HOMEMADE CHOCOLATE ORANGE STICKS image

Chocolate Orange Sticks are made with a delicious orange jelly filling dipped in melted chocolate - a favorite holiday candy!

Provided by Jessica & Nellie

Time 30m

Number Of Ingredients 10

3 Tbsp unflavored gelatin (I used 4 of the little packets)
2 cups sugar
1/2 cup hot water
1/2 cup cold water
2 Tbsp frozen orange juice concentrate
2 Tbsp lemon juice
1/2 tsp lemon extract
1 tsp orange extract
5-6 drops orange food coloring
12 oz melting chocolate or chocolate almond bark

Steps:

  • Soften the gelatin in cold water and set aside.
  • Combine sugar and hot water, stir until dissolved. Bring to a boil in a saucepan over medium-high heat. Add the gelatin mixture and slowly boil on medium-low heat for 20 minutes. Remove from heat and add the remaining ingredients.
  • Pour into well-greased molds. I've used silicone molds and mini loaf pans and the loaf pans work just as well as the silicone mold.
  • Let stand over night and then dip into melted chocolate. I also drizzled a little white chocolate on top just for fun. Enjoy!

CRUNCHY WHITE CHOCOLATE-ORANGE BARK

Crunchy White Chocolate-Orange Bark image

Provided by Claire Robinson

Categories     dessert

Time 1h25m

Yield 6 servings

Number Of Ingredients 5

1 pound good quality white chocolate, chopped (recommended: Callebaut)
1 teaspoon pure orange extract
Orange paste food coloring
1 cup crisped rice cereal
1/2 cup golden raisins

Steps:

  • Line a baking sheet with parchment paper or silicone baking mat.
  • Create a double boiler by putting a glass bowl over a saucepan of barely simmering water, making sure the bowl doesn't touch the water. Add the chocolate and orange extract and stir until melted and smooth. Do not overheat white chocolate or it will seize.
  • Remove the bowl from the pan and wipe the condensation from the bottom. Put about 2 tablespoons of the chocolate in a small bowl and tint it with the food coloring.
  • Add the puffed rice and raisins to the large bowl of chocolate and stir until well combined. Pour the mixture onto the baking sheet and with an offset spatula, spread it to an even thickness, about 1/4-inch. Tap the pan firmly several times on the counter to settle the chocolate. With a small spoon or fork, drizzle stripes of orange tinted chocolate over the surface of the bark.
  • Refrigerate the chocolate for 1 hour to completely set before breaking it into large pieces. Serve immediately or wrap in cellophane bags tied with festive ribbon and keep on hand as a quick hostess gift!

  • Let stand for 1 minute then mix until the chocolate is completely smooth. Add in orange extract.
  • Cover the bowl with plastic wrap and place in the fridge for about 45 minutes or until mixture begins to thicken.
  • With a large wooden spoon, stir mixture for 10-15 seconds or just until it lightens in color (do not overbeat or it will not be the right texture).
  • Spoon rounded teaspoonfuls onto waxed paper-lined baking sheets (they don't have to look pretty). Place baking sheet in the fridge and let chill for at least 10 minutes.
  • Using your hands, gently roll each spoonful into a ball.
  • Follow the directions on the candy coating packaging and melt chocolate (I melted mine in the microwave according to the package directions).
  • Dip each chocolate orange ball in the candy coating and push around until completely covered; allow excess to drip off (I use two forks when I dip these truffles and that way the excess chocolate can drip through before I remove it from the bowl).
  • Place each truffle on wax paper; let stand until set. Store in an air-tight container in the fridge.

  • In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and beat on medium high speed until fluffy and creamy. Beat in egg and vanilla extract on high speed. Scrape down the sides and bottom of the bowl as needed, and continue to beat until fully combined.
  • In a separate bowl, whisk the flour, cinnamon, and salt together until combined. On low speed, slowly mix into the wet ingredients until combined. The cookie dough will be thick and slightly sticky. Switch to high speed and beat in the zest, fresh orange juice, and walnuts (if using). Turn the dough out onto a floured work surface and, with floured hands, divide into two. Shape each half into an 8-inch log, about 2.5 inches in diameter. The measurements don’t have to be exact. Tightly wrap the logs in plastic wrap and chill in the refrigerator for at least 4 hours and up to 5 days. Chilling is mandatory for this cookie dough. I always chill mine overnight.
  • Preheat oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone baking mats. (Always recommended for cookies.) Set aside.
  • Remove logs from the refrigerator and roll into coarse sugar, if desired. It’s added only for a little crunch! Slice each log into 12 equally thick cookies and place cookies on baking sheets about 2 inches apart. Bake the cookies for 12-14 minutes or until brown around the edges. Allow to cool for 5 minutes on the cookie sheet, then transfer to cooling rack to cool completely.
