BLUE CHEESE AND CARAMELIZED-ONION SQUARES

Number Of Ingredients 15

Crust
2 cups all purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk
1/4 cup olive oil
2 tablespoons (1/4 stick) unsalted butter, melted
Topping
2 tablespoons (1/4 stick) unsalted butter
2 tablespoons olive oil
3 large onions (about 2 pounds), halved, thinly sliced
1 tablespoon finely chopped fresh rosemary
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 cups (about 6 ounces) crumbled blue cheese

Steps:

  • For crust:
  • Preheat oven to 425°F. Mix flour, baking powder, and salt in medium bowl to blend. Make well in center of dry ingredients. Whisk milk, olive oil, and melted butter in liquid measuring cup to blend. Slowly pour milk mixture into well in dry ingredients, stirring until just blended and smooth. Roll out dough on lightly floured surface to 10x13-inch rectangle. Transfer dough to rimmed baking sheet. Re-form dough into 10x13-inch rectangle (dough will shrink when moved). Pierce dough all over with fork. Let dough rest while preparing topping.
  • For topping:
  • Melt butter with oil in large skillet over high heat. Add onions. Cook until onions are soft and beginning to brown, stirring frequently, about 10 minutes. Add rosemary, sugar, and salt. Season onions to taste with pepper. Reduce heat to medium. Continue to cook until onions are soft and dark brown, stirring frequently, about 20 minutes; cool.
  • Spread onion mixture evenly over dough. Sprinkle with cheese. Bake until crust is golden and cheese is bubbling, about 20 minutes. Let cool. Cut into squares and serve.

This recipe is total "comfort food" as far as I am concerned! Bon Appetit Magazine, June 2009 edition. Maria Helm Sinskey is the author of Williams Sonoma Family Meals. Made a few changes to suit our needs and to try and make some more people happy.;) I think a nice rose, a sliced tomato salad with an olive oil and "vinegar" vinaigrette, warm bread and butter and a scrumptious fresh fruit salad of berries and cantelope will round out the meal very nicely! :)

2 tablespoons extra virgin olive oil
4 cups packed chopped onions
8 ounces trimmed sugar snap peas, cut into 1/2-inch pieces
8 ounces orecchiete pasta (little ear-shaped pasta) or 8 ounces pasta shells
1/2 cup whole milk ricotta cheese
1/4 cup torn fresh basil leaf
1 1/2 teaspoons finely grated lemon peel
mrs. dash extra spicy seasoning or mrs dash italian seasoning
fresh coarse ground black pepper (optional)

Steps:

  • Heat oil in large skillet over medium heat.
  • Add onions.
  • Saute until onions are pale golden, about 6 minutes.
  • Reduce heat to medium; saute onions until tender and deep golden, about 15 minutes longer.
  • Transfer 3/4 cup sauteed onions to a small bowl;reserve for another dish.
  • Add peas to onions in skillet.
  • Saute until peas are crisp tender, about 3 minutes.
  • Remove skillet from heat.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite.
  • Drain pasta, reserving 1 cup of cooking liquid.
  • Add pasta and 1/2 cup cooking liquid to onion mixture; stir over medium high heat 30 seconds.
  • Mix in ricotta, basil (if using), lemon peel and lots of black pepper, adding more cooking liquid to moisten as needed.
  • Season with either of Mrs Dash's seasonings, black pepper and crushed red pepper flakes (if using), to taste.

2 onions, quartered and cut into thin slices
1 teaspoon salt
4 boneless skinless chicken breasts (about 1 1/3 lb)
1/4 teaspoon fresh ground black pepper
3/4 teaspoon dried rosemary, crumbled or 2 teaspoons chopped fresh rosemary
1 garlic clove, minced
1/2 lb orecchiette
2 ounces blue cheese, crumbled (about 1/2 cup)

Steps:

  • In a large nonstick frying pan, melt the butter with 2 tablespoons of oil over moderately high heat. Add the onions and 1/2 teaspoon of the salt and cook, stirring frequently, until well browned, about 25 minutes. Remove.
  • Add the remaining 1 tablespoon oil to the pan and reduce the heat to moderate. Season the chicken with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper and add to the pan along with the rosemary. Cook the chicken until brown, about 5 minutes. Turn and cook until almost done, about 3 minutes longer. Add the garlic. Cook, stirring, for 30 seconds. Cover the pan, remove from the heat, and let steam for 5 minutes. Cut the chicken into 1/4-inch slices.
  • Meanwhile, in a large pot of boiling, salted water, cook the orecchiette until just done, about 15 minutes. Reserve about 1/4 cup of the pasta water. 1 pound uncooked orzo pasta
2 tablespoons butter
3 tablespoons olive oil
4 onions, sliced
6 ½ ounces blue cheese, crumbled
3 ½ ounces mascarpone cheese
2 cups shredded spinach
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • While pasta is cooking, heat butter and oil in a large skillet over low heat. Cook onion in this mixture until golden brown, 20 to 30 minutes. Remove from pan with a spoon and drain on paper towels.
  • In a large bowl, combine blue cheese, mascarpone and onion and mix well. Toss cheese mixture with spinach and pasta, season with salt and pepper and serve.
