These Frosty Orange Dream Squares are made from sherbet, whipped cream (like Cool Whip) and pudding. The crust is made from Nilla Wafers, though you could certainly substitute graham crackers instead.

40 cookies vanilla wafers (finely crushed (about 1-1/2 cups))
1/4 cup butter (melted)
6.8 ounces JELL-O Vanilla Flavor Instant Pudding (2 pkg. (3.4 oz. each) )
2 cups cold milk
8 ounces Cool Whip
2 cups orange sherbet, softened

Steps:

  • Line 13x9-inch pan with foil, with ends of foil extending over sides. Mix wafer crumbs and butter; press onto bottom of prepared pan.
  • Beat pudding mixes and milk in medium bowl with whisk 2 min. Stir in half the COOL WHIP; spoon over crust. Refrigerate 10 min.
  • Add remaining COOL WHIP to sherbet; whisk until blended. Spoon over pudding layer in crust.
  • Freeze 3 hours or until firm. Use foil handles to remove dessert from pan before cutting to serve.

Orange Dream Bars - this easy recipe is like a lemon bar but using orange! The perfect citrus recipe, tart and sweet with a shortbread crust.

1 cup (226g) unsalted butter
2 cups (248g) all-purpose flour
½ cup (100g) granulated sugar
¼ teaspoon salt
½ cup (119ml) fresh squeezed orange juice
Zest of 1 orange
1 teaspoon orange extract
1 ½ cups (150g) granulated sugar
¼ cup (31g) all-purpose flour
½ teaspoon baking powder
4 large eggs
Powdered sugar (for topping)

Steps:

  • Preheat oven to 350F. Line a 9x13" pan with foil or parchment paper and spray with nonstick cooking spray.
  • Beat butter with a hand or a stand mixer until creamy, then add the flour, sugar, and salt and beat until a dough forms. (If you're using a hand mixer it will take extra time.) Press the crust into the bottom of the prepared pan. Bake for 18 minutes.
  • A few minutes before the crust comes out of the oven, prepare the filling. Place all filling ingredients into a blender jar and blend until smooth, a few seconds to almost a minute, depending on your blender. You can also do this with a whisk in a large bowl.
  • Carefully pour filling over evenly over hot crust. Return to oven and bake until the top is no longer jiggly, about 20-23 minutes. Cool completely before dusting with powdered sugar and slicing into bars.

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg, room temperature
1 tablespoon grated orange zest
2-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups vanilla or white chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in egg and orange zest. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Stir in vanilla chips., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake until golden brown, 10-12 minutes. Remove to wire racks to cool.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened, divided
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1/2 cup cold milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 tsp. orange zest

Steps:

  • Combine graham crumbs and butter; press onto bottom of 8-inch square pan. Refrigerate until ready to use.
  • Microwave orange juice in microwaveable measuring cup on HIGH 1 min. Add to gelatin mix in small bowl; stir 2 min. until completely dissolved. Gradually add to half the cream cheese in medium bowl, beating with mixer after each addition until blended. Whisk in 1 cup COOL WHIP; spread over crust. Freeze while preparing next layer.
  • Beat remaining cream cheese and milk in separate medium bowl until blended. Add dry pudding mix; beat 2 min. Stir in remaining COOL WHIP and orange zest; spread over gelatin layer. Refrigerate 3 hours.

6 honey maid honey grahams, finely crushed about 1 cup
2 Tbsp butter, melted
1/2 c orange juice
1 pkg 3 oz jello orange flavor gelatin
1 pkg 8 oz cream cheese, softened and divided
1 tub 8 oz thawed cool whip whipped topping, divided
1/2 c cold milk
1 pkg 3-4 oz jello vanilla flavor instant pudding
1 tsp orange zest

Steps:

  • 1. Mix graham crumbs and butter, press onto bottom of 8-inch square pan.
  • 2. Microwave juice in microwavable measuring cup on high 1 minute. Add to gelatin mix in small bowl, stir 2 min. until completely dissolved.
  • 3. Gradually add to half the cream cheese in medium bowl, beating with mixer after each addition until blended. Whisk in 1 cup cool whip spread over crust. Freeze while preparing next layer.
  • 4. Beat remaining cream cheese and milk in seperate medium bowl until blended. Add dry pudding mix, beat 2 min. Stir in remaining cool whip and zest; spread over gelatin layer. Refrigerate 3 hours.
  • 5. Garnish each square with orange twist just before serving.

1 cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup butter, cubed
FILLING
2 large eggs, lightly beaten
1 cup packed brown sugar
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped walnuts

Steps:

  • In a small bowl, combine flour and brown sugar; cut in butter until crumbly. Pat into a 13x9-in. baking pan. Bake at 350° for 10 minutes. , Meanwhile, in a bowl, beat eggs and brown sugar; stir in vanilla. Combine flour and salt; add to egg mixture. Fold in coconut and walnuts. Spread over baked crust. Return to oven and bake 20-25 minutes longer or until golden brown. Cool on a wire rack.

1/3 cup butter, room temperature
1-1/2 cups brown sugar, packed
1 cup plus 2 Tbl. flour, unbleached
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1 tsp. baking powder
1-1/2 cups shredded coconut
1 cup pecans, chopped
Frosting
1/4 cup (1/2 stick) butter, room temperature
2 cups powdered sugar
1 tsp. vanilla
1 tsp. grated orange peel
2 - 4 Tbl. orange juice from concentrate (I didn't use the fresh juice because there is always a varied flavor with fresh OJ and it is sometimes bitter, you may use fresh or from concentrate)

Steps:

  • Preheat oven to 375 degrees. In the bowl of a stand mixer or large bowl, cream butter and 1/2 cup of the sugar until creamy. Add in 1 cup of the flour and mix until it resembles crumbs. Press into the bottom of a 9 x 13 (I used a 9 x 12 throw away tin pan) and bake for 10 minutes. Remove from oven and let cool. In the (cleaned) bowl of a stand mixer or medium mixing bowl, place eggs and beat until light and lemon-colored; then gradually beat in the remaining 1 cup sugar. Beat in the vanilla; remaining 2 Tbl. flour, salt, and baking powder. Stir in the coconut and nuts until thoroughly combined. Pour coconut mixture over the top of the crust, spreading evenly. Return to oven and bake for 20 minutes or until topping is golden. Cool completely. To make the frosting, beat butter and powdered sugar until creamy. Add vanilla and orange peel, mix until smooth. Beat in enough orange juice to make a good spreading consistency. Frost bars. The original recipe calls for cutting the bars before frosting so that you don't crack the frosting while cutting the bars, but I didn't have that problem, because I just made sure the frosting was set before cutting, and lets face it, I'm not giving these to critics so it's really okay if they are a little cracked looking, they are still delish! And in case you were wondering, here's what my book looks like after years of use. And I can still read the recipes so that's all that counts! Serves - 2 dozen Enjoy!

Add remaining whipped topping to sherbet; stir with wire whisk until well blended. Spoon evenly over pudding layer; cover.
  • Freeze at least 3 hours or overnight. Use foil handles or remove dessert from pan before cutting into squares to serve. Store leftover dessert in freezer.
  • SUBSTITUTE: Prepare as directed, using lemon or lime sherbet.

I found this recipes a couple of years ago in a little recipe book you usually find at supermarket checkouts. I make it quite a lot in the summer .It is great served at cookouts on a hot day. Everyone I know that has tried it loves it. Sometimes for fun I use different sherbets, lime, raspberry ect.

1-1/2 c finely crushed vanilla wafer
1/4 c melted butter or margarine.
2 c cold milk
2 box 4 servings each vanilla instant pudding
1-8 oz pkg cool whip defrosted & divided
2 c orange sherbet softened

Steps:

  • 1. Mix crumbs & butter together press into bottom of 9x13 pan,set aside
  • 2. Add milk to pudding mix. beat with whisk for 2 minutes ,stir in half of whipped topping .Spoon evenly over the crust. Refrigerate for 10 minutes.
  • 3. Add remaining cool whip to sherbet,stir with wire whisk until blened. Spread over the pudding mix Cover with foil freeze for at least 3 hours. Serve in squares.
  • 4. You may use graham crackers instead of vanila wafers for the bottom layer
