Feta cheese ½ cup
Kalamata olives ½ cup
Cucumber ½ cup
Cherry tomatoes ½ cup
Olive oil ¼ cup
Garlic powder 2 tsp
Dried oregano 1 tsp

Black pepper
Greek yogurt ½ cup
Lemon Juice of ½
Parsley 2 tbsp
Red pepper flakes 1 pinch

Steps:

  • Preheat oven to 375°F.
  • Place the potato wedges on a baking sheet, drizzle with olive oil and season generously with sprinkles of garlic powder and oregano, salt and pepper and toss together until fully coated.
  • Arrange potato wedges, neatly, in a single layer, skin side down and bake for 38-40 minutes until deeply golden and extra crispy.
  • In a small bowl, whisk the Greek yogurt, lemon juice, 1 tablespoon parsley and red pepper flakes, together, to combine.
  • To serve, top the extra crispy, hot potato wedges with feta cheese, tomatoes, 1 tablespoon parsley, olives and cucumbers and ENJOY!

These potatoes wedges are loaded with all your favorite Mediterranean spices and served with a cool, creamy yogurt sauce!

2 lbs. baby red potatoes
1/3 cup olive oil
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon Kosher salt
1/4 teaspoon fresh cracked pepper
1/4 cup fresh chopped dill
zest of 1 lemon

Steps:

  • Preheat oven to 450 degrees and line a baking sheet with parchment paper.
  • Slice potatoes into wedges and place them in a large bowl. Depending on the size of your baby reds, you'll get about 4-6 wedges per potato.
  • In a small bowl or measuring cup combine olive oil, oregano, rosemary, garlic powder, paprika, salt and pepper.
  • Pour seasoning mixture over the wedges and combine until seasoning is well distributed and wedges are evenly coated.
  • Spread wedges in a single layer on the baking sheet.
  • Bake for 15 minutes, then flip the fries and bake for another 15 minutes.
  • Then crank the heat to 500 and bake for 15 minutes. Flip fries and bake for another 5-10 minutes or until desired crispiness is reached.
  • While the wedges are baking, combine yogurt sauce ingredients.
  • Once the wedges baked, remove them from the oven and gently toss them with the fresh dill and lemon zest. Serve warm and enjoy dipped in yogurt sauce!

1/4 cup lemon juice
2 cups flour

  • Preheat oven to 375.
  • Melt butter and lemon juice in microwave bowl and drizzle small amount to cover bottom of baking dish. Reserve butter mixture.

  • One at a time, place potato wedges in remaining melted butter. Save remainder for possible use later.

4 tablespoons good olive oil
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Scrub the potatoes, cut them in half lengthwise, then cut each half in thirds lengthwise. You'll have 6 long wedges from each potato. Place the potatoes on a sheet pan with the olive oil, salt, pepper, garlic, and rosemary. With clean hands, toss all the ingredients together, making sure the potatoes are covered with oil. Spread the potatoes in a single layer with 1 cut-side down.
