SHRIMP AND SCALLOP SALAD WITH ORANGE SECTIONS

Shrimp and Scallop Salad with Orange Sections image

Provided by Food Network

Time 45m

Yield 6 servings

Number Of Ingredients 8

Salt
1/4 cup white wine vinegar
1 pound raw medium shrimp in their shells
1 pound bay scallops or sea scallops cut in half
5 medium oranges
1 head of romaine lettuce
1/4 cup extra virgin olive oil
Fresh ground black pepper

Steps:

  • In two separate saucepans bring water to a boil with 1 tablespoon salt and 2 tablespoons vinegar in each pan. (If you don't have two saucepans, you can execute this step in two stages using the same saucepan twice.) When the water comes to a boil, drop the shrimp into one pan and the scallops into the other. Cook the shrimp for 1 to 2 minutes, depending on their size, and the scallops for about 1 minute, until their color turns a flat white. Drain immediately.
  • Shell the shrimp leaving the tails on, remove the vein that runs down the center of the back, and put them in a bowl with the drained scallops.
  • Peel 4 oranges with a sharp paring knife, removing the peel and the pith. Slip the blade in between the sections to detach the pulp from the thin membrane that encloses each section. Lift out the membrane-less sections and remove any seeds. Set aside.
  • Detach the lettuce leaves from the head, discarding any bruised or wilted leaves. Wash the leaves in several changes of cold water and shake dry in a towel or in a salad spinner. Cut the leaves into strips about 1/2-inch wide. Cut the remaining orange in half and squeeze out the juice.
  • Combine the shrimp, scallops, and orange sections in a bowl. Add the orange juice, salt, olive oil, and liberal grindings of pepper and toss thoroughly.
  • Choose a shallow-- neither too deep nor too flat-- serving platter. Line it with strips of lettuce and top them with the shrimp, scallops, and orange sections, distributing evenly over them all the seasonings in the bowl. Serve at once.

Categories     main-dish

Time 1h18m

Yield 4 servings

Number Of Ingredients 18

Vegetable cooking spray
1/2 cup coarsely chopped dry-roasted peanuts
1/2 teaspoon canola oil
1/2 teaspoon sugar
Kosher salt and freshly ground black pepper
2 cups fully cooked, frozen, shelled edamame (green soybeans)
16 jumbo shrimp, unpeeled
5 oranges
1/2 cup hoisin sauce
1/2 cup fresh lime juice
2 garlic cloves, minced
1 teaspoon minced fresh ginger
6 cups loosely packed torn red leaf lettuce (about 6 ounces)
2 (4-ounce) bags watercress, stemmed
2 pounds red seedless watermelon, peeled and cut into 1¿2-inch cubes (about 4 cups)
4 green onions, thinly sliced
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh basil

Steps:

  • Preheat oven to 400 degrees F. Coat cooking grate of outdoor grill with cooking spray. Preheat outdoor grill to medium-high heat.
  • In a small bowl, combine the peanuts, canola oil, sugar, 1/2 teaspoon pepper and 1/4 teaspoon salt.; spread mixture in a single layer on a baking sheet.
  • Bake for 10 to 12 minutes, stirring once. Cool.
  • Cook edamame in boiling water to cover 2 minutes or until crisp-tender, drain. Plunge into ice water to stop the cooking process, drain and set aside.
  • Peel shrimp, leaving tails on; devein, if desired. Thread 4 shrimp onto each skewer. Set aside.
  • Peel 4 oranges, and cut each into 6 (1/2-inch-thick) slices; set slices aside.
  • Grate remaining orange to equal 1/2 teaspoon grated rind in a small bowl; squeeze juice from orange into bowl. Add hoisin sauce, lime juice, garlic and ginger to bowl, and stir until blended. Remove 2 tablespoons citrus dressing, and brush evenly on shrimp. Reserve remaining dressing.
  • Grill shrimp skewers 2 minutes on each side or just until done. Sprinkle with salt and pepper to taste.
  • Arrange lettuce and watercress on 4 serving plates, and top evenly with edamame, orange slices, watermelon, and green onions. Top each salad with a shrimp skewer. Sprinkle evenly with cilantro, basil, and peanut mixture; drizzle with reserved citrus dressing.

ORANGE-GINGER BLACK PEPPER SHRIMP

Orange-Ginger Black Pepper Shrimp image

I bought a bottle of Trader Joe's Black Pepper Sauce and needed a way to use it! The bottle says: Trader Joe's Black Pepper Sauce is an authentic Thai stir-fry sauce. Add to a stir-fry with chicken, shrimp, or tofu, or use as a delicious marinade for chicken, beef, or pork. Trader Joe's Black Pepper Sauce ingredients: water, sugar, black pepper, garlic, soy sauce, rice bran oil, salt, modified tapioca starch, citric acid. ---- If you don't have a Trader Joe's nearby, you might substitute Lee Kum Kee Black Pepper Sauce!

Provided by KerfuffleUponWincle

Categories     Oranges

Time 47m

Yield 2-3 serving(s)

Number Of Ingredients 9

16 ounces large raw shrimp (thawed, if frozen)
2 tablespoons trader joe's black pepper sauce (or substitute Lee Kum Kee Black Pepper Sauce)
1 inch fresh gingerroot (sliced very thin, then minced ~ or grate the ginger)
1 large navel orange (zest peel, then slice orange into segments)
1 tablespoon butter
1 tablespoon olive oil
1 teaspoon minced garlic
2 tablespoons soy sauce
1/4 cup dry sherry (ginger infused dry sherry even better!)

Steps:

  • In a bowl, combine the shrimp, black pepper sauce, grated ginger, orange zest, orange segments, and orange juice ~ marinate for 1/2 hour.
  • In a hot skillet or wok, melt the butter and olive oil, garlic, soy sauce, and sherry ~ saute for 2-3 minutes.
  • Add the marinated shrimp mixture.
  • Saute for about 3-4 minutes until shrimp turns pink.
  • NOTE: Sauce will be thin ~ you MIGHT be able to thicken it with a little cornstarch mixed with cold water, then add the cornstarch mixture to the hot sauce and simmer for 2-3 minutes while stirring, although I read that cornstarch doesn't react well to acidic ingredients so I have not tried to thicken this sauce with it. Perhaps I will buy some arrowroot and try that for this sauce!
  • Serve over cooked jasmine rice, with steamed broccoli, or green beans.

SHRIMP SALAD

Shrimp Salad image

Using plenty of lemon - both the zest and juice - is the secret to this tangy, creamy shrimp salad. If you're using this to make sandwiches, chop the shrimp into pieces before adding them to the dressing. You can also leave the shrimp whole for an elegant salad, served with lettuce, avocado, and other vegetables if you like. If you're starting with precooked shrimp, you can skip the first step entirely.

Provided by Melissa Clark

Categories     dinner, easy, lunch, quick, weeknight, salads and dressings, seafood, appetizer, main course, side dish

Time 15m

Yield 2 to 4 servings

Number Of Ingredients 9

Salt and freshly ground black pepper
2 lemons
1 pound shelled large shrimp
1/4 cup mayonnaise
2 tablespoons extra-virgin olive oil
1/2 cup diced celery
1/4 cup diced red onion
1/4 cup chopped fresh dill, parsley or cilantro (or a combination)
Lettuce, avocado or other vegetables, for serving (optional)

Steps:

  • Bring a medium pot of salted water to a simmer. Slice one of the lemons and add to the pot, along with the shrimp. Simmer, never letting the water boil if you can help it, until the shrimp turn opaque, 2 to 4 minutes, depending on their size. Drain well, and discard the lemon slices. If you like, you can chop the cooked shrimp into smaller pieces.
  • Grate the zest from the remaining lemon into a large bowl. Halve the naked lemon and squeeze the juice into the bowl. Whisk in the mayonnaise and oil.
  • Add the celery, onion, herbs and cooked shrimp, tossing to combine. Season to taste with salt and pepper. Cover and refrigerate until ready to eat. Serve with lettuce and avocado, if you like.
