NUT-FREE CARAMEL RICE CRISPY SQUARES
A simple 5-ingredient treat that's perfect for school. These rice crispy squares are nut-free, gluten-free and refined sugar-free. Dates make them naturally sweet and sticky, while giving them a light caramel flavor. Drizzle them with SunButter and chocolate for a healthy and allergy-friendly treat.

Steps:
- Line a 9x9 inch dish with parchment paper.
- In a food processor, blend the dates with SunButter, water and vanilla until smooth.
- Transfer the date mixture to a large bowl and mix with the rice puffs.
- Press the mixture to the bottom of the prepared dish. Drizzle with melted chocolate.
- In a small plastic Ziploc bag, place the 2 tablespoons of SunButter used for drizzling. Cut a very small whole in one of the corners of the bag. Use this as a piping bag to drizzle the SunButter more evenly. Alternatively, you can drizzle with a spoon.
- Put the squares in the freezer for at least 30 minutes before cutting.
- Cut into 12 squares.
CARAMEL RICE KRISPIE TREATS
Chewy caramel cereal treats made with homemade caramel are rich and buttery.

Steps:
- Pour the cereal into a large heatproof bowl.
- Grease a 9x13-inch pan with butter.
- Cut the 4 ounces of butter into small pieces and place in a medium saucepan.
- Add the corn syrup, sweetened condensed milk, and brown sugar and stir together until the sugar begins to dissolve.
- Set the pan over medium heat and let the ingredients heat until bubbles begin to form around the edges of the pan.
- Wash the sugar crystals off the side of the pan by placing a tight-fitting lid on the pan for about 2 minutes.
- Allow the caramel to boil for 5-6 minutes until the caramel reaches a temperature of 240°-248° Fahrenheit (115°-120° Celsius) or becomes golden brown.
- Pour the caramel over the cereal.
- Stir until evenly incorporated.
- Pour into the well-buttered 9X13-inch pan.
- Spread into an even layer.
- Cool for at least 2 hours.
- Remove from pan and cut into 24 squares.

CARAMEL RICE KRISPIE TREATS
Caramel Rice Krispie Treats are soft, chewy marshmallow squares topped with smooth, rich caramel for an incredible take on rice krispie treats.

Steps:
- Spray a 9x13 glass pan with non-stick spray. Also spray a rubber scraper.
- In a large bowl measure out marshmallows and butter. Microwave for about 1 minute 15 seconds, until marshmallows are puffing up.
- Stir the Rice Krispie cereal into the marshmallow mixture. Once well mixed, transfer to the 9x13 pan and gently press in until the treats are as even as possible.
- Once they're cooling in the pan, pour the caramel bits into a microwave-safe dish and add the milk. Microwave for about 1 minute 20 seconds. Bits won't necessarily look melted, but once you begin stirring them, they'll run smooth. If they don't, put back in the microwave for another 10 seconds.
- Pour caramel over the Rice Krispie Treats and use your rubber scraper to smooth the caramel over the top until even.
- Sprinkle on coarse sea salt and let cool completely.
- Once cool, I like to take all the treats out and put the entire block on a cutting board. I slice them all at once, then return them back to the pan.
PEANUT BUTTER KRISPY RICE SQUARES
Steps:
- Line an 8-inch square baking dish with parchment paper, allowing 1-inch wings to hang over the edges; set aside.
- In a large pot over medium heat, melt the butter. Add the marshmallows and salt and cook, stirring, until the marshmallows are melted and smooth. Remove from the heat and stir in the peanut butter and vanilla (the peanut butter can still be swirly). Add the cereal, crushed graham crackers, chocolate chips and sprinkles and fold with a large rubber spatula to combine.
- Pour the mixture into the prepared baking dish, using the spatula to spread it out evenly. Place a piece of parchment on top and then use your hands to press the mixture down very firmly. Top with additional sprinkles as desired. Let the mixture firm up in the refrigerator for 1 hour, then cut into squares.
PEANUT BUTTER-MARSHMALLOW RICE KRISPIES SQUARES
This can be made on top of the stove or in the microwave using a large heat-proof bowl --- this recipe is pretty much fool-proof so don't worry about exact measurements, the frosting drizzle is only optional, I most always double the recipe and spread into a 13 x 9-inch pan, throw in some salted chopped peanuts also! :)

- In a large saucepan melt the butter over medium heat.
- Add in marshmallows and vanilla; stir until melted.
- Mix in the peanut butter until combined.

- Layer One: Melt the margarine and marshmallows.
- Stir in Rice Krispies cereal.
- Pat in a buttered 9 x 13 baking pan.
- Layer Two: Melt the caramels, margarine and milk and bring to a boil.
- Pour over layer one.

- Layer Three: Melt margarine and marshmallows.

- Butter a 9x13-inch pan.
- In a large saucepan, mix the sugar& Karo syrup.
- Cook over medium heat until mixture starts to boil.
- Remove pan from heat and stir in peanut butter.
- Add the Rice Krispies and mix until covered.
- Put into the buttered pan and lightly press.
- In a microwave-safe bowl, cook both kinds of chips until melted.
- Pour on top of Krispies squares and spread to cover.
- Cool before cutting into squares.
