CREAMED PEAS
An old-fashioned, easy side dish recipe that's ready in just 10 minutes!

Steps:
- Cook peas according to package instructions. Drain and transfer to a bowl.
- Meanwhile, in a saucepan or small skillet, melt butter over low heat. Whisk in flour, salt, and pepper until blended. Cook, whisking constantly, for 1 minute.
- Gradually add cream, stirring for 1-2 minutes (or until thickened).
- Stir in the peas; gently toss to coat in the cream sauce.

OLD-FASHIONED CREAMED PEAS
Old-Fashioned Creamed Peas uses frozen peas that is jazzed up with a white sauce made of butter, half and half and flour.

Steps:
- Cook peas according to package instructions. I prefer this method. In a small saucepan, boil a small amount of salted water (approximately 4 cups). Pour the boiling water over the frozen peas just until they are covered. You may not need all the water. Let sit for 3 to 5 minutes or until cooked.
- In a medium saucepan, melt butter. Add flour and stir until smooth. Let cook for additional 30 seconds to remove raw flour taste.
- Over medium heat, slowly add in half and half to the butter/flour mixture while constantly whisking. Bring to a boil while constantly whisking, and let boil for approximately three minutes until it thickens.
- Add salt and pepper to the sauce.
- Drain the peas, and add to the white sauce; stir. Cover with a lid and cook until the peas are hot and the sauce is creamy, approximately 2 to 3 minutes.
- Taste, add more salt and pepper if needed.

- On stove in small pot melt butter and add flour slowly to thicken it.
- When it is almost like a paste add the milk and stir.
- Continue stirring on low heat until the mixture thickens.
- Add the drained can of peas and stir for a few more minutes.
- Pour hot mixture over a buttered slice of toasted bread, add salt& pepper to taste.
- Use a knife and fork to slice and eat your meal and enjoy.

In my search for a good cream pea recipe, I found many, but none that quite matched what I wanted. So I took to my own creativity and came up with this absolutely fabulous recipe. We love it so much we have this on the side quite often.

- Scrub and quarter potatoes; place in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add peas; cook 5 minutes longer or until vegetables are tender., Meanwhile, in another large saucepan, melt butter. Add onion; saute until tender. Stir in the flour, salt and pepper until blended; gradually add milk. Bring to a boil. Reduce heat; cook and stir for 1-2 minutes or until thickened. Drain potatoes and peas; toss with sauce.

CREAMED PEAS AND NEW POTATOES
Just a recipe a local farmer suggested to me to use with his potatoes and peas. I slightly modified it and it's very tasty.

- Bring a large pot of water to a boil over high heat. Boil potatoes for 15 to 20 minutes, or until tender. Drain.
- In a medium saucepan, bring 1 cup water to a boil. Simmer peas in boiling water for 6 to 7 minutes, or until tender (do NOT overcook). Drain.
- Using the same saucepan, melt butter over medium heat. Stir in flour to make a thick paste; gradually whisk in milk, stirring constantly until slightly thickened. Season with salt and pepper to taste. Now add potatoes and peas to the sauce; simmer for about 5 minutes, stirring often. Serve immediately.
