Oil-Free Roasted Potatoes image

Beautiful colors and delightful taste make these oil-free roasted potatoes great for dinner or breakfast.

2 large russet potatoes (peeled and cut into 1″ pieces.)
2 large yams (peeled and cut into 1″ pieces.)
1 large pepper (any color, cut into 1″ pieces)
1 large red onion (cut into 1″ pieces)
2-3 Tbl whole wheat flour

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the potatoes, onion, and peppers in a large saute pan with a little water and once water is boiling, steam for about 5 minutes until the potatoes are crisp-tender.
  • Drain the steamed vegetables, but leave them in the pot (don't put the pot back on the heat), and sprinkle the flour over.
  • Put the lid back on the pot, and shake it vigorously for a few seconds. You are marring the edges, which will facilitate the crunchiness of the potatoes later on.
  • Dump the potatoes onto a sheet pan lightly sprayed with oil or use parchment paper or a silpat, and make sure they are in a single layer (don't crowd the potatoes, or the edges won't get crispy). Sprinkle with salt and pepper to taste.
  • Roast for 30-45 minutes at 450 degrees F, turning after half way done, but watch them carefully so as not to burn.

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

⅛ cup olive oil
1 tablespoon minced garlic
½ teaspoon dried basil
½ teaspoon dried marjoram
½ teaspoon dried dill weed
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried parsley
½ teaspoon crushed red pepper flakes
½ teaspoon salt
4 large potatoes, peeled and cubed

Steps:

  • Preheat oven to 475 degrees F (245 degrees C).
  • In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt. Stir in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
  • Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.
