BEEF TIPS AND GRAVY
This meal has been a favorite for many years. It is basically beef tips browned and slowly cooked until tender. We usually serve this with homemade mashed potatoes and corn.

Steps:
- Cook in a large skillet over medium heat until browned on all sides, about 20 minutes. Stir in cream of mushroom soup, 2 1/2 cups milk, salt, and pepper. Cover and simmer, stirring occasionally, until thickened to gravy consistency, at least 1 hour.
- Place potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain. Add 1/4 cup butter, 1/4 cup milk, salt, and pepper; beat with an electric mixer until smooth.
- Heat corn in a saucepan over medium heat until tender, about 15 minutes. Season with salt and pepper.
- Pour beef and gravy mixture over mashed potatoes and place corn on the side to serve.

My husband loves this. Melts in your mouth and its easy!!! Serve over rice or egg noodles.

Steps:
- In a large skillet heat oil over high heat. Saute the onion until almost translucent.
- Add the stew meat and cook on high heat until meat is browned on all sides; about 3 to 5 minutes.
- Pour 2 cups water, soy sauce, and Worcestershire sauce into the skillet. Stir in garlic powder, salt and pepper. Bring to a boil and reduce heat. Cover and simmer for 1 1/2 to 2 hours.
- Meanwhile combine the gravy mix with 1 cup water. Mix thoroughly and stir into the meat mixture. Bring to a boil stirring frequently until slightly thickened.

SIMPLE BEEF TIPS AND GRAVY
I have been making this for my family for years. The kids and my husband love it, we have it often. Very easy to make and delicious too!

Steps:
- In medium saucepan boil tips till done.
- Drain tips, Reserving 2 cups of broth.
- In Medium saucepan or Crockpot, add your soups and brown gravy mix, mix well.
- Add in broth until gravy is as thick as you like, it will thicken slightly.
- Add your tips, simmer for at least 25 minute or as long as you wish,(stirring occasionally) if using a crockpot set it on low and simmer all day, great both ways!
- Serve over rice, noodles, potatoes, your choice!

- Brown beef: Heat the oil in a large skillet over medium-high heat. Add the beef and cook about 30 seconds on either side, until browned.
- Sauté vegetables: Reduce the heat to medium. Add the onion and carrots to the skillet and stir well. Allow to cook for 2-3 minutes, then add the mushrooms and cook until they're starting to soften.
- Deglaze the pan: Stir the tomato paste into the skillet and cook for 30 seconds, then pour in the red wine. Allow the wine to cook away before sprinkling the flour over the beef and vegetables. Stir it in very well, until no white spots remain.
- Cook: Pour the stock into the skillet and stir well. Season with salt and pepper and add the bay leaf, if using. Allow to come to a boil before stirring in the potatoes. Reduce the heat to medium-low and allow the skillet to simmer for 10-15 minutes or until the potatoes are done.

- Add butter to large skillet over medium high heat. When melted toss in mushrooms and cook until light golden brown; approximately 8 minutes. Add onions and continue cooking for 2-3 minutes or until onions start to soften and mushrooms turn golden brown. Reduce heat to low and add garlic; cook for 30 seconds. Remove from pan and plate.
- In large ziploc bag add flour, steak bites, salt and pepper. Shake to coat. Add olive oil to skillet over medium high heat. Add steak and cook just until browned. Remove to plate.
- Add red wine to skillet and deglaze the pan; scraping up the brown bits from the bottom. Pour 1/2 cup of beef broth in bowl and set aside. Add REMAINING beef broth and Worcestershire Sauce. Simmer for 5 minutes; stirring a couple of times.
- In small bowl whisk together beef broth and 1/4 cup flour. Whisk flour mixture into skillet with beef broth mixture. Cook until slightly thickened; approximately 2 minutes. Add mushroom mixture and beef back to pan; simmer for 5-10 minutes. Salt & pepper to taste. Serve over egg noodles, rice or mashed potatoes.
