My great-grandmother passed on this soup to her family generations. In the 1880s, it was a popular meal after a hard day in the field-hardy to satisfy the most ravenous appetite and delicious, too!

Steps:
- In a heavy saucepan, brown sausage over medium heat. Remove sausage to paper towels to drain. Drain skillet, reserving 1 tablespoon drippings. Saute the celery, onion, thyme and salt in the reserved drippings until tender. Stir in flour until blended. Gradually add broth and water, stirring until the mixture comes to a boil. , Add potatoes; cover and simmer 25 minutes or until potatoes are tender. Remove from the heat; cool. , In blender, cover and process 2 cups soup mixture until smooth; return to kettle. Add the milk, beans and sausage; heat through. Garnish with parsley.

Best potato soup with sausage ever with a variation of the original German soup. My family loves this soup and I never have leftovers. This recipe is one my grandmother used to make when I was growing up and I have always loved this.

- Heat a large pot over medium-high heat. Cook and stir Italian and kielbasa sausages in the hot skillet until browned, 5 to 7 minutes. Drain grease.
- Stir potatoes, water, chicken broth, heavy cream, celery, bouillon, garlic, salt, pepper, garlic powder, and red pepper into the pot. Reduce heat and let simmer until potatoes are tender, about 1 1/2 hours.

- In a large saucepan, brown sausage; drain. Set sausage aside. In the same pan, combine the potatoes, corn, broth, celery, carrot and seasonings. Steps:
- Add diced celery, potatoes and onions to a medium saucepan, and cover with just enough water to cover vegetables. Cook until fork tender.
- Meanwhile, brown and crumble sausage; drain excess grease if needed.
- Add browned sausage to potato mixture.
- In a small saucepan, melt butter. Add flour, stirring for 30 seconds with whisk. Add milk and cook and stir until thick.
- Once milk sauce is thick, add it to the potato mixture. Bring the soup to a boil until thickened and hot.
- Season with nutmeg, starting with one shake. Taste and add up to three shakes. Season generously with salt and pepper to taste.

OLD FASHIONED POTATO & SAUSAGE SOUP
Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by the Tallman Family. They run a potato processing plant in town. So, it make sense they submitted a potato recipe. As with so many of these recipes, they didn't specify how many servings it made so I am guessing.

- In large Dutch oven melt margarine.
- Brown the sausage and drain off all but 1 tablespoon of dripping.
- Add all other ingredients except egg yolk, flour and milk.
- Bring to a boil and simmer until potatoes are tender.
- Mix yolk and flour until pea-size and crumbly.
- Add to soup, stirring constantly.
- Cook for one to two minutes.
- Add milk and heat.
- Serve immediately.

- Add potatoes, carrots, green peppers, sausage, water, salt and pepper. Cook on low, for about 45 minutes or until the potatoes are creamy.
- Add milk and cook until heated through and then add instant potato flakes. If you want a creamy potato soup add a 1/2 cup potato flakes, or if you want your soup thick like stew add 1 cup of potato flakes.

- Brown sausage and onion in dutch oven until no longer pink. (If using regular sausage, drain and wipe out bottom of pan.).
- Add chicken broth to sausage and onions and bring to boil.
- Add potatoes and simmer on med high for 20 mins or until potatoes are soft.
- Remove from heat and mash potatoes completely.
- Add evaporated milk and cheese and stir until cheese is melted.
- Add garlic powder and cracked pepper to taste.
- If you like a thicker soup, add a little cornstarch or flour for thickening.

- Place sausage links on a sheet pan and bake for 15 to 20 minutes, or until done. Cut each link in half lengthwise, and then into 1/2 inch slices. Set aside for later.
- In a 4 quart saucepan over medium heat, saute the onions and the pancetta for 10 minutes, or until onions are almost clear. Add the garlic and saute for one more minute. - Add thyme, basil and salt.

- Puree 2 cups of the soup in a blender, (careful, it's hot).

- In a large pot cook 1st four ingredients until potatoes are soft.
- Combine flour and butter and cook over medium-low heat until a smooth paste is formed (approx. 2 minutes) Thicken potato mixture with flour mixture.

- Melt butter in a saucepan over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
