1/4 cup extra-virgin olive oil
1 medium onion, finely chopped
1 large green bell pepper, seeded and chopped
8 garlic cloves, thinly sliced
2 bay leaves
1 tablespoon dried oregano
1 cup white wine
2 cups water
1 cup clam juice
2 (28-ounce) cans crushed tomatoes
Kosher salt and freshly ground black pepper
1 pound mild white flaky fish, cut into 2 to 3-inch pieces
1 pound mussels, cleaned and beards removed
8 ounces medium shrimp, peeled and deveined
18 to 24 littleneck clams
1 small bunch flat-leaf parsley, finely chopped, for garnish

Steps:

  • Heat oil in large pot over medium-high heat. Add the onion and bell pepper and cook until beginning to soften, 3 to 5 minutes. Add garlic, bay leaves, oregano, white wine, water, clam juice, and tomatoes. Bring to a boil, reduce heat to medium, and simmer for 5 minutes. Season with salt and pepper, to taste.
  • Add the fish, mussels, shrimp and clams, in that order. Let cook, covered and undisturbed, until the clams and mussels have opened and the shrimp and fish are cooked through, 5 to 7 minutes. Remove the lid and garnish with chopped parsley. Spoon into bowls and serve immediately while hot.

1 tablespoon white sugar
5 teaspoons active dry yeast
4 cups all-purpose flour
¼ cup melted butter
1 teaspoon coarse salt
1 egg, beaten
coarse salt to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix water and sugar together in a bowl until sugar is dissolved; add yeast. Let mixture stand until the yeast softens and begins to form a creamy foam, about 5 minutes.
  • Whisk flour, butter, and salt together in a bowl until well mixed; add yeast mixture and stir with a fork until dough starts to cling. Turn dough onto a floured work surface and knead until smooth.
  • Cut dough into 15 equal pieces and roll each piece between your hands into rope shapes at least the thickness of a pencil. Twist dough into desired shapes and arrange on a baking sheet; brush with egg and sprinkle coarse salt over each.
  • Bake in the preheated oven until pretzels are browned and cooked through, 8 to 12 minutes.

1 cup plus 2 tablespoons water (70° to 80°), divided
3 cups all-purpose flour
3 tablespoons brown sugar
1-1/2 teaspoons active dry yeast
2 quarts water
1/2 cup baking soda
Coarse salt

Steps:

  • In a bread machine pan, place 1 cup water and next 3 ingredients in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed., When cycle is completed, turn dough onto a lightly floured surface. Divide dough into 8 balls. Roll each into a 20-in. rope; form into pretzel shape. , Preheat oven to 425°. In a large saucepan, bring 2 quarts water and the baking soda to a boil. Drop pretzels into boiling water, 2 at a time; boil for 10-15 seconds. Remove with a slotted spoon; drain on paper towels., Place pretzels on greased baking sheets. I read somewhere that Philadelphians eat nearly half of all the pretzels made in America. Well, these pretzels are to die for, and are just like the ones you pay several dollars for at the concession stand. I've made these many times with my kids, and we absolutely LOVE them, especially dipped in warm mustard or melted cheese. Prep time is approximate, and includes letting the dough rise for 30 minutes.

Number Of Ingredients 9

1 cup warm water
4 1/2 teaspoons active dry yeast
2 tablespoons sugar
3 cups all-purpose flour
2 teaspoons baking soda
1 egg
coarse salt, to sprinkle on top (kosher salt)
warm mustard
melted cheese

Steps:

  • In mixing bowl add warm water and yeast. Stir until the yeast is completely dissolved.
  • Add the sugar. Stir. Gradually stir in the flour. The dough will become stiff and dry. That's what you want.
  • Sprinkle some flour on the counter or on a board. Flour your hands, too. Knead the dough for about 5 minutes.
  • Form the dough into a ball. Place the ball of dough back in the bowl and cover the bowl with a dish towel. Let the dough rise in a warm, dark place for at least 30 minutes, or until the dough has doubled in size.
  • While the dough rises, heat the oven to 400F degrees. Grease or butter a cookie sheet.
  • Fill a saucepan half full of water, add the baking soda, and bring the water to a slow boil.
  • When the dough is finished rising, put it on a floured surface. Flour a rolling pin and roll the dough into a square shape, about 1/4-1/2 inch (6-10 mm) thick. Cut the dough into 1/2-inch (or so) wide strips. They don't have to be perfect.
  • Twist each strip into a pretzel shape, pinching the ends so they don't fall apart. Be careful not to let the strips stretch too thin as you handle them.
  • Place a pretzel on a spatula and lower it into the boiling water for 5-10 seconds. It will puff up and float. Use the spatula to remove the pretzel from the water. Place the pretzel on the greased cookie sheet. Repeat this with the other pretzels.
  • In a small bowl, beat the egg for 1 minute. Use a pastry brush to coat the top of each pretzel with the egg. Sprinkle salt over the pretzels.
  • Bake for about 12-15 minutes, or until golden brown.
  • Serve with warmed mustard or melted cheese. YUM!

1/4 ounce active dry yeast
1 1/2 cups warm water
1 teaspoon salt
1 teaspoon sugar
3 1/2 cups all-purpose flour
1 egg, beaten
coarse salt

Steps:

  • Dissolve yeast in warm water in large mixing bowl.
  • Stir in teaspoon salt, sugar and 2-cups of flour.
  • Beat until smooth. Stir in enough remaining flour t make dough easy to handle.
  • Turn dough onto lightly floured surface; knead until smooth and elastic. (about 5-minutes).
  • Place in greased bowl; turn greased side up. Cover: let rise until doubled (about 60-minutes). Dough is ready if an indentation remains when touched.
  • Heat oven to 425°.
  • Punch down dough and cut into 16-equal parts. Roll each part into a rope about 18� long. Twist each rope into a pretzel shape.
  • Brush pretzels with beaten egg and sprinkle coarse salt. Bake until pretzels are golden brown (about 15-20 minutes).
  • If using self-rising flour omit 1-teaspoon of salt.

2 tablespoons brown sugar
1 ⅛ teaspoons salt
1 ½ cups warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour
1 cup bread flour
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons baking soda
2 tablespoons butter, melted
2 tablespoons coarse kosher salt

Steps:

  • In a large mixing bowl, dissolve the yeast, brown sugar and salt in 1 1/2 cups warm water. Stir in flour, and knead dough on a floured surface until smooth and elastic, about 8 minutes. Place in a greased bowl, and turn to coat the surface. Cover, and let rise for one hour.
  • Combine 2 cups warm water and baking soda in an 8 inch square pan. Line 6 baking sheets with parchment paper.
  • After dough has risen, cut into 12 pieces. Roll each piece into a 3 foot rope, pencil thin or thinner. Twist into a pretzel shape, and dip into the baking soda solution. Place onto parchment covered baking sheets, and let rise 15 to 20 minutes.
  • Preheat an oven to 450 degrees F (230 degrees C).
  • Bake in the preheated oven for 8 to 10 minutes, or until golden brown. Brush with melted butter, and sprinkle with coarse salt, garlic salt or cinnamon sugar.
