VEGAN SPAGHETTI AND (BEYOND) MEATBALLS
Plant-based "meatballs" made with Beyond Meat's® Beyond Beef® are served with a slow-simmered tomato sauce for a hearty and satisfying vegan meal.

- Dice tomatoes and return them to the can with their juice.
- Heat 2 tablespoons olive oil in a saucepan over medium-high heat. Add onion and garlic to the hot oil and saute, stirring frequently, for 2 minutes. Stir in diced tomatoes and their juice, tomato sauce, oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper until well blended. Bring sauce to a simmer and reduce heat to low. Let simmer while preparing meatballs.
- Combine beef substitute with bread crumbs, parsley, remaining 3/4 teaspoon salt, remaining 1/4 teaspoon pepper, garlic powder, and onion powder in a bowl; mix until ingredients are well combined. Roll the mixture into twelve 1 1/2-inch balls.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Meanwhile, heat remaining 2 tablespoons olive oil in a deep skillet or Dutch oven over medium-high heat. Add meatballs to the pan and saute, turning occasionally, until all sides are browned and a bit crisp, about 10 minutes total. Reduce heat to low.
- Pour simmering tomato sauce over the meatballs and mix. Simmer sauce with meatballs for an additional 10 minutes. Serve meatballs and sauce over spaghetti.

VEGAN MEATBALLS

Steps:
- Tip the dried porcini into a bowl and cover with boiling water. Leave to soak for 20 mins.
- Meanwhile heat 1 tbsp of olive oil a frying pan. Add the onion and fry over a low heat for 10 mins or until softened and translucent. Add the garlic and paprika and cook for 1 min.
- Tip the black beans and oats into a food processor and blitz until you have a chunky, textured mixture. Tip the beans into a mixing bowl and stir through the miso, breadcrumbs and cooked onion mix. Strain and finely chop the porcini mushrooms and add those (keep the liquid for soup or risottos). Season and roll into 12 balls and chill in the fridge while you make the sauce.
- Heat 2 tbsp oil in a saucepan. Add the onion and fry over a low heat for 10 mins or until softened and translucent. Add the garlic and chilli and cook for 1 min. Stir through the tomatoes and sugar and season to taste. Simmer uncovered for 20 mins.
- Heat the oven to 180C/160C fan/gas 4. Heat the remaining 2 tbsp oil for the meatballs in a non-stick frying pan over a medium heat. Add the balls and fry for 5 mins until evenly brown. Transfer to a baking tray and put in the oven to cook through for 12 mins.
- Add the cooked meatballs to the pan of sauce and toss everything to coat, then scatter with the basil. Serve with spaghetti or soft polenta.

ORIENTAL VEGAN MEATBALLS IN TOMATO SAUCE
Vegan and also gluten free meatballs, perfect for a simple meed-week dinner or meat free Mondays.

- Cook millet according to the packet instructions, remove from heat and let stand until cool. Transfer to a bowl and fluff it with fork and add the onions, raisins, coriander/parsley, tomato puree, curry powder, cinnamon, 1 tbsp olive oil and season with salt and pepper. Mix together and using your hands, knead to combine the mixture evenly. Form the mixture into 18 meatballs.
- Heat 2 tbsp olive oil in a large frying pan, add the meatballs and cook until browned all over. Tip out the excess fat and set the meatballs aside.
- Heat 2 tbsp olive oil in a saucepan, add the celery, shallot and cook until soft, add the raisins, cinnamon, lemon juice, stir and cook for 1 minute. Then add the peas, tomatoes, season to taste with salt and pepper, cover and simmer for 20-25 minutes.
- Remove the sauce from the heat. Add the meatballs to the saucepan, cover with the lid and gently shake so the sauce is spread to all the meatballs. Leave to stand for 5 minutes.
- Before serving top the meatballs with coriander/parsley.
THAI MEATBALLS IN A TOMATO COCONUT CURRY SAUCE
These Thai-inspired meatballs are packed with bright and aromatic flavors and simmered in a fragrant tomato coconut curry sauce. While not a true Thai curry, I love experimenting with Thai ingredients and reinventing dishes. Serve over jasmine rice or rice noodles.

- Combine pork, fish sauce, garlic, ginger, lemon grass paste, cilantro, and peanut oil in a mixing bowl. Mix well. Refrigerate at least 1 hour to blend flavors.
- Shape pork mixture into 1 1/4-inch meatballs. (Mixture should yield approximately 34 to 36 meatballs.)
- Heat 1 tablespoon peanut oil in a large skillet over medium heat. Cook meatballs in batches, giving the pan a shake occasionally. Turn meatballs until brown on all sides and cooked through, approximately 14 to 16 minutes. Remove meatballs to a bowl.
- In a large saucepan, heat remaining 1 tablespoon oil over medium heat. Cook onion until translucent, 5 to 6 minutes. Add tomatoes and bring to a simmer. Stir in curry paste. Cover and simmer over low heat until sauce begins to reduce, 20 to 25 minutes. Remove from heat and cool slightly.
- Process sauce with an immersion blender until smooth. Stir in coconut milk and adjust taste by adding additional salt if needed. Return meatballs to sauce and simmer for an additional 5 minutes, or until warmed through.
- Garnish with cilantro if desired.

- Rinse dried shiitake and cover with boiling water (weigh the shiitake down or else they will float) to soften. Keep immersed in water for as long as possible. I tend to use rehydrated mushrooms leftover from a mushroom stock.
- Heat up a bit of oil in a skillet and add roughly chopped shallots and garlic, fry gently for a few minutes, stirring frequently. Next add in sliced fresh shiitake mushrooms and sauté until fully cooked and there is no moisture in the pan, a little caramelisation is nice too.
- Cut off stems from rehydrated shiitake and discard them, slice the caps and add to the food processor together with all the remaining ingredients - if baking your meatballs use only 15 g / ¼ cup breadcrumbs. I recommend not adding chickpeas yet and processing them separately to retain a bit of texture (but that's optional).
- Process the mushroom mixture until everything is well chopped, transfer to a large mixing bowl.
