OATMEAL RAISIN CAKE



Oatmeal Raisin Cake image

Makes 1 (10-inch) cake

Number Of Ingredients 14

1 cup butter, softened
¾ cup granulated sugar
½ cup firmly packed light brown sugar
5 large eggs
2 cups quick-cooking oats
1½ cups all-purpose flour
2 teaspoons baking powder
1½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ cup plus 3 tablespoons whole milk, divided
½ cup applesauce
1 cup raisins
1 cup chopped walnuts
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350°. Spray a 12- to 15-cup Bundt pan with baking spray with flour.
  • In a large bowl, beat butter and sugars with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape bowl. Add eggs, one at a time, beating well after each addition.
  • In another large bowl, whisk together oats, flour, baking powder, cinnamon, and nutmeg. Gradually add oat mixture to butter mixture, beating just until combined. Beat in ½ cup milk and applesauce until combined. Stir in raisins and walnuts. Pour batter into prepared pan.
  • Bake until a wooden pick inserted near center comes out clean, 40 to minutes. Let cool in pan for
  • minutes. Remove from pan, and let cool completely on a wire rack.
  • In a small bowl, whisk together confectioners' sugar and remaining 3 tablespoons milk; drizzle onto cooled cake. Let stand until glaze is set, about 20 minutes. Cover and refrigerate for up to 3 days.

1 1/2 cups water test
1 cup old-fashioned oats
1 cup dark raisins
1/2 teaspoons salt
1 cup packed dark brown sugar
1 cup unsweetened applesauce
1/4 cup vegetable oil
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 large eggs
13 by 9-inch baking pan

Steps:

  • Bring the water to a boil in a medium-size saucepan over moderately high heat. Stir in the oats. When the liquid returns to a boil, stir in the raisins and salt. Reduce the heat and simmer 4 to 5 minutes, stirring occasionally, until the oats are soft and the water is absorbed. Remove from heat, stir in the sugar, applesauce, and oil. Cool to lukewarm. Meanwhile, heat the oven to 350 degrees, and grease the pan. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl. Stir to mix well. Stir the eggs into the oat mixture. Add the flour mixture, and stir just until moistened. Spread in the prepared pan and bake 30 to 40 minutes, or until the cake starts to shrink from the sides of the pan and a wooden pick inserted in the center of the cake comes out clean. Place the pan on a wire rack to cool. The cake is good served warm. Or cool completely, cover tightly, and store overnight at room temperature before serving or freezing.

1 (300 ml) can eagle brand sweetened condensed milk (regular or low-fat)
2 cups oats
2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 cups raisins
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°F Grease and line a 9x9-inch baking dish with parchment paper, overlapping 2 sides for easy removal.
  • Cream butter, and brown sugar untl smooth. Add eggs, vanilla and sweetened condensed milk, beating until incorporated.
  • Gradually add oats, flour and bakihg powder, beating until combined.
  • Add raisins.
  • Press half the dough into prepared dish. Sprinkle with chocolate chips. Top with remaining dough.
  • Bake in preheated oven 45 minutes or until a toothpick inserted in center comes out clean. Cool and cut into squares,.

1 ½ cups boiling water
1 cup rolled oats
½ cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon salt
¼ cup packed brown sugar
½ cup white sugar
1 cup flaked coconut
6 tablespoons butter, melted
¼ teaspoon vanilla extract
¼ cup cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 13 pan.
  • In a small bowl, pour boiling water over oats. Mix well, and cool.
  • In a large bowl, combine butter or margarine, 1 cup brown sugar, 1 cup white sugar, eggs, flour, baking soda, spices, and salt. Add cooled oatmeal mixture, and stir to combine. Pour batter into pan.
  • Bake for 35 minutes.
  • While cake is baking, combine 1/2 cup white sugar, 1/4 cup brown sugar, coconut, melted butter or margarine, vanilla, and cream in a mixing bowl. Remove cake from oven, and turn on broiler. Drop mixture by small spoonfuls on top of cake. Spread evenly and carefully. Broil for 2 to 5 minutes, until topping is bubbling and lightly browned.
