Old Fashioned Butter Tarts image

The perfect butter tart recipe with sweet, slightly runny filling and flaky melt in your mouth pastry.

Tart Shell Pastry
2 2/3 cups all purpose flour
1 tbsp sugar
1 tsp salt
1 cup butter chilled and cut into pieces
1/4-1/2 cup ice cold water
Butter Tart Filling
1/2 cup soft butter
1/2 cup brown sugar (packed)
1/2 cup corn syrup (golden)
2 eggs (slightly beaten)
1 tsp vanilla
pinch of salt

Steps:

  • Butter Tart Pastry
  • Sift flour, salt and sugar together.
  • Using pastry blender cut butter into flour mix until resembles course meal.
  • Add cold water a bit at a time until dough just starts to hold together. (too much water will make for a tough dough).
  • Press dough together and shape into disk.
  • Wrap in plastic wrap and refrigerate for at least 30 minutes.
  • Roll out tart dough and cut 16 4-inch circles.
  • Press dough in muffin cups (try not to stretch dough).
  • Refrigerate until filling is prepared.
  • Butter Tart Filling
  • In large bowl, mix together butter, brown sugar and corn syrup. Stir until butter is creamed and sugar is dissolved.
  • Add eggs, vanilla and pinch of salt. Mix well.
  • Fill tart shells with filling.
  • Bake 400F for 15-20 minutes.
  • Filling should be lightly browned and still bubbling.
  • Let tarts cool in pan for about 10 minutes, then transfer to rack to cool completely.

These old fashioned butter tarts are a Canadian classic. A rich filling of brown sugar, butter and raisins is surrounded by a flaky pastry shell. Decedent and delicious, they are a holiday favourite.

24 Tart shells (uncooked, homemade or store bought)
2/3 Cup Butter (softened)
2 Cups Brown sugar
2 Large Eggs
1/4 Cup Milk
2 tsp Vanilla
1.5 Cups Raisins

Steps:

  • Pre-heat oven to 375 degrees
  • If making your own pastry, roll and cut your pastry into rounds with a 3.5 inch cutter, or the lid of a wide mouth mason jar. Lightly spray 2 12-cup muffin tins with non-stick spray and gently press the shells into the muffin tins
  • In a medium size bowl, beat the butter and sugar together, then beat in the eggs, milk and vanilla until smooth.
  • Stir in the raisins
  • Spoon filling into each of the shells, filling to 2/3 full
  • Bake for 25 minutes, or until golden brown.
  • Allow to cool in the muffin tin, then remove and store in an airtight container.

This is my Grandma's recipe for butter tarts in homemade pastry.

4 cups all-purpose flour
1 teaspoon salt
1 pound lard (such as Tenderflake®)
1 egg, lightly beaten
11 tablespoons ice cold water
1 tablespoon white vinegar
1 cup brown sugar
¼ cup melted butter
2 eggs
1 cup raisins, rinsed and patted dry
1 teaspoon vanilla extract

Steps:

  • Whisk flour and 1 teaspoon salt together in a large bowl; cut lard into flour mixture with a pastry blender until crumbly. Make a well in the flour mixture and place 1 beaten egg into the well.
  • Pour ice cold water and vinegar into flour mixture; stir with a wooden spoon until a dough forms. Divide dough into two balls; wrap dough in waxed paper and chill in the refrigerator for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat brown sugar and butter together in a bowl with an electric mixer until smooth; beat in 2 eggs one at a time. Stir raisins and vanilla extract into butter mixture.
  • Roll out one ball of dough on a lightly floured surface to 1/8-inch thickness; reserve remaining dough for another use. Cut dough into circles large enough to fit into the bottom and partway up sides of the wells of a muffin tin using a round biscuit cutter. Press dough circles lightly into muffin tin to form tart shells; fill each shell 3/4 full with raisin mixture.
  • Bake in the preheated oven until filling is bubbly and pastry is lightly browned, about 20 minutes.

This is a great treat that is a small twist on pecan or walnut pie. Included in the recipe is butter, brown sugars, spices, coconut and walnuts. These are in great demand every year from my family and friends.

⅓ cup butter
⅓ cup margarine
1 cup packed brown sugar
1 cup shredded coconut
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg
⅛ teaspoon ground allspice
½ cup chopped walnuts
½ teaspoon salt
2 eggs, beaten
2 teaspoons fresh lemon juice
⅔ cup dark corn syrup
1 (9 inch) pastry for a 9 inch single crust pie

Steps:

  • Roll pie dough out to 1/4 inch thickness. Cut out circles of dough to fit cups of standard muffin tin. Gently place into muffin cups.
  • In a saucepan, melt butter and margarine over low heat just until melted. Stir in brown sugar, coconut, spices, nuts, salt, eggs, lemon juice, and corn syrup. Mix well. Fill prepared muffin cups halfway with this mixture.
  • Bake at 375 degrees F (190 degrees C) for 12 to 15 minutes, or until golden and bubbly.

Pastry for three single-crust pies
1/4 cup butter, softened
1 cup packed brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1/4 teaspoon maple flavoring
1/2 cup raisins

Steps:

  • Roll out pastry on a lightly floured surface; cut into twelve 4-in. circles. Press onto the bottom and up the sides of greased muffin cups. , In a small bowl, cream butter and brown sugar. Add egg, milk, vanilla and maple flavoring. Stir in raisins., Fill each cup half full. Bake at 375° for 25 minutes or until crust is golden brown.

1 tablespoon vinegar
1/2 cup melted butter

12 -15 prepared tart shells

  • Melt butter.
  • Beat in eggs.
  • Beat in all other ingredients except raisens or currents.
  • Stir in raisens.
  • Fill tart shells 2/3 full.
  • Bake at 400 degrees until pastry is brown & center is bubbling. Approximately 10-13min.

1 cup lard or 1 cup shortening
1 tablespoon butter
3/4 cup boiling water
3 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1 1/2 cups brown sugar
1/2 cup corn syrup
3 tablespoons melted butter
1 cup chopped pecans
2 teaspoons white vinegar
1/4 teaspoon salt
1/2 teaspoon vanilla

Steps:

  • Directions for Pastry.
  • Mix lard (or shortening), butter & boiling water until the mixture is creamy. While mixture is still warm sift in flour, salt & baking powder and mix until it forms a ball. DO NOT KNEAD THIS DOUGH. Form into large ball and wrap in plastic wrap and chill in fridge (30-60 mins). Once cool divide into two balls and roll out. Use cookie cutter or large glass to cut out cirlces. Line muffin tins with the cut out circles of uncooked pastry.
  • Directions for Filling.
  • Beat egss well, add sugar, corn syrup and melted butter and mix again. Add nuts, vinagar, salt and vanilla and mix vigourously.
  • Fill muffin tins 2/.3 full an bake in 350 degree oven for 17-20 minutes.
  • Enjoy!

  • Prepare the butter tart pastry: In a medium-sized stainless steel bowl, whisk together flour, sugar and salt. Cube the butter and shortening and drop into the flour mixture. Toss lightly. Rub the butter and shortening into the mixture until it forms small pea-sized crumbs.
  • Whisk egg and vinegar together in measuring cup. Add cold water until mix measures ½ cup and whisk again. Sprinkle 6 tablespoons of liquid onto the flour mixture and combine using a fork, forming larger clumps. Work dough briefly and gently by hand until it forms a ball. If the dough feels dry and fails to hold together, add a bit more liquid, one tablespoon at a time. Transfer onto a sheet of plastic wrap, seal and refrigerate for at least one hour before use.
  • Prepare the filling: Melt the butter. Place the sugar and corn syrup into a bowl and add the butter. Stir these ingredients together. Add the remaining ingredients and mix together using a hand mixer on low speed until all of the sugar dissolves. Transfer the filling mixture to a measuring cup until use.
  • Create the shells: On a lightly floured surface, roll out the dough to a ¼-inch thickness. Cut out 4½-inch circles using a cookie cutter, glass, cup or bowl. Transfer the rounds of dough to a large, 12-cup muffin pan, pushing them down into each well. Gather the remaining dough, roll it out and repeat until it has all been used. Transfer muffin pan to refrigerator and chill for 30 minutes.
