Spiced Peach Butter image

Unlike jams and preserves, butters are cooked slowly for a long period of time. Butters are pretty easy to make and it's difficult to screw up a batch, but they are a little time consuming.

• 18-20 medium-sized ripe peaches
• 4 cups sugar
• 2 tsp ground ginger
• 1 tsp ground allspice
• ¼ tsp ground cloves

Steps:

  • Peel and slice the peaches.
  • Place in a large pot and cook over low heat until soft, adding small amounts of water if necessary to prevent scorching.
  • Puree peaches with an immersion blender or in a food processor.
  • Return puree to pot - you should have about 8 cups of puree. Add sugar and spices.
  • Cook over medium-low heat, stirring often until mixture has reached desired thickness. (about 45 minutes).
  • Ladle into hot, clean, half-pint jars leaving about ¼ inch head space. Top with the two-piece lids and rings, and process in a water bath for 15 minutes.

This smells amazing while it cooks! It serves two purposes really, yummy to eat and a great room scent!

8 cups sliced peaches
1 teaspoon clove
4 cups sugar
1/2 teaspoon nutmeg
4 teaspoons cinnamon
1/2 cup red cinnamon candies (heaping)

Steps:

  • Place peaches in blender and pulse till smooth (if you like it a little chunky, just don't pulse as much).
  • Place peaches and all other ingredients in a heavy bottom pot.
  • Cook on medium to low heat for about 3 hours , the thicker you want it the longer you cook it.
  • This can then be processed in a water bath for 5 minutes.
  • The amount you end up with is determined by how much you cook it down. I get approximately 6-1/2-7 cups of butter.

2 1/2 cups all purpose flour
5 teaspoons sugar
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into 1/2-inch pieces
1/4 cup frozen lard or solid vegetable shortening, cut into 1/2-inch pieces
3/4 cup plus 2 tablespoons (about) chilled buttermilk
For filling
3/4 cup plus 1 tablespoon sugar
1/4 cup all purpose flour
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
3 3/4 to 4 pounds ripe peaches
2 tablespoons unsalted butter, cut into small pieces
1 egg, beaten to blend (for glaze)

Steps:

  • Make crust:
  • Blend flour, sugar and salt in processor. Add butter and lard; cut in using on/off turns until fat is reduced to pea-size pieces, about 25 turns. Using on/off turns, blend in 3/4 cup buttermilk until dough just comes together in moist clumps, adding more buttermilk if dough is dry. Gather dough into ball. Divide into 2 pieces, 1 slightly larger than the other. Flatten each into disk. Wrap disks in plastic; chill at least 1 hour or overnight.
  • Make filling:
  • Mix 3/4 cup sugar and next 4 ingredients in large bowl. Cook peaches in pot of boiling water 30 seconds. Transfer to bowl of cold water; cool. Peel, halve and pit peaches. Slice peaches into bowl with sugar mixture; toss to coat. Let filling stand until juices form, stirring often, about 20 minutes.
  • Place 1 rack in center and 1 rack at lowest position in oven; preheat to 400°F. Roll out larger dough disk on floured surface to 12- to 13-inch round. Transfer dough to 9-inch-diameter glass pie dish. Trim overhang to 3/4 inch. Mound filling in dish; dot with butter. Roll out second disk on floured surface to 12-inch round. Gently roll up dough onto rolling pin; drape dough over filling. Pinch overhang and edge of top crust together. Fold edge under. Cut several slits in top crust. Crimp edge. Brush pie with beaten egg; sprinkle with 1 tablespoon sugar.
  • Place pie on center rack in oven. Bake 50 minutes. Place baking sheet on lowest rack to catch drippings. Continue to bake pie until crust is brown and juices bubble thickly through slits, covering very loosely with foil if top browns too quickly, about 20 minutes. Cool on rack 1 hour. Serve warm or at room temperature.

Peach butter is a wonderful delight in the winter to remind you of how summer tastes. Great on hot buttered biscuits!

18 medium (2-1/2" dia) (approx 4 per lb)s peaches
1 tablespoon water, or more as needed
4 cups white sugar
½ teaspoon ground cinnamon, or more to taste
¼ teaspoon ground nutmeg, or more to taste

Steps:

  • Set out a large bowl of ice water.
  • Bring a large pot of water to a boil.
  • Carefully put 2 peaches at a time in the boiling water; leave them until scalded, 30 seconds to 1 minute. Quickly transfer to the ice water, leaving them to cool for 30 seconds to 1 minute. Remove to a paper towel-lined plate. Repeat to scald and cool remaining peaches.
  • Peel peach skin; discard skin and pits. Chop peach flesh and place in a large pot over medium-low heat. Cook, stirring frequently, until soft, about 30 minutes, adding water if necessary to prevent from sticking.
  • Meanwhile, inspect 4 pint-sized jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until peach butter is ready. Wash new, unused lids and rings in warm soapy water.
  • Place cooked peaches in a blender; puree until smooth. Measure out 8 cups peach pulp and transfer back to the pot. Reserve any extra pulp for another use.
  • Add sugar, cinnamon, and nutmeg to the peach pulp. Bring to a simmer over medium-low heat; simmer, stirring frequently, until mixture has reduced and thickened, 5 to 10 minutes.
  • Pack peach butter into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Ever found an empty pan of something in your fridge? I did! I found this recipe in a book. It was rather plain so I added my own tasteful touches and served it to my family. They loved every bite and it was gone in just a few hours. If fresh peaches are out of season then use the best frozen peaches you can but cut back on the sugar.

1/2 cup butter (not margarine)
1 cup all-purpose flour (or cake flour)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
2 teaspoons nutmeg
1 1/2 teaspoons cinnamon
1/2 teaspoon clove (or allspice)
1 cup milk
3 cups peaches, fresh, peeled and sliced about 1/4-inch thick (I used 4)
1/4 cup brown sugar
1/2 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 13 X 9 inch baking dish with non stick spray.
  • Put butter in pan and put in oven to melt.
  • Meanwhile, In a mixing bowl, blend dry ingredients EXCEPT BROWN SUGAR together.
  • Add milk and stir well.
  • Using oven mitts, remove the baking dish from the oven if butter is melted.
  • Pour batter into dish and even out.
  • Spoon peaches wiwth some juice (if any) evenly over the batter.
  • Bake at 350 for 30 minutes then check for doneness.
  • (Mine baked 40 minutes, sister's baked 30).
  • Cobbler is done when batter rises and browns on top and firm in center.
  • Sprinkle brown sugar over the top.
  • Cover with foil (or other top) immediately so that sugar can warm up and stick to the cobbler.

1 teaspoon ground nutmeg
1/8 teaspoon salt

2 cups coarsely chopped fresh or frozen peaches, thawed

Steps:

  • In a large saucepan, bring the water, butter, nutmeg and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. 4 pounds Bartlett pears (unpeeled), cored, cut into 1-inch chunks
1/2 cup dry white wine
2 tablespoons fresh lemon juice
1 1/2 cups sugar
4 orange slices

4 whole cloves
1 vanilla bean, split lengthwise
1 cinnamon stick
1/2 teaspoon ground cardamom
Pinch of salt

Steps:

  • Combine pears, wine and lemon juice in heavy large saucepan. Cover and simmer until pears are soft, pushing unsubmerged pears into liquid occasionally, about 25 minutes. Force through food mill or coarse sieve to remove pear peel. Transfer to processor and puree.
  • Return puree to heavy large sauce-pan. Add remaining ingredients. Stir over low heat until sugar dissolves. Increase heat to medium and boil gently until mixture thickens and mounds slightly on spoon stirring often, about 50 minutes.
  • Discard fruit slices, cloves, vanilla and cinnamon. Spoon butter into hot canning jar, filling only to 1/4 inch form top. Immediately wipe rim, using towel dipped into hot water. Place lid on jar; seal tightly. Repeat with remaining jars.
  • Arrange jars in large pot. Add boiling water to pot so that at least 1 inch of water covers tops of jars. Cover pot and boil rapidly 15 minutes. Remove jars from pot. Cool to room temperature. Press center of each lid. If lid stays down, jar is sealed. (If lid pops up, store butter in refrigerator.) Store in cool dry place up to 1 year. Refrigerate after opening.
