3 tablespoons plus 1-1/2 teaspoons cornstarch
1/4 teaspoon salt
1 cup water
Sugar substitute equivalent to 1/2 cup sugar
2 packages (.3 ounce each) sugar-free orange gelatin
5 cups diced peeled fresh or frozen unsweetened peaches, thawed and drained
1 reduced-fat graham cracker crust (9 inches)
1 cup nonfat whipped topping

Steps:

  • In a saucepan, combine the cornstarch, salt and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in sweetener and gelatin. Cool. , Fold in peaches. Pour into the crust. Refrigerate for 2 hours or until serving. Garnish with whipped topping.

1 graham cracker crust (8 inches)
1 cup whipped topping

Steps:

  • In a saucepan, combine the cornstarch, salt and water until smooth.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.

1 (3 ounce) package sugar free peach Jell-o*
2 (6 ounce) containers peach yogurt
1 (8 ounce) tub fat free cool whip (thawed)
1 pre-made graham cracker crust

Steps:

  • In a microwave-safe measuring cup, heat water for 45-90 seconds or until boiling.
  • Whisk in Jell-o until dissolved.
  • In a large bowl, whisk together Jell-o mixture and yogurt.
  • Fold in whipped topping. Carefully spread in crust.
  • Refrigerate at least 4 hours or until set.
  • Garnish as desired - I topped mine with frozen peaches and whipped cream. Store in refrigerator

2 sheets refrigerated pie crust
5 cups sliced peeled fresh peaches (about 5 medium)
2 teaspoons lemon juice
1/2 teaspoon grated orange zest
1/8 teaspoon almond extract
1 cup sugar
1/4 cup cornstarch
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
2 tablespoons butter

Steps:

  • Line a 9-in. pie plate with 1 crust; trim, leaving a 1-in. overhang around rim. Set aside. In a large bowl, combine the peaches, lemon juice, orange zest and extract. Combine the sugar, cornstarch, nutmeg and salt. Add to peach mixture; toss gently to coat. Pour into crust; dot with butter., Roll out remaining crust to a 1/8-in.-thick circle; cut into strips. Arrange over filling in a lattice pattern. Trim and seal strips to bottom crust; fold overhang over. Lightly press or flute edge. Cover the edge loosely with foil. , Bake at 400° for 40 minutes. Remove foil; bake until crust is golden brown and filling is bubbly, 10-15 minutes longer. Cool on a wire rack. Store in the refrigerator.

Fresh peaches in a pre-cooked pie crust with a filling of lemon and orange juice, sweetened and thickened. Top with whipped cream. Filling can also double as cake filling.

1 cup all-purpose flour
½ teaspoon white sugar
½ teaspoon salt
½ cup shortening
6 tablespoons ice water, or as needed
3 tablespoons cornstarch
1 cup white sugar
1 cup orange juice
1 cup water
½ lemon, juiced
10 fresh peaches - peeled, pitted, and sliced

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C).
  • In a medium bowl, stir together the flour, 1/2 teaspoon of sugar, and salt. Rub in shortening between your fingers, forming evenly small lumps no larger than peas. Stir in water until dough can form a ball. Knead briefly to pull it together, then let rest for a few minutes. Roll out the dough to a about a 12 inch circle. Fit into a 9 inch pie plate, and prick with a fork. Top with another pie plate, and flip over. This method works best with thinner metal pans than glass pans.
  • Bake the crust for 8 to 10 minutes in the preheated oven, or until golden. Cool, then flip back into the original pan. This process keeps the crust from sagging down into the pan without using pie weights.
  • Meanwhile, stir together the cornstarch and 1 cup of sugar in a saucepan. Stir in the orange juice, water and lemon juice. Warm over medium heat, stirring occasionally until thickened and clear. Remove from heat, and chill.
  • To assemble the pie, alternate layers of fresh sliced peaches with the chilled citrus sauce, beginning and ending with the sauce. Serve with whipped cream or ice cream.
