CHEESY CHICKEN QUESADILLAS

Tasty tortillas filled with chicken, spring onions and goats' cheese or, for a milder cheese flavouring, replace the tangy goats' cheese with ricotta cheese or any other soft cheese. Served with avocado and garlic dip, diced cucumber and tomatoes, these are ideal for a light meal or a supper snack. Tortillas have been a staple of the Mexican diet since the time of the Aztecs. I have adapted this recipe, from an International Masters '1001 recipes for pan or wok' recipe card, and posted it for the 2005 Zaar World Tour. 350g = 12 ounces; 175g = 6 ounces.

1 egg white
1 bunch spring onions or 1 bunch shallot
4 garlic cloves
350 g chicken breast fillets, cooked
175 g goat cheese
2 tablespoons fresh coriander, chopped, plus sprigs to garnish
2 tablespoons sweet chili sauce
1 lime, juice of
8 flour tortillas
1 tablespoon sunflower oil
lime wedge, to garnish

Steps:

  • Beat the egg white, trim and slice the spring onions, peel and crush the garlic, shred the chicken, crumble the cheese into a bowl; add the spring onions, garlic, coriander, chicken, chilli sauce and lime juice and toss together.
  • Spoon equal quantities of chicken mixture onto the tortillas, brush the edges of each tortilla with egg white, fold in half and press to seal.
  • Brush a large non-stick pan with half the oil and gently fry half the tortillas for 5 minutes on each side, until browned. Keep warm and repeat with the remaining oil and tortillas. Garnish the quesadillas with coriander and lime wedges and serve.

2 large (10-inch) flour tortillas
2 tablespoons vegetable oil
Kosher salt
1/4 cup sour cream
1 lime, zested and juiced
1/2 teaspoon ground cumin
Freshly ground black pepper
1 1/2 cups shredded Cheddar

Steps:

  • 1 tablespoon chopped fresh cilantro or parsley leaves (or 1 teaspoon dried parsley)
  • Preheat the broiler.
  • Brush the tortillas on both sides with vegetable oil and lightly salt. Heat a large saute pan over medium heat and cook the tortillas, 1 at a time, until slightly golden on both sides. Meanwhile, in a small bowl, mix together the sour cream, lime zest and juice, cumin, and salt and pepper, to taste, until smooth. Pour into a plastic squeeze bottle or sturdy resealable plastic bag and cut small tip in corner.
  • Arrange the browned tortillas on a baking sheet and sprinkle evenly with cheese. (You may need to do this in batches if both tortillas don't fit on 1 tray.) Broil until the cheese bubbles and begins to brown, about for 1 to 2 minutes, (be careful not to burn). Slice each quesadilla into 8 wedges and drizzle sour cream decoratively over the top. Sprinkle with cilantro and serve.

Easy cheesy chicken quesadillas are quick and easy to make and the perfect snack for hungry kids, made with just six ingredients.

6 flour tortillas
2 9-ounce packages cooked diced chicken
1 cup shredded Colby cheese
1-1/2 cups shredded mozzarella cheese
3 tablespoons butter, softened
1 cup salsa

Steps:

  • Place 3 of the tortillas on a work surface. Top the tortillas with half of the cheeses, then the chicken, then the remaining cheeses. Top the filling with the remaining tortillas. Spread outsides of the quesadillas with the butter.
  • Heat a flat pan, large skillet, or griddle over medium heat. Add the quesadillas, one at a time, and cook, pressing down with a spatula, until bottoms are browned, about 2 to 4 minutes. Turn quesadillas and cook second side 2 to 3 minutes or until the tortillas are browned and crisp and the cheeses melt.
  • Remove the quesadilla with a spatula to the work surface and cut into quarters. Repeat with remaining quesadillas. Serve immediately with salsa for dipping.

1/2 cup pitted ripe olives, drained, chopped
1 to 2 chipotle chiles in adobo sauce (from 7-oz can), chopped

Steps:

1 cup shredded cooked chicken
1/2 cup chopped onion
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
2 to 3 flour tortillas (8 to 10 inches)
Ranch salad dressing or salsa

Steps:

  • In a bowl, combine chicken, onion, mozzarella and cheddar; set aside. Spray one side of each tortilla with cooking spray. Place tortilla greased side down on hot griddle. Place chicken on half of each tortilla. Fold over and cook over low for 1-2 minutes on each side of until tortilla is golden brown. Cut into wedges. Serve with dressing.

2 cups cooked chicken, chopped, shredded
2 cups shredded jalapeno jack cheese (or similar cheese)
8 flour tortillas
butter or margarine

Steps:

  • Heat a frying pan or griddle to medium high heat.
  • Set out chicken and cheese for quick access.
  • Butter 1 side each of two tortillas.
  • Place one tortilla buttered side down on the griddle and quickly sprinkle about 1/2 cup chopped chicken and 1/2 cup shredded cheese all over the tortilla.
  • Place the second tortilla, buttered side up, over the filling.
  • Fry for about a minute or until bottom tortilla begins to brown and cheese begins to melt and stick tortillas together.
  • Using a wide spatula, quickly flip the quesadilla and continue frying until the bottom tortilla is toasted and the filling is hot and bubbily.
  • Continue with each quesadilla. Cut quesadillas into wedges.
  • Serve with sour cream and salsa.

1/4 cup vegetable oil
2 (7-inch) flour tortillas
1 boneless skinless chicken breast half
1/8 teaspoon salt, or to taste
salt and freshly ground pepper, to taste
1 cup shredded Monterey Jack cheese
1/4 cup fresh salsa, purchased or homemade
1/4 cup sour cream
sprig of cilantro

Steps:

  • 1. Preheat the broiler. Heat the oil in a medium skillet until hot and shimmering. Fry the tortillas, 1 at a time, until crisp and lightly browned on both sides. Drain on paper towels. Add additional oil, if needed. In the same skillet, cook the chicken breast until browned on both sides and opaque in the center, about 8 minutes total. Season with salt and pepper. Cut the chicken crosswise into thin strips. Reserve. 2. Put the tortillas on a large baking sheet and divide the cheese evenly on top. Run under the hot broiler until the cheese is melted, about 45 seconds. Remove from the oven. Arrange half of the chicken in the center of each tortilla. Top with salsa and sour cream.
