I served this with pasta and it was our favorite part of dinner. The recipe is adapted from Paula Deen. The original recipe called for 1 cup of butter- you know that girl loves her butter! The garlic mellows since it is roasted so don't be afraid to use the whole bulb.

1 head garlic, unpeeled
olive oil
3/4 cup butter, softened
2 -3 tablespoons minced fresh parsley leaves
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1 loaf sourdough bread, split horizontally

Steps:

  • Preheat oven to 425 degrees F.
  • Cut top off garlic head. Place garlic on a piece of aluminum foil; drizzle with olive oil. Fold edges together to seal. Bake 30 - 40 minutes; cool.
  • Squeeze cooked garlic into a medium bowl. Garlic will be soft and sticky. Add butter, parsley salt and pepper, stirring to combine.
  • Spread cut halves of bread evenly with garlic butter mixture. Broil 5 1/2 inches from heat, with oven door partially opened, for 2 to 3 minutes, or until butter melts and bread is toasted. Cut into slices to serve.

Roast a whole head of garlic and then spread it on a baguette before another bake with Parmesan and parsley.

1 head garlic
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 12-inch baguette, split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the top third off the head of garlic, exposing the tops of the garlic cloves. Put on a piece of aluminum foil, drizzle with 1 tablespoon of the oil and sprinkle with 1/4 teaspoon each salt and pepper. Wrap tightly and roast until the cloves are golden brown and very soft, about 45 minutes; cool slightly.
  • Unwrap the garlic and pour any garlic-flavored oil from the foil into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 2 tablespoons oil and mash with a fork until smooth; season with additional salt and pepper.
  • Put the bread halves on a baking sheet and evenly spread with the roasted garlic mixture. Top with the Parmesan and a few grinds of pepper. Bake until the bread is toasted and the cheese is melted, about 10 minutes. Sprinkle with parsley and cut into pieces.

2 sprigs fresh thyme plus 1/2 teaspoon finely chopped leaves
1/2 large baguette (about a 12-inch piece), split lengthwise
2 tablespoons grated Parmesan
2 tablespoons coarsely chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F. Cut off the top third of the head of garlic, exposing the tops of the garlic cloves. Put the garlic on a piece of heavy-duty aluminum foil and drizzle with 1 tablespoon of the oil. Sprinkle with 1/4 teaspoon each salt and pepper and add the thyme sprigs. Wrap tightly with foil and roast until the cloves are golden brown and very soft, about 45 minutes.
  • Unwrap the garlic and let stand until cool enough to handle. Pour any garlic-flavored oil from the foil pouch into a small bowl; squeeze the roasted cloves into the same bowl, discarding the papery shells. Add the remaining 1 tablespoon oil, the chopped thyme and an additional 1/4 teaspoon each salt and pepper and mash with a fork until smooth.
  • Lay the bottom half of the bread on a piece of aluminum foil that is long enough to wrap the bread. Spread on half of the roasted garlic mixture and top with half of the Parmesan. Repeat with the remaining bread, garlic mixture and Parmesan. Press the halves together so the fillings are on the inside and wrap with the foil.
  • Bake until the bread is toasted and the cheese is melted, about 15 minutes. Separate the halves, sprinkle with chopped parsley and cut into 6 pieces.

4 heads garlic
¼ cup olive oil
1 ½ teaspoons kosher salt, divided
¼ teaspoon freshly ground black pepper
½ stick unsalted butter, softened
¼ cup fresh parsley, minced
1 tablespoon fresh oregano, minced
1 sourdough boule
8 oz mozzarella cheese, sliced into thick 2-inch-long matchsticks
2 oz parmesan cheese

Steps:

  • Preheat the oven to 400°F (200°C). Place a sheet of foil on a small baking sheet and line another baking sheet with parchment paper.
  • Cut ½ inch off the tops of the garlic heads and place on the baking sheet with the foil. Drizzle the garlic with the olive oil and season with 1 teaspoon salt and the black pepper.   • Using a serrated knife, carefully cut the bread into 1-inch-thick (2.54 cm) slices, stopping ½ inch (1.24 cm) from the bottom of the loaf to keep intact. Turn the loaf 90° and repeat cutting in the opposite direction.
  • Place the loaf on the parchment-lined baking sheet and stuff the mozzarella between the bread slices. Spread the roasted garlic butter over the entire loaf.
  • Place the loaf into the oven and bake until the cheese is melted and the top of the loaf is golden brown and crispy, 25-30 minutes.
  • Remove the loaf from the oven and transfer to a serving platter. Grate the Parmesan cheese directly over the top. Serve hot.

  • Preheat oven to 400 degrees. In a small bowl, mash Roasted Garlic and Roasted Garlic cooking oil to a coarse paste with a fork. Split bread horizontally and spread garlic paste evenly on cut sides. Season generously with salt and pepper. Number Of Ingredients 12

2 medium whole garlic bulbs
2 teaspoons olive oil
1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
1 tablespoon sugar
1 teaspoon salt
2-1/2 to 3 cups all-purpose flour
2 tablespoons minced fresh sage or 2 teaspoons rubbed sage
2 teaspoons minced fresh marjoram or 3/4 teaspoon dried marjoram
1 teaspoon minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
2 tablespoons grated Parmesan cheese
1 tablespoon butter, melted

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs; brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into a small bowl; set aside., In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 1 cup flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. 2 heads garlic
¼ cup olive oil, plus 2 table spoons
2 ½ teaspoons kosher salt, divided
2 ¼ cups bread flour, plus more for dusting
1 ¼ cups whole wheat flour
3 sprigs fresh rosemary, minced
1 ½ cups warm water
1 tablespoon instant yeast

Steps:

  • Preheat the oven to 400°F (200°C).
  • Remove the top of each garlic bulb so just the tops of the cloves are exposed. Set the tops aside. Drizzle 1-2 tablespoons of olive oil over top of each bulb, letting the oil seep down between the cloves. Season each bulb with ¼ teaspoon of salt. Place the tops back on each bulb and set in a shallow baking dish.
  • Bake for 20-25 minutes, until the cloves are completely tender, but not mushy. Since the garlic will continue cooking in the bread, you want them a little more firm so they hold their shape in the loaf.
  • Let the garlic to cool until safe to handle. Gentle press on the bottom of each clove to pop it out of its skin. Roughly chop the garlic cloves and set aside.
  • In a large bowl, combine the bread flour, whole wheat flour, chopped garlic, rosemary, and the remaining 2 teaspoons of salt. Stir well with a rubber spatula.
  • In a separate large bowl, combine the warm water, remaining ¼ cup (60 ml) olive oil, and the yeast.
  • Add the dry ingredients to the wet ingredients and use a rubber spatula to stir until the dough just comes together. With your hands, knead the dough in the bowl until there are no dry, floury spots remaining. Cover with a kitchen towel and let rest in a warm place for 60 minutes, or until almost doubled in size.
  • Using the spatula, fold the dough toward the center again 8 more times, rotating the bowl each time. Cover with the towel and let rest for 30 minutes more.
  • Place a Dutch oven with a lid in the oven, and preheat the oven to 450°F (230°C) for 30 minutes.
  • Lightly dust a clean surface and your hands with flour. Carefully turn the dough out of the bowl onto the floured surface. Fold the edges of the dough towards the center 8 times, then flip the dough over and transfer to a piece of parchment paper.
  • Carefully remove the Dutch oven from the oven (it will be very hot) and use the parchment to lift the bread into the pot. Cover with the lid.
  • Bake the bread for 30 minutes. Remove the lid and reduce the oven temperature to 425°F (220°C). Bake for 20 more minutes, until the bread is golden brown.
  • Carefully slide the bread out of the pot and onto a wire rack. Remove the parchment paper and let the bread cool for at least 1 hour before slicing.
  • Slice the bread and serve as desired.
