2 cups graham cracker crumbs
1 teaspoon ground cinnamon
1 teaspoon grated orange zest
1/2 cup butter, melted
FILLING:
1 package (3 ounces) orange gelatin
3 packages (8 ounces each) cream cheese, softened
1-1/4 cups sugar
1 can (5 ounces) evaporated milk
1/3 cup thawed orange juice concentrate
1 teaspoon lemon juice
1 teaspoon vanilla extract
1 envelope unflavored gelatin
2 tablespoons cold water
2 tablespoons boiling water
1 carton (8 ounces) frozen whipped topping, thawed
TOPPING:
2 cups whipped topping
1/4 cup sugar
Citrus fruits and lemon balm, optional

Steps:

  • In a large bowl, combine the cracker crumbs, cinnamon, orange zest and butter. Press onto the bottom of a greased 10-in. springform pan. Refrigerate for at least 30 minutes., Prepare orange gelatin according to package directions. Set aside 1/2 cup at room temperature. Chill remaining gelatin until slightly thickened, 40-60 minutes., In a large bowl, beat cream cheese and sugar until smooth. Beat in the milk, orange juice concentrate, lemon juice and vanilla. Beat on medium-high speed 2 minutes longer., In a small bowl, sprinkle unflavored gelatin over cold water; let stand for 2 minutes. Stir in boiling water until gelatin is completely dissolved. Stir into the room-temperature orange gelatin. Stir into cream cheese mixture, then fold in whipped topping. Pour into crust., For topping, in a large bowl, beat whipped topping and sugar. Beat in refrigerated orange gelatin (mixture will be thin). Chill for 30 minutes. Gently spoon over filling (pan will be full). Refrigerate for 8 hours or overnight. Remove sides of pan. Garnish with fruit and lemon balm if desired.

This is an easy cheesecake for kids to prepare with just a little supervision - they'll love smashing up the biscuits for the base.

15 digestive biscuits
6 tbsp butter, melted
400g curd or cream cheese
grated zest 3 oranges, save the segments for the decoration
200g mascarpone cheese
100g caster sugar
3 tbsp milk
184ml pot double cream

Steps:

  • Crush the biscuits roughly. You can do this by putting them in a plastic food bag and crushing them with a wooden spoon.
  • Put the biscuits into a bowl and mix in the melted butter. Put the mixture into a 23cm cheesecake tin, then use the back of a spoon to spread it evenly and press it down in the tin to form the base. Put the tin into the fridge to set. This should take about 30 mins.
  • Put the curd or cream cheese, orange zest, mascarpone, sugar and milk into a bowl and mix it well with the wooden spoon.
  • Put the cream in a clean bowl and whisk until it is the consistency of thick custard. Add to the orange mixture and mix thoroughly.
  • Remove the cheesecake tin from the fridge. Pour the filling over the biscuit base and spread evenly. Decorate with segments of orange and return to the fridge until ready to serve (at least 4 hours or overnight).

1/4 cup orange juice
1/2 teaspoon cornstarch
1 tablespoon cold water
1/2 teaspoon orange extract
1 carton (8 ounces) frozen whipped topping, thawed
Yellow and red liquid food coloring, optional
1 package (8 ounces) cream cheese, softened
1 cup sour cream
1/2 cup cold milk
1 package (3.4 ounces) instant vanilla pudding mix
Chocolate hearts, optional

Steps:

  • In a large saucepan, combine the orange marmalade and juice; cook and stir over medium heat until melted and blended. , In a small bowl, combine cornstarch and water until smooth. Gradually stir into marmalade mixture. Bring to a boil; cook and stir for 4 minutes or until thickened. Remove from the heat; stir in extract. Cool completely. Fold in whipped topping. Tint orange with yellow and red coloring if desired. , In a large bowl, beat cream cheese until smooth. Add the sour cream; mix well. In a small bowl, whisk milk and pudding mix for 2 minutes (mixture will be thick). Stir into cream cheese mixture. , Cut a large hole in the corner of a pastry or plastic bag; fill half full with cream cheese mixture. Press bag slightly to flatten. Cut a small hole in another bag; insert star tip No. 21. Place filled bag in empty bag; fill empty bag with orange mixture. Pipe in a swirled design in parfait glasses; chill. Garnish with chocolate hearts if desired.

1 (3 oz.) box orange Jello
2/3 cup boiling water
32 ounces cream cheese, softened
1 cup + 3 tablespoons powdered sugar, divided
1 tablespoon orange zest
1 1/4 cups heavy cream
1 cup graham cracker crumbs
4 tablespoons butter, melted

Steps:

  • In a medium bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Freeze while you prepare the cheesecake filling.
  • In a medium bowl, stir together the Jello and boiling water until Jello is dissolved. Set aside to cool for 10 minutes.
  • With an electric mixer, beat the cream cheese and one cup powdered sugar until smooth. With mixer on low, slowly pour the Jello mixture into the cream cheese mixture, beating until smooth. Fold in the orange zest.
  • With an electric mixer, beat the heavy cream and remaining 3 tablespoons powdered sugar until stiff peaks form. Fold into the orange cream cheese mixture until well incorporated. Spread the mixture evenly over the prepared crust.
  • Chill for 6-8 hours, or until set. Top with additional whipped cream before serving, if desired.

This dessert is elegant enough to serve at a dinner party and everyone will think it took you hours to prepare. A light dessert that won't make you feel heavy. It states that you should have a pastry bag with fitted tips to make a pretty presentation, but you can just spoon it into a parfait glass or even wine glasses. Garnishing is up to you. Chocolate curls, a strawberry fan, a few blueberries on top. Go wild and enjoy. Cook time does not include chill time.

1/2 cup orange marmalade
1/4 cup orange juice
1/2 teaspoon cornstarch
1 tablespoon cold water

8 ounces Cool Whip, thawed or 8 ounces other frozen whipped topping
yellow food coloring (optional)
red food coloring (optional)
8 ounces cream cheese, softened
1 cup sour cream
1/2 cup cold milk
1 (3 1/2 ounce) package vanilla instant pudding mix

Steps:

  • In a lrg. saucepan, combine orange juice and marmalade; cook and stir over medium heat until melted and blended.
  • In a small bowl, combine cornstarch and water until smooth. Gradually stir into marmalade mixture. Bring to a boil; cook and stir for 4 minutes or until thickened. Remove from heat and stir in vanilla extract. Cool completely. Fold into thawed Cool whip. Tint with yellow and red food coloring if desired working with 1 drop of each at a time so as not to make too dark.
  • Beat cream cheese until smooth. Add sour cream and mix well.
  • In a small bowl, beat the milk and vanilla pudding mix on low speed for 2 minutes. Stir into cream cheese mixture.
  • ***The next step is if you're using a pastry bag. If not using, then spoon into glasses and spoon Cool whip/orange mixture on top. Chill. Garnish before serving.***.
  • Cut a large hole in the corner of a pastry or plastic bag ( or a zip lock type of bag); fill half full with with the cream cheese mixture. Press bag slightly and carefully to flatten. Pipe into glasses. Repeat with remaining mixture. Cut a small hole in another pastry bag; insert star tip No. 21 (or just the star tip number whatever). Fill this bag with the Cool whip/orange mixture and pipe in a swirl design on top of cream cheese mixture. Chill. Garnish before serving.

Juice of 1 orange, (about ¼ cup)
1 teaspoon orange extract
pinch kosher salt
1 cup (238g) whipped topping, (plus more for garnish)

Steps:

  • In a large bowl, beat cream cheese until it is light and fluffy.
  • Add in the confectioners' sugar, orange juice, orange extract, and salt and beat until everything is combined.
  • Gently fold in the whipped topping.
  • Equally divide orange mousse into cups and refrigerate uncovered until thickened, (about 1 hour up 24 hours).
  • When ready to serve, top with remaining whipped topping

4 Orange Milano cookies (I used Pepperidge Farm)
1 3/4 c whipping cream
1/4 c orange juice
1 box instant cheesecake pudding and pie filling; 3.4 ounce
2 Tbsp plus 2 teaspoons hot fudge sauce, room temperature

Steps:

  • 1. Place cookies into a small resealable plastic bag. Using a mallet or rolling pin, crush cookies; set aside.
  • 2. In a large chilled bowl, place the whipping cream, orange juice and cheesecake pudding and pie filling. Using a hand mixer, beat slowly until combined, about 30 seconds.
  • 3. Increase speed to high and beat until stiff peaks form, about 1 minute to 1 1/2 minutes. Scraping bowl occasionally.
  • 4. Using 2 (8-ounce) martini glasses (or parfait glasses), begin layering the parfaits. Place about 1/2 tablespoon of the crushed cookies into the bottom of the glasses.
  • 5. Top with 1 teaspoon fudge sauce.
  • 6. Top with 1/3 cup cheesecake mixture.
  • 7. Then 1 tablespoon crushed cookies.
  • 8. Next, 1 tablespoon of the fudge.
  • 9. Add 2/3 cup cheesecake mixture, then remaining crushed cookies.
  • 10. Can be eaten immediately or refrigerate until ready to serve.
