2 teaspoons olive oil
3 jalapeno peppers, seeded and finely chopped
2 cloves garlic, minced
1 ¼ cups vegetable broth
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes with juice
1 cup quinoa
1 cup frozen corn kernels
½ teaspoon kosher salt
⅓ cup chopped fresh cilantro
¼ lime, juiced

Steps:

  • Heat oil in a saucepan over medium-high heat. Saute jalapeno peppers and garlic in hot oil until fragrant, about 1 minute.
  • Pour vegetable broth into the saucepan. Stir black beans, tomatoes, quinoa, corn, and salt into the broth. Bring to a boil, reduce heat to low, and simmer, covered, until the liquid is fully absorbed into the quinoa, 20 to 25 minutes.
  • Fluff quinoa with a fork. Stir in cilantro and lime juice.

1 tablespoon olive oil
2 cloves garlic, minced
1 jalapeno, minced
1 cup quinoa
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (14.5 oz) can fire-roasted diced tomatoes
1 cup corn kernels, frozen, canned or roasted
1 teaspoon chili powder
1/2 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
1 avocado, halved, seeded, peeled and diced
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute. Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro. Serve immediately.

1 Tablespoon extra virgin olive oil
½ medium green bell pepper, diced ((~½ cup))
½ small red onion, diced ((~½ cup))
1 teaspoon chili powder
1 teaspoon cumin
½ cup quinoa, rinsed
1 can corn, drained, rinsed
1 can black beans, drained, rinsed
1 cup salsa
¾ cup chicken or vegetable broth
Salt to taste ((¼ teaspoon recommended))
½ cup shredded Mexican blend cheese

Steps:

  • Heat a large 10" skillet over medium heat. Add oil. Once the oil is shimmering, add the bell pepper and onion. Sauté until vegetables are soft and onions are translucent, about 10 minutes. Add the chili powder, cumin, and quinoa and sauté for 30 seconds more, stirring constantly.
  • Add the corn, black beans, salsa, broth, and salt to the pan. Stir to combine all ingredients. Bring to a boil. Once boiling, cover with a lid, reduce heat, and simmer for 20 minutes, stirring twice during the cooking process.
  • Once quinoa is fully cooked, turn off heat, top with shredded cheese, then cover briefly to melt.
  • Top individual servings with desired garnishes. Enjoy!

1 onion, chopped

¾ cup quinoa
1 ½ cups vegetable broth
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
1 cup frozen corn kernels
2 (15 ounce) cans black beans, rinsed and drained
½ cup chopped fresh cilantro

Steps:

  • Heat oil in a saucepan over medium heat; cook and stir onion and garlic until lightly browned, about 10 minutes.
  • Mix quinoa into onion mixture and cover with vegetable broth; season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer until quinoa is tender and broth is absorbed, about 20 minutes.
  • Stir frozen corn into the saucepan, and continue to simmer until heated through, about 5 minutes; mix in the black beans and cilantro.

A simple one-pot, plant-based meal with fresh Mexican flavor. This dish will be ready in 30 minutes or less. It serves six so likely there will be leftovers making this a wonderful option for meal planning/prepping.

1 tablespoon extra virgin olive oil
1 red onion, diced
4 cloves garlic, minced or pressed through a garlic press
1 orange bell pepper, diced (stem and seeds removed)
1 yellow bell pepper, diced (stem and seeds removed)
1 jalapeno, diced (stem and seeds removed)
1 teaspoon fine grain sea salt
½ teaspoon ground black pepper (or more to taste)
1.5 cup uncooked white quinoa, rinsed
2 tablespoons tomato paste
2.5 cups low-sodium vegetable broth
1 can diced tomatoes (with juices)
1 can black beans, drained and rinsed
1 cup fresh cilantro
1 juicy lime, juiced
6 green onions, diced
Serve with:
diced avocado, lime wedges and zest, more green onions, more cilantro

Steps:

  • In a large rimmed saute pan (this is the one I use) heat the olive oil over medium heat. Add red onion, garlic, bell peppers, jalapeno, salt and pepper and saute for 5 minutes until onions are soft and start to turn translucent.
  • Add the quinoa, tomato paste, vegetable broth and diced tomatoes and stir until well combined. Bring to a boil. Place the pan lid securely on top and turn the heat to low. Simmer for 20 minutes without lifting the lid. My pan is non-stick and ceramic and cooks everything evenly without burning the bottom. It took 20 minutes exactly in my pan and I checked on it by viewing through the clear lid.
  • Once all the liquid is absorbed, turn the burner off and stir in the black beans, cilantro, lime juice and green onions. Taste and adjust seasonings as needed. You may want to add more salt, pepper, lime juice or cilantro. Enjoy immediately hot or warm. Serve with a generous amount of avocado, cilantro and green onions.
  • Store leftovers in an airtight container in your refrigerator for up to five days. It can be reheated in the microwave in a microwave safe container if desired (without the avocado)

SPEEDY MEXICAN BLACK BEANS AND QUINOA

2 cups quinoa
3 teaspoons chicken bouillon granules, divided
2 (15 ounce) cans black beans, rinsed and drained
1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL® Chunky)
½ teaspoon ground cumin
½ teaspoon ground coriander
⅛ teaspoon garlic powder
⅛ teaspoon cracked black pepper
½ (8 ounce) package shredded Monterey Jack cheese

Steps:

  • Bring 4 cups water to a boil in a medium saucepan. Stir in quinoa and 2 teaspoons chicken bouillon. Reduce heat to medium-low, cover, and simmer until water is absorbed and quinoa is tender, 20 to 25 minutes.
  • Meanwhile, combine remaining 1 1/2 cups water and 1 teaspoon bouillon with black beans, diced tomatoes, cumin, coriander, garlic powder, and pepper in another medium saucepan. Bring to a boil. Reduce heat to medium and cover. Simmer until quinoa is ready.
  • Remove quinoa from heat and let sit for 5 minutes. Spoon the quinoa into bowls. Top with the seasoned beans and Monterey Jack cheese.

15 oz black beans, 1 can, drained and rinsed
1 cup frozen corn, defrosted
salt, to taste
olive oil, to taste
1 avocado, mashed
1 clove garlic, minced
2 teaspoons lemon juice
3 tablespoons olive oil
salt, to taste
pepper, to taste
4 tablespoons water
tortilla, to serve, optional

Steps:

  • In a medium saucepan, combine quinoa and water, and bring to a boil over high heat. Reduce heat to low, cover with a lid, and simmer for 10 minutes.
  • Add in salsa and cumin, and cover for 5 more minutes or until quinoa is fluffy.
  • Add in black beans, corn, salt, and olive oil, and stir until combined.
  • For the avocado dressing, combine avocado, garlic, lemon juice, olive oil, salt, and pepper in liquid measuring cup and whisk until smooth.
  • Whisk in water a little bit at a time until desired consistency is reached. 6. For extra smooth consistency, process all ingredients in blender or food processor.
  • Portion out into 4 containers and refrigerate for up to 5 days.
