Homemade Wine image

This is an easy recipe for homemade wine. You can choose whatever flavor you like but my favorite is the red. You will need a sterile milk jug, a large latex balloon and a rubber band to complete the project. This Wine is a bit stronger than regular table wine. Its great for cooking as well as drinking.

1 (.25 ounce) package active dry yeast
4 cups sugar
1 (12 fluid ounce) can frozen juice concentrate - any flavor except citrus, thawed
3 ½ quarts cold water, or as needed

Steps:

  • Combine the yeast, sugar and juice concentrate in a gallon jug. Fill the jug the rest of the way with cold water. Rinse out a large balloon, and fit it over the opening of the jug. Secure the balloon with a rubber band.
  • Place jug in a cool dark place. Within a day you will notice the balloon starting to expand. As the sugar turns to alcohol the gasses released will fill up the balloon. When the balloon is deflated back to size the wine is ready to drink. It takes about 6 weeks total.

30 walnuts, shelled and chopped
1 liter Everclear alcohol (180 proof)
1 kg sugar

Steps:

  • Make a mixture of the nuts and alcohol and have it sit for 3 months.
  • Filter out the nuts.
  • Add the sugar.
  • Let mixture settle for another 2 to 3 days.

From the Best of Food and Wine. This is a savory-sweet mix of pecans, almonds and walnuts. These would make a great gift.

2 cups pecans
2 cups almonds
2 cups walnuts
1/4 cup pure maple syrup
2 tablespoons extra virgin olive oil
2 tablespoons mixed herbs (rosemary, sage, savory and thyme, mixed and finely chopped)
1/4 teaspoon cayenne pepper
salt & freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees. In a bowl, toss the nuts with the maple syrup, olive oil, herbs and cayenne.
  • Spread the nuts on a rimmed baking sheet and bake for 15 minutes. (I place them on parchment paper for easy clean-up), stirring occasionally, until browned.
  • Season the nuts with salt and pepper and toss frequently until cooled.

  • Preheat your oven to 350 and ore your cookie sheet for nonstick. Be sure to use a cookie sheet with sides . For prepping, you could simply use baking nonstick spray. However, I am personally a fan of parchment paper as I like an easy transfer and clean up.
  • In a large mixing or similar bowl, beat your egg white. You want your egg white to be beaten until it appears to be foam-like.
  • Stir in the wine, nuts, and salt. I mentioned earlier that if you are using salted nuts then you can omit the salt if you desire to.
  • When the nuts seem to be well-coated, you can transfer them to your prepped cookie sheet from the first step. Make sure that you evenly spread out the nuts on the pan.
