  • Heat the oven to 160C/ 140C fan/ gas mark 3. Core the apple and slice through the equator into very thin slices 1 - 2mm thick. Dust with cinnamon and lay flat on a baking sheet lined with parchment paper.
  • Cook for 45 mins - 1 hour, turning halfway through and removing any crisps that have turned brown. Continue cooking until the apples have dried out and are light golden. Cool, store in an airtight container and enjoy as a snack.

3 large sweet (crisp apples, such as Honeycrisp, Fuji, Jazz, or Pink Lady)
3/4 teaspoon ground cinnamon

Steps:

  • Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.
  • Wash the apples. With an apple corer, very small cookie cutter, or the round side of a metal piping tip, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds.
  • Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 1 hour in the upper and lower thirds of the oven. Remove the baking sheets and switch the pans' position on the upper and lower racks. Continue baking for 1 to 1 1/2 additional hours, until a single apple chip removed from the oven is crisp when set out at room temperature for 2 to 3 minutes (to test the apple chips, remove a single apple slice but let the others continue baking). Once you are happy with the crispness (the total time will vary based on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour as it cools down to crisp further (unless you fear you overcooked them, in which case remove the pan immediately and let it sit at room temperature).

  • Preheat the oven to 225 Fahrenheit.
  • Wash the apples, then slice them very thin, about 1/8". We recommend using a mandoline to slice. Leave the cores in the apples, but remove any seeds as you cut.
  • Line 2 baking sheets with parchment paper. Lay the apple slices on the tray in a single layer, as close as possible without touching. Sprinkle with cinnamon if desired.
  • Bake for 1 1/2 to 2 hours, until curled and lightly browned. The chips will crisp after cooling for several minutes. (To test whether it is done, pull out an apple chip and set it on the counter for a few minutes until cool, then taste whether it is crisp.) While making a large pot of applesauce, I chose not to discard the nutrient-rich peels but instead bake them into apple chips. It turned out to be an deliciously successful experiment. These apple chips are lightly sprinkled with cinnamon-sugar and oven-dried on parchment paper. To ensure even drying, it's important to make sure the peels are of equal/uniform thickness. Thicker peels will take longer to dry, and you need them to be completely dry for food safety reasons. For best results, use a counter-mounted spiral apple peeler; or just keep an even hand while peeling your apples. My family enjoyed these crispy treats, and I hope yours does too!

1 teaspoon cinnamon

Steps:

  • Position oven racks in the upper and lower third of oven.
  • Preheat oven to 225 ℉.
  • Line 2 baking sheets with parchment paper. Set aside.
  • Wash and dry the apples.
  • Core apples (optional).
  • Slice apples as thin as possible (about 1/8 inch) with a very sharp knife or a mandolin (leave skin on).
  • Place apples on the baking sheet in a single layer and not touching each other.
  • Sprinkle cinnamon evenly over apple slices.
  • Bake for approximately 1 hour and then turn each slice over, and continue to bake for at least another hour so. The longer they stay, they crispier they get.
  • Best served the day they are made. Can be stored in an airtight container for a few days.

16 apples (washed)
8 quarts water
1/2 cup vinegar (or lemon juice)

Steps:

  • Gather the ingredients. Heat the oven to its lowest setting, usually between 140 F and 150 F.
  • In a nonreactive bowl, mix water and vinegar (or lemon juice ).
  • Use a vegetable peeler to remove the skin off the apples.
  • Core apples with an apple corer or slice each apple into quarters. Cut off tough center of each piece.
  • Using a sharp knife, cut apples into 1/4-inch-thick slices. As you slice apples, drop pieces into prepared acidulated water to prevent browning. Let slices soak while you finish slicing remaining apples.
  • Drain apple slices in a colander , letting them sit for 2 to 3 minutes to drain off as much water as possible. If apple pieces are too moist, they will steam instead of dry in oven. To remove excess moisture, place slices on top of a clean kitchen towel and pat dry with a paper towel.
  • Place cooling racks inside baking sheets and arrange apples on racks so slices are not touching.
  • Place baking sheets in the oven. If you don't have a convection oven, prop oven door open with the handle of a wooden spoon to let steam and moisture escape. Let apples dry until they are a leathery or crispy texture, depending on your preference; this can take anywhere from 6 to 10 hours. If your oven is hotter in some spots than others, turn baking sheets around occasionally so that pieces dry evenly. Once apples have the desired texture, remove from the oven. You won't be completely sure if the apple pieces are fully dehydrated until they have cooled. Let apples cool on trays for 20 minutes.
  • After 20 minutes, tear a piece of the fruit in half. There should be no visible moisture along the surface of the break. If the apple is still soft, return to oven for a bit longer. Start with 30 minutes and check for moisture again.

How to Make Oven-Dried Apple Chips (Seasoned 5 Different Ways) image

4 organic apples (your favorite variety)
2 tablespoons fresh organic lemon juice
2 cups water
Cinnamon
Cinnamon & ground ginger
Cinnamon & cayenne
Unrefined sea salt (This unrefined sea salt is super affordable)
Unrefined sea salt & rosemary

Steps:

  • Preheat oven to 200 degrees F.
  • Prepare a large glass bowl with 2 cups of water and 2 tablespoons of lemon juice.
  • Wash the apples and slice them to around ⅛" thick. (I don't remove the peels for chips.) I use my food processor with the slicing blade and it quickly and evenly slices the apples.
  • Immediately place the slices in the lemon water and soak for a few minutes. Remove and pat dry with a clean towel.
  • Arrange slices in a single layer on baking sheets lined with parchment paper and sprinkle with your favorite spices.
  • Place the baking sheets in the oven and prop the door open a couple of inches to help release moisture.
  • Bake the slices for 1 hour on one side, then flip and sprinkle with spices. Bake for another hour or until the slices turn into crispy chips.
  • Follow the same instructions as above but peel the apples and dice them into small pieces.
  • I don't bake them quite as long as chips because I like them to be a little bit chewy.

  • To stop the apples' enzymatic browning when they're cut, we'll want to immediately soak them in a bath of acidulated water. You can add 4 tbsp of lemon juice to 1.5L of water, or if you have other acids on-hand, like sodium citrate or powdered citric acid, add one 1 Tbsp to 1.5L of water.
  • Wash and core your apples. If you like, peel the apples, but there's no harm in keeping the skin on. Give the cored apples a dunk in the water bath to prevent the exposed cores from browning.
  • If you have a mandoline, V-slicer, or other adjustable-thickness slicer, this is the perfect time to use it. Set the thickness of the slicer to 3mm (1/8th of an inch). Discard the very bottom and very top slices - they'll be mostly apple skin.
