CRANBERRY SAUCE WITH ORANGE JUICE
The warmth of the ginger and cloves and the brightness of the orange zest come together to make this a family favorite! You can use frozen cranberries if you can't find fresh--just simmer a few minutes longer. Make this ahead of time, and save yourself some stress on the big day!

Steps:
- Combine water, sugar, orange juice, cinnamon stick, ginger, orange zest, salt, cloves, and allspice in a medium saucepan and bring to a boil. Reduce heat and simmer until sugar is dissolved, 3 to 5 minutes.
- Stir cranberries into the sugar mixture in the saucepan and return to a boil over medium heat. Cook until cranberries start to burst and mixture thickens slightly, 8 to 10 minutes; sauce will thicken further upon cooling.
- Transfer cranberry sauce to a bowl; remove and discard cinnamon stick. Store in the refrigerator; for best flavor, bring to room temperature before serving.

CRANBERRY ORANGE RELISH
Steps:
- Cook the cranberries and sugar in a small saucepan over medium 5 minutes, or just until sugar melts. Stir in the port and cook over medium-low 10 to 15 minutes, or until thickened and the cranberries begin to pop. Remove from the heat and stir in the orange zest and orange juice. Let cool completely. Cover and refrigerate until ready to serve.

Cranberries are one of the few fruits native to the northeastern United States, growing wild in bogs and swamps. Cranberries have become a staple at holiday meals, especially Thanksgiving. - Combine the cranberries, orange zest and juice, port, sugar, cinnamon, and cardamom in a small saucepan, and bring to a boil. Reduce the heat to a simmer and cook, stirring occasionally, until the cranberries are tender and the sauce has thickened, about 10 minutes.
- Taste, and add more sugar if desired. Stir in the nuts and set aside to cool. Serve at room temperature. (The sauce can be made up to 3 days in advance and stored in an airtight container in the refrigerator until ready to serve.)

CRANBERRY-ORANGE GELATIN
Toss that mix; it's just as easy to make flavored gelatin from scratch with a few ingredients.

- In a small saucepan, sprinkle gelatin over 1 cup cranberry juice. Set aside to soften, 5 minutes. Place over low heat until gelatin has dissolved, 4 to 5 minutes. Add sugar; stir gently until dissolved (rub mixture between your fingers to make sure it's smooth), 2 to 3 minutes. Remove from heat.
- Transfer gelatin mixture to a medium bowl; stir in orange juice and remaining 2 cups cranberry juice. Skim any foam from surface, and refrigerate until just thick enough to hold a line drawn by your finger, 30 to 40 minutes.
- Arrange orange segments in the bottom of a 1 1/2- to 2-quart gelatin mold or Bundt pan; pour gelatin mixture over oranges. Refrigerate until firm, at least 2 hours.
- To unmold, dip bottom of mold briefly in hot water, invert onto a plate, and shake firmly to release.
