Chicken thighs are seasoned with Old Bay seasoning and cooked perfectly for tender, juicy chicken.

2 pounds chicken thighs (about 6, bone in, skin on)
4 tablespoons old bay seasoning (to taste)

Steps:

  • Preheat oven to 375°F.
  • Pat chicken thighs dry with paper towel. Trim excess fat. Rub with olive oil, then add old bay seasoning to coat evenly.
  • Heat a cast iron or oven safe nonstick skillet over high heat. Once hot, add chicken thighs, skin side down. Sear for 5 minutes or until skin is browned. Flip over.
  • Transfer pan to preheated oven. Cook for an additional 20-22 minutes or until chicken reaches an internal temperature of 165°F.
  • Rest chicken for 5 minutes before serving.

1 tablespoon seafood seasoning (such as Old Bay®)
1 teaspoon salt
4 skinless, boneless chicken breast halves
vegetable oil cooking spray
2 ½ tablespoons hot pepper sauce (such as Frank's RedHot®)
2 tablespoons Worcestershire sauce
2 tablespoons unsalted butter, melted

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix flour, seafood seasoning, and salt in a large resealable plastic bag; place chicken breasts in bag, seal, and shake to coat chicken with seasoned flour. Place chicken into a roasting pan and spray with cooking spray.
  • Bake in the preheated oven until browned and an instant-read meat thermometer inserted into the thickest part of a breast reads at least 160 degrees F (70 degrees C), 35 to 40 minutes.
  • Mix hot pepper sauce, Worcestershire sauce, and unsalted butter in a large bowl. Toss baked chicken breasts in hot pepper mixture to coat; serve.

The basic reciepe came from an older can of Old Bay Seasoning. I added the sweet potatoes and prunes.

1 slightly beaten egg
2/3 cup Italian seasoned breadcrumbs
3 lbs fryer chickens, cut up or 3 lbs boneless chicken thighs
6 tablespoons oil
1 cup milk
1/3 cup flour
2 teaspoons Old Bay Seasoning
3 sweet potatoes
12 pitted prunes

Steps:

  • Combine egg& ¼ c milk in bowl.
  • In 2nd bowl mix flour, Old Bay& crumbs.
  • Dip chicken in milk/egg mixture, then into crumbs.
  • Brown chicken in hot oil, turn and add rest of the milk, cover tightly and simmer 35 mins, uncover and cook til tender.
  • Peel and slice potatoes 2” thick and add to chicken for the last 20 mins, add prunes for the last 5 minutes.
