  • Bake in the preheated oven until golden brown, about 7 minutes. Cool for 5 to 10 minutes before removing from baking sheets.

Steps:

  • Preheat oven to 400 degrees F.
  • Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
  • Bake for 3 to 5 minutes or until golden and crisp. Cool.

These easy cheese chips can be filled or flavored any way you like for a quick, crunchy snack or hors d'oeuvres.

1 cup parmesan cheese, freshly grated or shredded

Steps:

  • Preheat oven to 350F.
  • Place small mounds of cheese (about 2 tablespoons each) on a baking sheet covered with a silicone mat or parchment paper. Gently pat the piles using a back of a spoon to create more or less an even layer. The piles should be about 2 inches apart from each other, or more if you are making larger crisps.
  • Bake 5 to 6 minutes until they are a light golden brown (they will be a little darker at the edges). It happens fast, so watch carefully.
  • If you want to mold the crisps into cups, use a thin spatula to transfer them off of the baking sheet while warm and "drape" them over a small inverted drinking glass or inverted muffin pan (use a mini muffin pan if your cheese rounds are small). You have to do this part quickly because once they cool, they will not be easy to shape.
  • Allow to cool and serve.

These cheese crisps are very versatile....sprinkle them into a green salad, use with hors d'oeuvres, serve with cocktails, use as a garnish on macaroni and cheese, or just snack on them! Lots of different cheeses could be used, just make sure you use a hard cheese....if it's too soft it will just melt and spread to form a uniform sheet of cheese in your pan. Play around with the flavorings too...I've just added the red pepper but you can use sweet or hot chile powder or add some cumin, fennel or coriander seeds, lightly crushed. Herbs likie rosemary or thyme can be added as well.

12 ounces aged monterey jack cheese, chilled or 12 ounces manchego cheese, in one piece chilled
2 tablespoons flour
1/3 teaspoon ground red pepper

Steps:

  • Heat the oven to 375°.
  • Shred the block of cheese lengthwise (longer shreds work better) using a box grater with holes about 1/4-inch wide.
  • Place in a medium bowl.
  • Sprinkle with the flour; toss gently with a fork to coat the cheese.
  • Sprinkle with the red pepper, toss again.
  • Place a silicone baking mat or a sheet of parchment paper on a 16 1/2-by-11 1/2-inch sheet pan.
  • Scatter half of the cheese evenly over the mat.
  • Shake the pan gently to even the cheese out. Or, you can spread the cheese mixture into circles, any size you wish, from 3 inches to 10 inches in diameter.
  • Bake until the cheese is molten and golden brown, about 14-15 minutes.
  • Remove from the oven; cool.
  • Blot up any grease with paper towels.
  • Break the crisp into large pieces; arrange on a platter.
  • Wipe off the baking mat and repeating with the remaining cheese.

Anything you can imagine. I was trying to figure out what to do with American cheese and this makes it actually palatable.

1 slice American cheese
1 pinch garlic powder

Steps:

  • Sprinkle slice of cheese with pinch or whatever seasoning you want.
  • Cut slice into 16 pieces.
  • Arrange on the outer edges of a flat, non-stick surface such as a silicone bake sheet or parchment paper about 1.5-2 inches apart. If you use a plate, the slanted edges will cause the cheese to run towards the center. Too close and the pieces with melt together.
  • Microwave for 1 minute, it will start to look slightly golden.
  • Microwave for an additional 30 seconds, checking to make sure it doesn't burn.
  • Remove from microwave and non-stick surface. Let cool. The final product isn't very pretty but for a total of two minutes, this recipe is amazing.
