PEACH FRITTERS WITH ORANGE GLAZE

Steps:
- Heat deep-fryer to 350 degrees F.
- Combine cornmeal, flour, sugar, and salt in a large bowl.
- Remove 3 peach halves from can and cut into small cubes.
- In a small bowl, combine buttermilk, eggs, butter, cubed peaches, and almond extract. Add wet mixture to dry and stir well until combined.
- Using a small ice cream scoop, drop batter into the hot oil. Fry for 1 minute per side. Flip halfway through cooking before it's too heavy to turn. Remove to a paper towel lined sheet tray. Sprinkle immediately with confectioners' sugar. Place on platter and serve with Orange Glaze.
- In a large bowl add the confectioners' sugar and drizzle in the orange juice while whisking.
EASY BANANA FRITTERS
I was craving apple fritters but wasn't able to get to the donut shop. So I looked around to find on hand ingredients to satisfy my craving. I didn't have apples, but I had some very nice ripe bananas. That's when I came up with these. You won't be disappointed!

- In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
- Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.

APPLE FRITTERS WITH ORANGE GLAZE

- Make fritters:
- Whisk together flour, sugar, baking powder, and salt in a large bowl. In another bowl, whisk eggs, then whisk in milk, melted butter, zest, and vanilla. Add wet ingredients into dry and fold until just combined (do not overmix), then fold in apples.
- Heat 3/4 inch of oil in a 10- to 12-inch deep heavy skillet over medium heat until it shimmers. Drop a little batter into the oil. If it bubbles and rises to the top, the oil is ready. If it browns immediately, reduce heat. (Or use a deep-fat/candy thermometer to heat oil until it registers 375°F.) Using two tablespoons (soup spoons), drop spoonfuls of batter, each containing 2 apple slices, into oil. Working in batches of 5, cook fritters, turning over halfway through, until golden brown, center is just cooked through, and apples are tender, 3 to 4 minutes total. Transfer with a slotted spoon to paper towels to drain. (Make sure oil returns to 375°F between batches.)
- Make glaze:
- Whisk together 1 cup confectioners' sugar with orange juice and vanilla until smooth.
- Dust fritters with some additional confectioners' sugar and drizzle glaze over fritters.

- Put the butter, milk, sugar, and salt in a saucepan, along with 1/2 cup/125 ml water. Bring to a boil. Add the zests and orange flavouring. Take the pan from the heat and add the flour all at once, beating with a wooden spoon until the mixture pulls away from the sides of the pan and forms a ball. Put the pan back on the heat for half a minute, stirring to dry the paste somewhat. Remove again and let cool, 1 to 2 minutes. Add the eggs, the equivalent of one at a time, beating vigorously after each addition to make a smooth paste that falls easily from a spoon, but is not runny.
- Heat the oil in a deep-fryer until sizzling, but not smoking -350ºF/175ºC. Roll the balls of dough in the palm of your hand (or simply shape with spoons), no bigger than 3/4 inch/2 cm, and fry, turning once or twice, until they have puffed up to double their size, cooked through completely, and coloured evenly to a nice golden brown, 5 to 7 minutes. Remove with a slotted spoon to paper towels to drain. Sprinkle very generously with icing sugar. Serve warm, or store in an airtight container to eat later.

SWEET FRITTERS WITH CINNAMON-ORANGE SYRUP

My mother continued that tradition, but not in such an all-consuming manner. For her it was a great joy to plan a menu and then invite people to help with the preparation. "The women in my life taught me the beauty of a good meal. I still use many of their recipes today, but unlike my grandmother I don't spend an entire day in the kitchen. Fortunately, my husband and kids like to cook, so I've found a balance between my grandmother's time-intensive recipes and my mother's practicality. " Juana serves these fritters for dessert, but they make a great breakfast dish, too.

- Bring brown sugar, 1 cup water, and orange juice to boil in heavy medium saucepan over high heat, stirring until sugar dissolves. Boil until syrup reduces to 2 cups, about 10 minutes. Remove from heat and whisk in cinnamon.
- Combine remaining 1 cup water, butter, sugar, and salt in medium saucepan. Stir over medium heat until butter melts. Remove saucepan from heat and add flour. Using wooden spoon, stir until smooth. Return saucepan to heat and stir until mixture thickens and comes away from sides of saucepan, about 2 minutes. Transfer mixture to large bowl. Cool 5 minutes. Using electric mixer, add eggs 1 at a time, beating until dough is thick and smooth after each addition.
- Add enough oil to heavy large saucepan to reach depth of 2 inches. Attach deep-fry thermometer and heat oil to 375°F. Working in batches, add 1 heaping teaspoonful batter to oil for each fritter. Fry until golden and tripled in size, about 8 minutes. Using slotted spoon, transfer fritters to paper towels to drain. Mound fritters on serving platter. Dust with powdered sugar and drizzle with cinnamon syrup. Serve, passing remaining syrup separately.
