Healthy clean protein bars to definitely satisfy a chocolate craving!! from clean eating, fall 2008, pg84 Great for afternoon snack!!!! each bar has about 29g of protein!!!!! with no sugar or anything added. YUM

Number Of Ingredients 6

4 scoops chocolate protein powder
2/3 cup flax seed meal
1/4 cup water
4 tablespoons chunky peanut butter
1 tablespoon unsweetened cocoa
1/2 tablespoon stevia (optional)

Steps:

  • place all items in large bowl and mix until well blended, will become a sticky thick dough. if feel you need to add more water, add a tablespoon at a time. Seperate dough into 4 separate parts, i measure about 1/3 each. Place seperated dough on saran wrap and mold into a bar shape. Then just stick em in fridge or freezer. They taste way better cold and are not as sticky -- have great flavor! I'm trying to come up with other ways and ideas of how to make these even yummier.

  • In a microwave safe bowl or stovetop, combine your peanut butter with brown rice syrup and melt together. Whisk to ensure it is combined. Pour into the dry mixture and mix until fully incorporated. If batter happens to still be crumbly, add water/milk until a thick batter remains.
  • Pour batter into lined baking dish and press firmly into place. Refrigerate for at least 20 minutes to firm up. Once slightly firm, top with optional chocolate frosting and refrigerate for a further 40 minutes. Remove and cut into bars.
