Steps:
- Heat a frying pan over medium-low heat. Add the olive oil and butter.
- Once the butter has melted add the onions and garlic. Gently fry for at least 15 minutes, stirring regularly, until the onions are very soft.
- Stir in the flour, mixing thoroughly.
- Gradually add the stock, stirring constantly.
- Pour in the wine, continuing to stir.
- Add the herbs and simmer for 15-20 minutes, stirring now and again.
- Season with salt and pepper to taste.

- Sauté until the just begin to brown. Add the herbs and the wine and simmer until the onions are very tender, about 10 minutes.

- Preheat oven to 350°F
- Heat olive oil in a large skillet on medium heat. sprinkle chicken with garlic powder and brown on both sides. Place chicken on paper towels.
- Spoon off fat and return pan to stove. Stir in mushrooms and onions; cook, stirring occasionally until onions are soft. Put in medium mixing bowl.
- In a small bowl, mix together basil, oregano, rosemary, and thyme. Season with garlic salt, pepper, and poultry seasoning. Add in wine and broth and stir until well mixed. Add to the onion and mushrooms.
- Place chicken in a roasting pan. Pour rest of ingredients over chicken. Cover with aluminum foil and cook until meat begins to fall off the bone, about 90 minutes.

MUSHROOMS WITH ONIONS AND RED WINE
I was given this recipe by a lovely Cypriot. I had never come across it before. It can be made with all kinds of mushrooms. I used shiitake with a Cabernet Sauvignon and found them delicious except that the stalks remained chewy, so cut those off if you use them.

Steps:
- In a saucepan, fry the onions in the oil, covered, slowly over low heat, stirring occasionally, for about 20 minutes, until soft and golden.
- Add the mushrooms, salt and pepper, and the wine and cook, covered, over low heat until the mushrooms are soft-between 10 and 30 minutes, depending on the mushrooms. Take off the lid to reduce the sauce if necessary.

- Cut one large brown onion into rings that are a little over a 1/4 inch thick, place the slices of onion in a single layer on a casserole dish, set aside

- Add the casserole dish into a preheated oven, bake + broil option 210 C - 410 F for exactly 45 minutes
