OZARK MOUNTAIN BERRY PIE
I think the best berries in the world are grown in the Ozarks. We own a small berry farm, and this is one of my favorite recipes. It's delicious served warm. -Elaine Moody, Clever, Missouri

- In a large saucepan, combine sugar, cornstarch, salt and if desired, cinnamon. And water and stir until smooth; add blueberries. Bring to a boil; cook and stir until thickened, 2-3 minutes. Set aside to cool slightly. Gently fold strawberries, raspberries, blackberries and lemon juice into the blueberry mixture., Preheat oven to 400°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add berry mixture; dot with butter. Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern. Trim and seal strips to edge of bottom pastry; flute edge. , Bake for 10 minutes. Reduce oven setting to 350°; bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cool on a wire rack. Store in the refrigerator.

OZARK BLUEBERRY PIE
Blueberries grow well in this area, and this old-time recipe goes over well with pie eaters. It won first prize at the 1990 Missouri State Fair!

- In a large bowl, combine first eight filling ingredients. Stir in blueberries; set aside. For crust, combine flour, salt and mace in another bowl. Cut in shortening until mixture is pea-size chunks. Add ice water, 1 tablespoon at a time, and toss lightly with a fork until dough forms a ball. Divide dough in half. On a floured surface and using a floured rolling pin, roll one half to a 10-in. circle. Place into 9-in. pie pan. Spoon filling into crust; dot with butter. Roll second half of dough to fit top of pie Moisten edge of bottom crust; place top crust over. Fold edge under bottom crust; flute with fingers. Beat egg with water; brush over crust. Cut slits in top. Bake at 425 degrees F for 40 minutes or until golden brown.

OZARK PIE
This pie forms its own bottom and top crust so it is sort of like a pie/cake. Makes a fairly shallow pie so to make it higher, bake in a 9-inch pan and increase baking time 5-8 minutes.

Steps:
- Butter a 9 1/2 inch deep dish pie pan; set aside.
- In a mixing bowl, combine egg, egg yolk, sugar, and brown sugar; beat, using an electric mixer, for 2 minutes or until light and airy; blend in vanilla.
- In another bowl, sift the flour, baking powder, cinnamon, and nutmeg; stir into the batter along with the apple and nuts.
- Transfer mixture into prepared pie pan; smoothing the top to even out.
- Place pie on the center rack of a 350° oven; bake about 30 minutes or until the top is a dark golden brown and crusted over; the apples will most likely be visible through the crust.
- Place pie on a wire rack and let cool.
- Serve barely warm or at room temperature, garnished with whipped cream.

OREGON BLUEBERRY PIE
Delicious pie that is about as close as you can get to fresh. *DO NOT use pie filling*You can use other types of blueberries but oregon is the most common and I got this recipe from their can and it works great.

Steps:
- Preheat oven to 400 degrees Fahrenheit.
- Drain the berries and reserve the syrup from one can.
- Stir the syrup in to the combined mixture of the cornstarch and half of the sugar.
- Cook over medium heat, stirring constantly until thickened (it will thicken quickly).
- Remove from heat.
- Gently stir in remaining sugar, blueberries, and lemon juice.
- Let stand while preparing pastry.
- Line a 9-inch pie pan with pastry and fill with the filling.
- Dot with butter or margarine.
- Adjust top crust on pie, cuttin slits for the steam to escape, and seal; I recommend adding some sugar over the top after sealing.
- Bake for 30 minutes or until filling is bubbly and crust is brown.

- Preheat oven to 400 degrees In a saucepan, combine sugar and cornstarch. Stir in water and lemon juice stir until smooth. Add berries, stir gently. Bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened and bubbly. Remove from heat, cool. In a prepared pie dish with bottom crust, add filling. For the top, make a lattice crust. Seal and flute the edges. Cover the edges loosley with foil to prevent over browning. Bake at 400 degrees for 10 minutes. Then reduce temperature to 350 degrees and bake for 40 - 50 minutes or until the crust is golden brown and the filling is bubbley.
