ORIENT EXPRESS CHICKEN SALAD
This always-popular salad makes use of lots of convenience items, but it's still healthy and nutritious. I created it one Mother's Day and received rave reviews. It's perfect for a fancy lunch and comes together in no time flat! -Sara Dziadosz, Olathe, Kansas

- Place chicken in a large resealable plastic bag; add marinade. Seal bag and turn to coat; refrigerate for at least 30 minutes. For dressing, in a small bowl, whisk the vinaigrette, brown sugar, soy sauce, ginger and red pepper flakes if desired. Cover and refrigerate until serving. , Drain and discard marinade. Grill chicken, covered, over indirect medium heat or broil 4 in. from the heat for 5-6 minutes on each side or until a thermometer reads 170°., In a large bowl, toss the salad greens, noodles, onions, cheese, cranberries and sesame seeds. Divide among four plates. Top with oranges and almonds. Cut chicken into diagonal slices; arrange over each salad. Serve with dressing.

ORIENT EXPRESS CHICKEN SALAD
In response to a thread asking for a close clone to the marinade of the McDonald's Asian salad, I ran across this recipe in one of my cooking magazines. I have not tired this yet so I don't know how close it is. The ingredients seem similar and the photo to accompany it looked similar. When I make this and photograph it, I will post that as well unless one of our great chefs get to it before me. :) Prep time includes marinading.

Steps:
- Place chicken and marinade in a plastic bag. Seal bag and refrigerate for 30 minutes.
- In a small bowl, whisk the next five ingredients for dressing. Refrigerate.
- Discard marinade. Broil chicken 4 inches from heat for 10-12 minutes or until juices run clear. Slice and set aside.
- In a bowl, toss the next six ingredients. Divide among plates. Top with oranges, almonds and chicken.
- Serve with dressing.

ORIENT EXPRESS CHICKEN SANDWICHES
Grilled chicken breasts marinated in a hoisin and soy sauces served on bite size rolls or croissants.

- PREP: CLEAN: Wash hands. Place chicken in reclosable plastic bag. CLEAN: Wash hands. Combine hoisin sauce, soy sauce, 1 tablespoon honey, rice vinegar and garlic. Pour sauce over chicken. Refrigerate at least 4 hours or overnight, turning once. When ready to cook, drain chicken and discard leftover marinade.
- COOK: Grill or broil chicken 4 to 5 inches from heat source 5 to 6 minutes per side or until internal juices run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 170 degrees F.) At this point, chicken may be covered and refrigerated up to 24 hours before serving.
- SERVE: To make honey-mustard sauce, combine remaining 2 tablespoons honey and mustard; mix well. Thinly slice chicken crosswise. Serve chicken in rolls with sauce.
- CHILL: Refrigerate leftovers immediately.

- Skin and debone breasts. Dip into melted butter; coat with mixture of 1/2 crumbs and 1/2 cheese. Brush pieces of aluminum foil big enough to cover the chicken with melted butter. - First put the wok on the heat, then pour in the oil and bring it up to a medium-high temperature. Now add the onion and cook, stirring only occasionally, until it starts to brown - this takes about 5 minutes. Sprinkle in the 5-spice powder or ginger and stir it around quickly for about 30 seconds. Next tip in the vegetables and stir them around, keeping the heat quite high so the vegetables cook quickly and stay crunchy. Keep cooking and stirring for 4-5 minutes until the vegetables begin to soften.
- While the vegetables are cooking, make a 2cm tear in the top of each rice packet, then microwave each packet separately for 2 minutes on full power. If you don't have a microwave, put your rice on to cook according to the packet instructions before you heat up the work.
- Splash in 2 tbsp soy sauce and remove from the heat. Use more soy if you like but remember that it's salty. If you want more sauce, splash in 1-2 tbsp water. Tip the rice on to plates, add the veg and eat immediately.
