Old-Fashioned Banana Pudding image

This just makes me a kid again. Cookies, bananas and pudding all in one spot was always almost too good to be true. This is a food group unto itself!

Provided by PalatablePastime

Categories     Dessert

Time 58m

Yield 8-10 serving(s)

Number Of Ingredients 10

1/3 cup all-purpose flour
1 dash salt
2 1/2 cups milk
1 (14 ounce) can sweetened condensed milk
2 egg yolks
2 teaspoons vanilla extract
3 cups sliced ripe bananas
45 vanilla wafers
4 egg whites
1/4 cup sugar

Steps:

  • Mix flour and salt in a large sauce pan.
  • Add milks and egg yolks to pan slowly, stirring constantly over medium heat, until mixture thickens, about 7-8 minutes, then remove from heat.
  • Stir in vanilla.
  • Layer enough banana slices to cover the bottom of a 2 quart casserole dish.
  • Cover the bananas with 1/3 of the pudding mixture, and layer with 1/3 of the vanilla wafers.

  • Do the layering a third time as usual, except do not cover the pudding with wafers; place the wafers around the edges of the casserole, tucked into the pudding.
  • Beat the egg whites at high speed with a mixer until they foam.
  • Add the sugar gradually, and keep beating until stiff peaks form.
  • Spread this over the top of the pudding, forming a seal to the edges.
  • Bake pudding at 325F for 25 minutes or until the meringue becomes light golden.
  • Allow to cool 30 minutes before serving.
  • Refrigerate unused portions.

OLD FASHIONED BANANA PUDDING RECIPE - (4.5/5)

Old Fashioned Banana Pudding Recipe - (4.5/5) image

Provided by carolync

Number Of Ingredients 11

Meringue:
Old Fashioned Banana Pudding
3 cups of whole Milk
1/4 cup of All Purpose Flour
1/2 cup of Sugar
3 Eggs, separated (yolks for custard, white for meringue)
1 teaspoon of pure vanilla Extract
1 full box of Vanilla Wafers
5-6 - ripe Bananas, sliced
1/8 teaspoon of Cream of Tartar
1/4 cup of Sugar

Steps:

  • Preheat your oven to 350 degrees. Separate 3 eggs, set the whites aside for later use in the meringue. Break up yolks with a fork and set aside. Add 3 cups of whole milk to a saucepan. Over low heat, slowly add the flour, whisking very rapidly to dissolve any lumps. Then stir in sugar continuing to whisk until that dissolves. Next, slowly add the egg yolks to the saucepan, whisking rapidly and continually to avoid making scrambled eggs. Make sure you do not add them too quickly or they will cook and curdle and don't walk away or the mixture will scorch. Keep stirring. Increase the heat gradually up to about medium as you constantly whisk the pudding mixture. Continue to stir it constantly as it thickens. When it has thickened enough to look like pudding, remove from heat, add the teaspoon of vanilla and continue to stir as it cools down. Set aside to cool. When custard has cooled down, spread a light layer of the pudding in a casserole dish. Add a layer of Vanilla Wafers. Reserve about 5 or 6 wafers for topping later. Add a layer of sliced bananas. Add a layer of pudding mixture, spreading it out to the edges of the dish. Repeat the layer process as needed, ending with a layer of the pudding on top. Crumble the 5 or 6 reserved wafers and sprinkle on top. Make the meringue. Meringue Place the room temperature egg whites in a glass or metal mixing bowl. Using a mixer or whisk, beat the egg whites until they appear frothy in texture. Add about 1/8th teaspoon of Cream of Tartar. Increase mixer speed and beat until the egg whites form soft peaks. Add the sugar. Continue to whip, increasing speed as needed until the egg whites thicken and form firm peaks. Do not over work the egg whites as it will cause them to lose volume. Use a spatula and gently spread the meringue over the pudding mixture. Gently dab the spatula up and down in the meringue to form small swirls and peaks. Place the dish in the preheated 350 degree oven and bake for 10 to 15 minutes. Watch it carefully so the egg white meringue doesn't burn. It just needs to be slightly toasted and browned. Remove from oven, let cool, refrigerate until cold then serve. Enjoy!

SOUTHERN-STYLE BAKED BANANA PUDDING

Southern-Style Baked Banana Pudding image

If you like banana cream pie, you'll absolutely love baked banana pudding. Not only is there no pie crust to mess with, but I think the vanilla wafer cookies pair even more perfectly with the fruit and custardy pudding. We want the bananas to match the texture of the custard-soaked cookies, so make sure you buy them a week beforehand. Other than that, not much can go wrong with this simple Southern classic.

Categories     Desserts     Fruit Dessert Recipes     Banana Dessert Recipes

Time 45m

Yield 8

Number Of Ingredients 14

4 large eggs
½ cup white sugar
¼ teaspoon salt
⅓ cup all-purpose flour
1 tablespoon all-purpose flour
2 cups milk
½ teaspoon vanilla extract
1 tablespoon banana liqueur
1 tablespoon cold butter
3 very ripe bananas, or more to taste, sliced
1 ½ teaspoons freshly squeezed lemon juice
1 (12 ounce) package miniature vanilla wafers
⅛ teaspoon cream of tartar
2 tablespoons white sugar

Steps:

  • Separate eggs, placing the whites in the bowl of a stand mixer and the yolks into a saucepan.
  • Add sugar, salt, and 1/3 cup plus 1 tablespoon flour to the yolks. Splash in about 1/4 of the milk and start blending mixture with a whisk. Pour in remaining milk and whisk until smooth.
  • Cook and stir mixture over medium heat until hot to the touch, occasionally dipping your finger in to test. Whisk constantly until custard is thick enough to form ribbons.
  • Remove custard from heat and add vanilla extract, banana liqueur, and cold butter. Whisk until butter dissolves. Set custard aside.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Toss banana slices with lemon juice.
  • Spread a quarter of the custard over the bottom of a baking dish. Add a single layer of vanilla wafers. Cover with 1/2 of the bananas and spread 1/2 of the remaining custard on top. Add another layer of vanilla wafers, using slightly fewer this time. Top with the remaining bananas and custard. Smooth the top and tap dish against the counter to settle the pudding.
  • Add cream of tartar to the egg whites. Beat using the whisk attachment until foamy. Gradually add sugar and beat until stiff, but not dry, peaks form. Spread meringue over the pudding using a soft spatula, creating ridges for contrast.
  • Bake in the preheated oven until meringue is nicely browned, 7 to 10 minutes. Serve warm or chilled.

BANANA PUDDING

Yield Serves 6

Number Of Ingredients 16

For the pudding:
5 large egg yolks
1/2 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups whole milk
3 tablespoons banana liqueur (or 1 teaspoon banana flavoring)
2 teaspoons vanilla extract
2 tablespoons unsalted butter
2 ripe bananas
For the crumble:
1 cup vanilla wafers (about 15 cookies)
2 teaspoons sugar
1/4 teaspoon ground cinnamon
Pinch salt
1 tablespoon unsalted butter, melted

Steps:

  • To make the pudding:
  • Whisk the egg yolks, sugar, cornstarch, and salt together in a medium bowl and set aside. Bring the milk to a boil in a medium saucepan. Remove from the heat and whisk a little at a time into the egg mixture. Once the bottom of the bowl is warm, slowly whisk in the remaining hot milk. Pour the mixture back into a clean medium saucepan (cleaning the saucepan prevents the pudding from scorching), add the banana liqueur, and whisk over medium-low heat until it thickens, about 2 minutes. Cook while constantly whisking until the pudding is glossy and quite thick, 1 1/2 to 2 minutes longer. Transfer the pudding to a clean bowl.
  • Add the vanilla and butter and gently whisk until the butter is completely melted and incorporated. Press a piece of plastic wrap onto the surface of the pudding to prevent a skin from forming. Refrigerate for 4 hours.
  • To make the crumble:
  • While the pudding sets, heat the oven to 325°F. Line a rimmed baking sheet with parchment paper and set aside. Place the wafers in a resealable plastic bag and seal (make sure there is no air in the bag prior to sealing). Using a rolling pin or a flat-bottomed saucepan or pot, crush the vanilla wafers until they're coarsely ground. Transfer them to a small bowl and stir in the sugar, cinnamon, and salt. Use a spoon to evenly stir in the melted butter, transfer to the prepared baking sheet, and toast in the oven until brown and fragrant, 12 to 15 minutes. Remove from the oven and set aside to cool. (The crumbs can be stored in an airtight container for up to 5 days at room temperature or frozen for up to 2 months; re-crisp in a 325°F oven for 6 to 7 minutes if necessary.)
  • To serve:
  • Slice the bananas in half crosswise and then slice in half lengthwise so you have 4 quarters. Slice the banana quarters crosswise into 1/2-inch pieces and divide between 6 custard cups or martini glasses (sprinkle with a squeeze of lemon juice if you like-this helps prevent browning). Whisk the pudding until it is soft and smooth, about 30 seconds, and then divide it between the custard cups. Top with the vanilla wafer mixture and serve. (If not served immediately, the pudding will keep in the refrigerator for up to 3 days, with plastic wrap intact. Sprinkle the crumbs on just before serving.)

OLD-FASHIONED BANANA PUDDING

Old-Fashioned Banana Pudding image

Provided by Virginia Willis

Categories     dessert

Time 45m

Yield 8 servings

Number Of Ingredients 8

1/4 cup all-purpose flour
Pinch of table salt
1 teaspoon pure vanilla extract
About 45 vanilla wafers, such as Nilla
8 bananas, sliced 1/4 inch thick
2 cups whole milk
6 eggs, separated
1 1/4 cups sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the milk in a medium saucepan to a simmer over medium heat. In a second medium saucepan, whisk the egg yolks with 3/4 cup of the sugar until thick and light. Stir in the flour and salt to make a smooth paste.
  • Whisk the scalded milk into the egg mixture, blend well and then return the pan to gentle heat. (Make sure the cream is perfectly smooth before letting it boil!) Whisk until boiling. Continue to cook the cream, whisking constantly, until thick and creamy, about 2 minutes. Add the vanilla extract and stir to combine. Strain the pastry cream into a bowl; set aside.
  • Place a layer of the vanilla wafers all over the bottom of a medium baking dish (9-by-13-inch). Spread half of the reserved pastry cream on top of the wafers. Place the bananas evenly over the pastry cream in the baking dish. Top with a second layer of wafers. Spoon the remaining pastry cream over the wafers; set aside.
  • In a heavy-duty mixer fitted with a whisk attachment, beat the egg whites on high speed until soft peaks form. Gradually add the remaining 1/2 cup sugar, a little at a time, beating until stiff peaks form. Spoon the meringue over the pastry cream and spread evenly to cover the entire surface, sealing well at the edges. Using a spatula, make curls and peaks in the meringue.
  • Bake until lightly browned, 15 to 20 minutes. Remove to a rack to cool slightly. Serve immediately, warm or cold.

GRANDMA'S BANANA PUDDING

Grandma's Banana Pudding image

My grandma ran a country club and a restaurant in her day. She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!
