Oven pancakes are great for Sunday breakfast! They're easy to make and go well with everything.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). In a small bowl, mix together white sugar and cinnamon; set aside.
- Place butter in a 9 inch cake pan and heat in the oven until melted. In a blender or food processor, whip eggs and milk. Pour in flour and beat until well combined. Pour batter into hot pan. Sprinkle on sugar and cinnamon.
- Bake in preheated oven for 20 to 25 minutes, or until puffed and golden. Dust with confectioners' sugar; serve warm.

Anybody can add water to a boxed pancake mix, but you're better than that! These pancakes are not too thick, not too thin, but tender, light, buttery, and delicious.

- Sift together flour, baking powder, salt, and sugar in a large bowl.
- Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.
- Preheat a large skillet over medium-high heat. Spray with cooking spray. Pour batter into the hot skillet, about 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.

OMA'S APFELKUCHEN (GRANDMA'S APPLE CAKE)

- Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture. Add milk; mix well (batter will be thick)., Spread batter into a greased 9-in. springform pan wrapped in a sheet of heavy-duty foil. Gently press apples, round side up, into batter. Bake until a toothpick inserted in the center comes out with moist crumbs, 45-55 minutes. Cool on a wire rack 10 minutes. Loosen sides from pan with a knife; remove foil. Cool 1 hour longer. Remove rim from pan. Dust with confectioners' sugar.

- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

- Beat eggs with wire whisk until foamy. Add milk and beat again until well blended. Add flour and salt, and whisk until smooth.
- Put the butter into a deep glass pie pan or a 10-inch cast-iron skillet, and put it in the oven for about 5 minutes, or until it melts.

OVEN PANCAKES
This recipe came from a Crisco cookbook. It's especially great when you have guests and want to serve something nice without having to spend a lot of time in the kitchen. We serve this every Christmas morning (you know how hectic it can be); so I can enjoy the festivities, too. Scrambled eggs go nicely with this.

- Preheat oven to 350 degrees.
- Combine pancake mix, milk, eggs and oil and mix until nearly smooth.
- Pour into a 13 x 9" greased baking dish.
- Top with the pie filling and bake 35 to 40 minutes or until nicely browned.
- Remove from oven and cut into desired serving sizes.
- CAUTION: the fruit stays very hot.
- Serve with plenty of warm maple syrup.
OMA DUTCH PANCAKES
These pannakoeken are made by Dutch Grandmas (Omas) everywhere! They are very thin and look more like crepes, however not sweet like crepes. You can eat them with savory fillings or sweet fillings, we like them with syrup best!

- Mix dry ingredients together. Add oil and eggs to this mixture. Slowly add the milk to a very thin consistency. Whisk well til very few lumps remain.
- Fry about 1/2 cup of this mixture at a time in a quite hot frying pan sprayed with pam, you only need to grease the pan intermittantly after that. Spread thinly in the hot pan by tipping the pan in circular motion. The thinner the pancake the better:) Fry them til the top of the pancake appears dry then flip over until it is quite brown on the bottom.
- These take some practice but are worth the effort!
