Steps:

  • GETTING READY 1) Finely chop the raisins. 2) In a bowl, place together the tea and raisins MAKING 3) Add in the sugar, yeast, nutrient and citrus fruit juices to the tea mixture. 4) Put the lid on and put the bowl in a warm place to ferment for 5 days. 5) Pass the tea mixture through cheesecloth and squeeze out the liquor. 6) Transfer the tea mixture into the fermentation jar and fit with air-lock lid. 7) Allow to ferment and rack in the normal way. SERVING 8) Bottle and serve.

4 Earl Grey tea bags
8 cups boiling water
1/2 cup orange blossom water
2 tablespoons honey
1 orange, peel zested in large strips, juiced
1 lemon, peel zested in large strips, juiced

Steps:

  • In a medium saucepan, add the tea bags and water. Steep the tea bags for 3 minutes and then remove them from the pan. Stir in the orange blossom water and honey. Add the juice of the orange and lemon, as well as the peels. Bring to simmer and simmer for 10 minutes.
  • Serve the tea in warm mugs with pieces of the orange and lemon peel as garnish.

1 bottle (750 ml) dry white wine
1 medium organic orange
1/3 cup/65g sugar
8 coriander seeds, optional

Steps:

  • Open the wine. Pour out 1/2 cup to enjoy while you carry on with the recipe. (This is not greed; a bit has to come out or the bottle with overflow when you add the other ingredients.)
  • Shave the zest from the orange with a vegetable peeler. Remove every trace of bitter white pith from the back with a sharp knife. Poke the orange zest into the bottle of wine. Funnel in the sugar. Drop in the coriander seeds, if using. Recork the bottle. Turn it upside down and right side up a few times until the sugar has dissolved. Refrigerate for 1 week, giving the wine a shake once a day.
  • Strain the wine into a carafe and serve well-chilled as an aperitif.

7 cup water
1 can (12 ounces) frozen orange juice concentrate
1/2 cup sugar
2 tablespoons lemon juice
5 teaspoons instant tea
1 teaspoon whole cloves

Steps:

  • In a large saucepan, combine water, orange juice concentrate, sugar, lemon juice and tea. Tie the cloves in a small cheesecloth bag; add to saucepan. Simmer, uncovered, for 15-20 minutes. Remove spice bag. Serve hot. Store leftovers in glass container in refrigerator.

2 pounds (about 4) oranges, each cut into 16 pieces
Two 750-ml bottles dry white wine
1 cup sugar
1/4 cup Cognac
Garnish: long strips of orange zest removed with a vegetable peeler

Steps:

  • In a large bowl, combine the oranges and the wine and chill the mixture, covered tightly with plastic wrap, for 5 days. Discard the oranges, add the sugar and the Cognac, and stir the mixture until the sugar is dissolved. Strain the mixture through a sieve lined with a double thickness of rinsed and squeezed cheesecloth into a bowl and pour the wine into decorative bottles with corks. Insert a strip of the orange zest into each bottle and chill the wine, corked, for one week. The wine keeps, chilled for 3 months.
