OLD MAN RAFFERTY'S TOMATO BASIL SOUP
I was craving this restaurant's tomato basil soup today, but have only five bucks to my name. So I decided to try and make it with the ingredients that I had on hand. The result was very good.

Steps:
- Mix all ingredients, except for cream in a large soup pot.
- Simmer for 20 minutes over medium-low heat.
- Allow soup to cool a bit (until it's no longer hot to the touch), then whisk in the cream.
- Reheat slowly to serving temperature, and serve with chiffonaded fresh basil, if available.

RUSTIC STYLE ROASTED TOMATO BASIL SOUP
This is a delicious and robust soup that is low in fat and full of flavor. Good way to use up those tomatoes and basil growing in your back yard or at the supermarket :) It is sure to become your go to comfort soup.

Steps:
- 1.Preheat oven to 400 degrees F.
- 2.Toss together the tomatoes, ¼ cup olive oil, salt and pepper.
- 3.Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
- 4.In a 8-quart stockpot over medium heat, sauté the onions and garlic with 2 Tbs olive oil, and red pepper flakes for 10 minutes or until the onions start to brown.
- 5.Add the canned tomatoes, basil, thyme, and stock.
- 6.Add the oven-roasted tomatoes, including the liquid on the baking sheet.
- 7.Bring to a boil and simmer uncovered for 40 minutes.
- 8.Taste for seasonings.
(COPYCAT) LA MADELINE'S TOMATO BASIL SOUP
This is the closest I have managed to copying the Tomato Basil soup at La Madeline. This is the best soup for cold winter nights, and I have yet to meet anyone who did not like it.

Steps:
- Combine tomatoes, tomato juice and broth in a saucepan and simmer for 30 minutes.
- Puree with basil in the blender. Make sure that this is smooth - I always strain it.
- Return to saucepan. Add cream and butter while stirring over low heat.
- Serve and enjoy!
TRADITIONAL TOMATO BASIL SOUP
This soup is so fresh and so easy! Rachael Ray made a similar soup on 30 minute meals and I just tweaked it a bit to fit our tastes. This soup goes great with grilled cheese or salad and bread.

- Heat milk on medium in saucepan. Place remaining ingredients in food processor or blender and blend until smooth. Pour tomato mixture into milk. Bring to a boil. Immediately decrease heat to low and simmer 15 minutes.
