1 pound boneless, (skinless chicken thighs)
1 pound chicken drumsticks
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
apple cider BBQ sauce
2/3 cup ketchup
2/3 cup apple cider
½ cup honey
3 garlic cloves, (minced)
5 tablespoons apple cider vinegar
2 tablespoons Dijon mustard
1 teaspoon Worcestershire sauce
½ teaspoon onion powder
½ teaspoon smoked paprika
¼ teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F. Drizzle a baking sheet with the olive oil.
  • Pat the chicken completely dry with a paper towel. Season it with the salt and pepper evenly. Place the chicken on the sheet, but don't crowd the pan. Use two if needed!
  • Roast the chicken for 25 minutes. Remove it from the oven and brush it with the BBQ sauce. Bake it for another 5 to 7 minutes. Flip, brush with sauce again, and bake for another 5. Repeat the process one or two more times, slathering the chicken with the sauce.
  • Let cool slightly before serving. And serve it with the extra sauce!

Apple Cider Barbecue Sauce:
1/3 cup ketchup
1/3 cup apple cider
¼ cup honey
2 garlic cloves (minced)
2½ tbsp apple cider vinegar
1 tbsp Dijon mustard
½ tsp Worcestershire sauce
¼ tsp onion powder
¼ teaspoon smoked paprika
Sea salt and freshly ground black pepper (to taste)
Chicken:
1½ lb chicken drumsticks
Olive oil (to taste (about 1 tablespoon))
Garlic powder (to taste)
Sea salt and freshly cracked pepper (to taste)

Steps:

  • Make the barbecue sauce. Combine the ketchup, apple cider, honey, minced garlic, apple cider vinegar, Dijon, Worcestershire sauce, onion powder, paprika, and sea salt & freshly cracked pepper, to taste, in a small saucepan then whisk together until well combined.
  • Heat the stove over medium heat and bring the sauce to a boil, then reduce to low heat and simmer for 60 minutes, stirring occasionally, until thickened and reduced.
  • Remove from the heat and let sit at room temperature until it cools and thickens.
  • Preheat the oven to 400 degrees. Coat the baking sheet with olive oil cooking spray.
  • Pat the chicken drumsticks completely dry with a paper towel.
  • Drizzle the drumsticks with olive oil and spread it on evenly.
  • Season both sides of the drumsticks with garlic powder, sea salt, and freshly cracked pepper, to taste, evenly.
  • Place the chicken on the baking sheet. Place into the oven and roast the chicken for 25 minutes.
  • Remove the baking sheet from the oven and brush the drumsticks with the barbecue sauce evenly.
  • Place into the oven bake for another 5 to 7 minutes.
  • Brush with sauce again, and bake for another 5 minutes.
  • Remove from the oven and let cool slightly before serving.
  • Serve the chicken drumsticks with any extra sauce.

1 (3 pound) whole chicken
½ cup dry ranch dressing mix
2 tablespoons granulated garlic
2 tablespoons poultry seasoning
1 tablespoon ground paprika
1 tablespoon cayenne pepper
2 tablespoons olive oil, or as needed
⅔ cup apple cider, divided
1 medium onion, cut into wedges
1 tablespoon minced garlic
⅓ cup apple cider
1 tablespoon dry ranch dressing mix

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Rinse chicken and remove insides; dry off with a paper towel.
  • Combine ranch dressing mix, granulated garlic, poultry seasoning, paprika, and cayenne for rub in a bowl.
  • Rub chicken with oil. Put 1/3 cup apple cider, onion wedges, and fresh garlic inside the chicken, using onions to block the opening. Sprinkle rub all over using a teaspoon; be sure to coat legs and under wings.
  • Place chicken on a stand-up roasting rack and set into a deep baking dish. Pour in remaining apple cider and ranch dressing mix.
  • Roast in the preheated oven for 15 minutes. Lower the oven temperature to 350 degrees F (175 degrees C) and continue to bake until no longer pink in the center, the juices run clear, and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 30 minutes. Remove from the oven, cover tightly with foil, and let sit for 10 minutes before serving.

⅓ cup brown sugar
2 tablespoons ground cinnamon
1 tablespoon lemon juice
1 teaspoon ground nutmeg
6 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Whisk apple cider, brown sugar, cinnamon, lemon juice, and nutmeg together in a bowl.
  • Place chicken breasts in a single layer in the bottom of a large casserole dish. Pour apple juice mixture over chicken breasts. Cover casserole dish with aluminum foil.
  • Bake chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 1 hour. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
