NUTTY AS A FRUITCAKE (HEALTHY VERSION)
I hated fruitcake until I tried this. It took me 2 years to get the recipe from a friend at church. I am patient. It was worth the wait. A little history from Christmas Corner-Traditions: Fruitcake has been a holiday tradition for hundreds of years. The oldest references to fruitcake date back to Roman times, when the recipe included pomegranate seeds, pine nuts, and raisins mixed into barley mash. In Europe in the 1700s, a ceremonial type of fruitcake was baked at the end of the nut harvest and consumed the following year to celebrate the beginning of the next harvest. In the 18th century in England, there were laws restricting the use of plum cake (the generic word for dried fruit at the time) to Christmas, Easter, weddings, christenings, and funerals. Between 1837 and 1901, fruitcake was popular. It is said Queen Victoria received a fruitcake for her birthday one year, and legend has it, she put it aside for a year as a sign of restraint, moderation, and good taste. It is the custom in England for unmarried wedding guests to put a slice of the cake, traditionally a dark fruitcake, under their pillow at night so they will dream of the person they will marry. Fruitcake is full of healthy nutrients. The fruit and fiber in fruitcake is loaded with anti-oxidants, molecules that protect cells from disease and damage. The cakes contain a lot of sugar which means that water activity will be low, which keeps mold from forming and makes the cake last a long time. A fruitcake can last several months. If there's no mold, it's safe to eat, even if it has been around a while. But fruitcakes can't last forever.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Mix all ingredients, except condensed milk, in a large bowl.
- Pour the can of condensed milk over the fruit mixture. Mix well.
- Pour into well greased loaf pans(2 large or 3 small). Bake for 30 minutes at 350 degrees Fahrenheit.
- Cool in pans a few minutes before turning out onto wire racks to finish cooling.
- The longer this keeps the better it tastes! Enjoy!

NUTS ABOUT FRUIT CAKE
Steps:
- In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
- Add KELLOGG'S® RICE KRISPIES® cereal, fruit and pecans (if desired). Stir until well coated.
- Press mixture into six 4 1/2 x 2 1/2 x 1 1/2-inch pans coated with cooking spray. Cool. Remove from pans.
- Cut each cherry into 5 slivers. Arrange slivers in shape of flower on top of each loaf.
- In small bowl whisk together powdered sugar and orange juice. Spoon over loaves. Let stand at least 1 hour. Best if served the same day.
- MICROWAVE DIRECTIONS:
- In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Continue with recipe as directed above. Microwave cooking times may vary.
EASY PEASY HEALTHY FRUIT CAKE

Most fruit cakes contain nuts, sugar and alcohol. This fruit-sweetened cake is nut-free and dairy free - good news for those of you with food allergies; and perfect for anyone wanting a healthier alternative to refined sugar-sweetened cakes. Fruit is sweet enough. The best thing about this cake - it is unbelievably moist. I have used rice and potato flours to make this cake easy and affordable. But it works really well with a buckwheat, tapioca, rice flour mix as well.Try to purchase mango tinned in natural fruit juice instead of sugar syrup. This mildly flavoured cake hits a sweet spot without making you sick.

- Preheat an oven to 160 C / 320°F.
- Put fruit, water and contents of the whole tin of mangoes (including the natural juice) into a saucepan.
- Bring to the boil and simmer just for a minute.
- Sieve the flours, baking powder, baking soda, xanthan and salt together.
- Beat the eggs lightly in your mixer and gradually combine all the ingredients together.
- Place in a greased round tin lined with baking paper.
- Bake for about 45 minutes to an hour until a skewer comes out clean.

CHRISTMAS SPECIAL FRUITCAKE
I've made this quick and easy Christmas fruit cake many times during the past several years, giving it to family and friends for gifts. I also gave one to my doctor, and he claims it's the best he's ever tasted.

- Preheat oven to 300°. In a large bowl, combine the nuts, dates and cherries. Combine the flour, sugar, baking powder and salt; add to nut mixture, stirring until nuts and fruit are well coated. , In a small bowl, beat eggs until foamy; stir in vanilla. Fold into nut mixture and mix well. Pour into a greased parchment-lined 9x5-in. loaf pan. , Bake at 300° for 1-3/4 hours or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
