The slightly briny, slightly coppery taste of those wonderful oysters offset perfectly by the sprinkling of vinaigrette.

1 cup cider vinegar
1 tablespoon shallot, very finely chopped
1 teaspoon black peppercorns, crushed

24 oysters, such as Malpeque, Kumamoto, or Belon
Crushed ice or rock salt
Cucumber Mignonette Sauce, recipe follows
1 cup rice wine vinegar
1 shallot, minced
1-inch piece fresh ginger, peeled and grated
1/2 hothouse cucumber, peeled and minced
Several turns freshly ground black pepper
1 handful fresh cilantro leaves, chopped

Steps:

  • Scrub the oysters under cold water with a stiff brush to remove the dirt, especially in the hinge area where mud has a tendency to get trapped. Next, find a durable thick cloth and fold it over several times to create a square; this will steady the oysters as you shuck them and also protect your hand. Using the towel as a mitt, place the oyster, cup-side down in the palm of your towel-covered hand with the hinge facing you; have a small bowl handy to catch the delicious juice. Insert the tip of an oyster knife or dull butter knife as far into the hinge as it will go; don't jab it in there or you could break the shell. With gentle force, twist the knife back and forth to pry the shell open. Using the knife, cut the muscle away from the top shell, bend the shell back, and discard it. Run the knife underneath the oyster to detach it completely, but leave it in its shell. Tip out the briny liquor into the bowl and pour it back over the shucked oysters. Nestle the oysters in a bed of crushed ice or rock salt to keep them steady. Spoon the Cucumber Mignonette on top and serve as part of a raw shellfish bar.
  • In a small bowl, combine the rice wine vinegar, shallots, ginger, cucumber, black pepper, and cilantro; mixing with a fork. Cover and chill for at least 1 hour or up to the day before you plan to serve, to allow the flavors to come together. Serve with raw oysters and clams.

1 serrano chili, seeds and ribs removed, chopped

2 tablespoons chopped chives

Steps:

  • 1.To make the vinaigrette, heat the olive oil in a small sauté pan over medium heat. Add the shallots, garlic and chili and sauté until the shallots are softened, about 2 minutes. 2.Add the sugar, soy sauce and vinegar and stir until the sugar dissolves. Remove from the heat and stir in the lime juice, cilantro and chives. Let cool to room temperature. 3.Rinse the oysters under cold water then shuck them. 4.Cut the muscle that attaches the oysters to the top of the shell. 5.Spoon the vinaigrette over the top. 12 Malpeque oysters, or an assortment
4 cup crushed ice
3 Tbsp rice wine vinegar
1 Tbsp lime juice
1 tsp peeled minced fresh ginger
1 green onion (green part only), finely chopped
½ tsp grated lime zest
1 Tbsp coarsely ground pepper
coarse salt, to taste
lemon wedges, for garnish

Steps:

  • Shuck the oysters, leaving them, with their juice, on the half shell.
  • Put the ice on a platter and put the oysters on top.
  • Mix all ingredients together.

Steps:

  • Place the tip of your oyster knife into the tip of the hinge on the oyster shell, and twist to open. It may take you a few tries to get the technique, but once you do, it is easy.
  • Make sure to employ a towel over your hand. Once open, scrape the bottom and top muscles separately to loosen the flesh from the shell. Leave the mussel meat in the bottom shell.
  • Add a squeeze of lemon juice and hot sauce if you wish, and slurp down, chewing if you want the full experience.

1 Scotch bonnet pepper, or 2 serrano chiles
1/2 cup thinly sliced peeled carrots (from 2 thin carrots)
1/2 cup sliced white onion
2 cups distilled white vinegar
1 teaspoon sugar
2 teaspoons whole allspice berries
12 oysters, shucked

Steps:

  • Cut a 1-inch slit in side of pepper. Place in a small saucepan with carrots, onion, vinegar, sugar, and allspice. Bring to a boil, then remove from heat. Let cool completely, about 1 hour.
  • Divide solids equally among a few bottles; fill with vinegar mixture. Refrigerate up to 6 months. To serve, spoon vinegar mixture into oysters, or serve alongside.

Steps:

  • Fried Oyster:.
  • Mix buttermilk and hot sauce. Shuck a fresh, local oyster and drench it in the mixture.
  • Make butter from AP flour and cornmeal, then toss the drenched oysters in the batter.
  • Flash fry the oysters in very hot oil until they are golden brown. Dust them with salt, pepper and cayenne.
  • Serve on the half shell.
  • Top with Lemon Aioli and Fried Garnish.
