OLD FASHIONED CARAMEL
Learn how to make caramel candy the old fashioned way. This recipe is perfect for candies, salted caramels, popcorn (balls or in a bowl), caramel sauce, as well as making your own caramel bits.

- In a medium to large sized sauce pot add the Butter, Brown Sugar, and Corn Syrup. Stir together on low heat until the Butter has melted. Add the Sweetened Condensed Milk and stir well. Bring the mixture to boiling point over medium heat. Stir constantly until Caramel reaches your desired ball stage (see notes, wrapped caramels need to be at hard-ball stage). Remove from heat, add the Vanilla extract, and stir well. Pour into a buttered (cooking spray works too) 9"x13" glass casserole dish. Let cool on top of wire rack. Cut and wrap in waxed paper squares.

- Slit a vanilla pod into halves and scrape the inside of it. Add both, the pod and the scraped paste to the cream. Heat the cream and let the cream get infused with the flavors of the vanilla pod. Remove the vanilla pod from the mixture once the cream is well heated.
- In a heavy bottom pan, put the sugar and let it melt over medium heat. Do not stir the sugar continuously but at intervals. Once all the sugar has melted bring it to 175 to 180 degrees C. At this stage the sugar should turn darkish brown
- At the point switch off the gas and add the heated cream and whisk well until well combined. Now bring this mixture to 120 degrees C (do not whisk constantly but at intervals)
HOMEMADE CARAMELS - TASTES BETTER FROM SCRATCH

- Line a 9x13'' pan or jelly roll pan with parchment paper. (If you don't have parchment paper you can generously butter the pan.) Either size pan will work--9x13'' will yield thicker caramels.
- Add 2 sticks butter, sugar, and karo syrup to a large heavy-bottom saucepan over medium heat. Stir over medium heat until mixture begins to boil, about 5-10 minutes.
- Gradually add the evaporated milk, one can at a time, taking about 12-15 minutes PER CAN to slowly add it, while stirring constantly. You want to make sure the mixture maintains a constant boil, otherwise your caramels can curdle.
- Stir the mixture constantly, scraping the sides occasionally until it reaches a firm ball stage (about 240-245 degrees F on a candy thermometer). It takes patience and time, but it's sooo worth it! (Also, I don't really trust or rely on a candy thermometer--I like to test it the old fashioned way. Drop a spoonful of hot caramel sauce into a cup of ice water and mold it with your fingers into a ball. When ready it will feel pretty firm and pliable, but still slightly sticky.)
