MACADAMIA NUT CRUSTED ONAGA (RUBY SNAPPER) WITH MAUI ONION RELISH
Steps:
- First, make the Maui Onion Relish. In a nonreactive mixing bowl, stir together all the relish ingredients. Cover with plastic wrap and refrigerate for 2 hours. Preheat the oven to 400 degrees F. Lightly grease or oil a baking dish large enough to hold the fish fillets side by side.
- Evenly spread the chopped macadamia nuts on a large dinner plate. Season a fish fillet with salt and pepper, and brush it evenly on both sides with 1/4 of the butter mixture. Dredge it in the nuts to crust it evenly on both sides, and transfer to the baking dish. Repeat with the remaining fillets, butter mixture, and nuts.
- Bake the fish fillets until they are cooked through and the nut crust is golden brown, 8 to 10 minutes. Spoon the Maui Onion Relish onto 4 serving plates and, with a spatula, transfer a fillet to each plate, placing it on top of the relish. Serve immediately.
- Prepare the Ginger Butter by putting all the ingredients in a food processor with the metal blade and processing until smooth. Set aside at room temperature.;
HONEY ROASTED VEGETABLES WITH MACADAMIA NUTS
I like to use multicolored heirloom carrots in this when they are available. But common orange carrots work just fine. Pearl onions can be substitute for the cipolline onions, or you may chop other onions into small chunks.

Steps:
- Heat oven to 400°F.
- Combine ingredients and toss well with olive oil to coat.
- Spread on a roasting pan in a single layer.
- Roast for twenty-five minutes, then stir.
- Roast another 20 minutes, then stir again.
- Drizzle 1-2 tablespoons honey over the veggies and toss again.
- Roast 5 minutes further.
- Mix the toasted nuts in just before serving.

- Directions for crust:.
- Mix yeast and honey or brown sugar in warm water. Sprinkle yeast on top. Let sit 10 minutes until foamy. In large bowl, mix flour and flax seed meal with salt. Add yeast mixture. Mix well. Knead approximately five minutes. Let rise 20-30 minutes. Roll out and place on pizza baking dish. (You can decide if you wish for a deep dish or thin crust pizza). Poke the crust several times with fork several times to avoid bubbling. Bake at 350 degrees for 5-10 minutes before placing toppings on pizza.
- Directions for pesto;.
- Using a food processor add the basil and nuts and pulse for approximately 30 seconds.
- Add the red pepper and garlic. Mix together.
- Slowly add the olive oil.
- Add the remaining ingredients and pulse together, mixing well.
- Add the pesto to the top of the pizza crust and complete the pizza with the following ingredients.

- In a large skillet add olive oil over medium heat. Add onions and cook about five minutes. Add salt, pepper and rosemary and cook an additional 15 -20 minutes over low heat stirring frequently until onions take on a brown color.
- Heat oven to 475 degrees F.
- Top pizza dough with onion mixture. Bake 10 minutes. Remove from oven, add cheese and allow to bake in the oven further until cheese browns. Remove from oven and sprinkle arugula over top.

- Preheat oven to 350 degrees.
- In a medium dry skillet, roast garlic and chiles over medium heat, turning, until soft and blackened in spots, 10 to 15 minutes for the garlic, and about 10 minutes for the chiles. Remove from heat. When garlic is cool enough to handle, peel and transfer to a mortar or the bowl of a small food processor along with chiles. Using a pestle, pound the mixture until smooth or process until smooth. Add oil, honey, and salt and pound or process until well combined.
- Place nuts in a large bowl and add garlic-chile mixture; stir to coat. Spread nuts evenly on a rimmed baking sheet and transfer to oven. Bake, stirring occasionally, until nuts are fragrant and coating is shiny and dry, about 20 minutes. Let cool slightly before serving.
