teaspoons cheese; evenly divide chiles and olives among tortilla chips. Transfer to an ovenproof serving platter, forming layers; add chili sauce.
  • Bake until heated through and cheese melts, 3 to 5 minutes. Remove, and garnish with cilantro leaves. Serve immediately topped with tomatoes and sour cream, if desired.

Number Of Ingredients 6

One 16-ounce can refried beans (I opt for mild rather than spicy for late-night fare)
1/2 cup reduced-fat or regular sour cream
3/4 cup bottled salsa
1 cup shredded Cheddar or Mexican Blend cheese
2 tablespoons chopped fresh cilantro, plus more for garnish
A few big handfuls of yellow corn tortilla chips

Steps:

  • With a large spoon spread out the beans in a ring on a large microwave-safe dinner plate, leaving clear about 4 inches in the center of the plate. That's where you're going to pile the chips. Smear the sour cream and then the salsa over the beans. Sprinkle about half of the cheese and then the cilantro over everything. As you build up the layers, be sure to leave the space in the center of the plate empty.
  • Microwave on high for 2 minutes. Remove the plate from the microwave, pile the chips in the center of the plate, and sprinkle the remaining cheese over the chips. Return the plate to the microwave and nuke again on high for 1 minute, until the cheese has melted. Use a pot holder to take the plate out of the oven; it will be hot. Dash with a couple pinches of chopped cilantro. Serve hot.

1 1/2 pounds ground beef
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon cayenne
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
Two 9-ounce bags round tortilla chips
One 15-ounce can black beans, rinsed and drained
5 cups shredded Cheddar and Monterey Jack cheese blend
1 1/2 cups sour cream
8 ounces crumbled queso fresco
2 avocadoes, diced
Hot pepper sauce, for serving
Pico de gallo, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large saute pan over medium-high heat, add the ground beef, salt, pepper, cayenne, cumin, garlic powder and onion powder. Using the back of a wooden spoon, break up the beef into small bits and cook until browned, 5 to 8 minutes.
  • Set aside a handful of the tortilla chips for sprinkling on top of the nachos, then layer half of the remaining chips in a large baking dish. Layer half of the beef, followed by half of the black beans and then half of the Cheddar and Monterey Jack cheese. Repeat the layering process 1 more time to create 2 layers. Crush the reserved tortilla chips and sprinkle on top for some crunch.
  • Bake until the cheese is melted, about 20 minutes. Serve with the sour cream, queso fresco, diced avocado, hot pepper sauce and pico de gallo for topping.

8 fluid ounces no-salt-added tomato sauce
4 ounces diced green chilies
1 green onion, sliced
1/4 teaspoon Tabasco sauce
10 ounces tortilla chips
2 cups shredded Mexican blend cheese
1 avocado
1 teaspoon fresh squeezed lemon juice
4 fluid ounces sour cream
jalapenos or red pepper, to garnish

Steps:

  • Combine tomato sauce, chilies, green onion, hot pepper sauce, and optional ingredients in a bowl; let stand for 15 minutes.
  • Place tortilla chips in a shallow 8" X 10" baking dish- pour sauce over chips; sprinkle grated cheese over all.
  • Broil nachos for 3 minutes or until cheese melts.
  • Just before serving, seed, peel and mash avocado.
  • Stir in lemon juice, spoon avocado mixture and sour cream on hot nachos and top with jalapeno slices/red peppers.
  • Serve immediately.
