OVEN BAKED CANDIED WHISKEY BACON
Oven Baked Candied Whiskey Bacon is the crispiest, sweetest, spiciest bacon recipe ever! And it's not just for breakfast; add to sandwiches, salads and everything in between.

Steps:
- Preheat oven to 350F
- Mix together your whiskey with 1 cup brown sugar and cayenne pepper in a small saucepan over medium/high heat. Stir to combine. Bring to a boil and then reduce to a simmer for 10 minutes. Remove from heat and set aside.
- Place each strip of bacon directly on a baking sheet, allowing a bit of space between strips. Brush the bacon with the whiskey reduction and then sprinkle with remaining 1/4 cup brown sugar.
- Place bacon in the oven and cook for 20 minutes, checking after 12 minutes. Ovens vary, so you want to make sure they don't burn. Mine took the full 20 minutes.
- Take bacon out of the oven and allow to sit on a paper towel to cool/drain.
- Serve and enjoy!

CANDIED BACON

- Preheat the oven to 350 degrees F.
- In a large pot over medium-high heat, bring the bourbon, 2 cups water and loose tea to a simmer. Drop the bacon cubes into the pot and continue to simmer until the bacon is cooked through and the liquid has reduced.
- In a shallow bowl, combine the brown sugar, coffee, cocoa, salt and espelette. Using a slotted spoon, removed the bacon cubes from the bourbon mixture and toss with the sugar and spices. Reserve the bourbon mixture.
- Place the coated bacon cubes in a glass baking dish and bake for 20 to 25 minutes. Remove from the oven and place on wire cooling racks set over lined sheet trays. Spoon the leftover bourbon mixture over the bacon cubes. Cool to room temperature and wrap individually in wax paper.
CANDIED BACON
This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

- Preheat the oven to 325 degrees F.
- Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
- Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!
GLAZED BACON
Steps:
- Preheat the oven to 400 degrees F.
- For the red chile-honey glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. While the bacon is cooking, whisk together the clover honey and ancho chile powder in a medium bowl until smooth. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the glaze.
- For the sorghum glaze: Lay the bacon in a single layer on a sheet pan, keeping space in between each slice. Place bacon in pan and bake until lightly browned and crisp, 15 to 20 minutes. Remove the bacon from the oven, using mitts, and carefully drain the fat, tipping the pan, into a medium bowl. Blot the top of the bacon with a few paper towels. Place the sheet pan with the bacon on it on a cooling rack and immediately brush each slice with the sorghum syrup.
- For the brown sugar-pecan glaze: Line a baking sheet with a silpat or parchment paper. Lay the bacon in a single layer on the baking sheet, keeping space in between each slice. Divide the brown sugar evenly over the top of each slice of bacon and bake until bacon is golden brown and almost crispy, about 13 minutes. Remove from the oven and sprinkle with the finely chopped pecans, return to the oven and continue baking until pecans are toasted and bacon is crispy, about 3 minutes longer.
- Let sit at room temperature for 10 minutes.

- Adjust oven rack to middle position and pre-heat oven to 400°F. Line rimmed baking sheet with aluminum foil. Arrange bacon on prepared sheet (slices can overlap slightly). Sprinkle an even layer of brown sugar all over. Bake until brown and crisp, 10 to 15 minutes, rotating sheet halfway through baking. (Times may vary, depending on your oven. Mine takes about 20 minutes, as we like ours crispy. Transfer bacon to paper towel-lined plate to drain. Serve. NOTE: As the candied bacon begins to cool, it hardens. So be sure to remove the bacon as soon as it's drained, so it doesn't stick to the paper towel.
