MEXICAN-STYLE MACARONI AND CHEESE



Mexican-Style Macaroni and Cheese image

1 package macaroni and cheese mix
1 tablespoon Mexican seasonings
3/4 cup Mexican cheese blend

Steps:

  • Preheat oven to 350 degrees F.
  • Make macaroni and cheese according to package directions. Transfer to a medium-size baking dish or casserole dish.
  • Sprinkle Mexican seasonings over top of macaroni and cheese. Sprinkle cheese blend over top to cover. Place in oven and bake for 5 minutes, or until cheese is melted.

Excellent "comfort" food, that everyone loves especially on a cold evening! I have also used it as a side dish with much smaller portions.

1 (20 ounce) package macaroni
3 tablespoons butter
1 small sweet onion, chopped
2 tablespoons flour
1 1/2 cups skim milk
1/2 teaspoon Aunt Jane's Krazy Mixed Up Salt
1/4 teaspoon paprika
4 ounces processed cheese, cubed (i.e.Velveeta 2%)
6 ounces extra-sharp cheddar cheese, shredded
1/2-3/4 cup seasoned bread crumbs
olive oil flavored cooking spray

Steps:

  • Prepare macaroni using package instructions.
  • Drain and set aside.
  • In a large saucepan, melt butter and saute onion.
  • Add flour, stirring constantly.
  • When mixture thickens add milk, salt, paprika and cheese.
  • Stir constantly until the sauce thickens but is smooth, resembling an extra thick cream.
  • Mix in pasta coating with cheese mixture.
  • Spray casserole dish with olive oil spray
  • ( I use a 2.5 L pyrex pan)and pour in maccaroni.
  • Cover with breadcrumbs to taste.
  • Bake at 350 Degrees for 20 minutes or until bubbling.
  • Place under broiler for a few minutes to brown bread crumbs. Be careful not to burn!

  • Combine macaroni and water in a 3 quart microwavable dish.
  • Microwave on high 9 minutes, stirring every 3 minutes.
  • Stir in butter, milk and cheese powder.

  • If these products are served occasionally with abundant fresh fruits, vegetables, and whole-grain breads or muffins, they are a reasonably good choice. Delete the butter that the directions call for and replace it with the same amount of fat free cream cheese. This tremendously decreases the fat and adds to the meal's healthfulness. It also tastes great! Kraft Shells and Cheese or Noodle Roni Shells and White Cheddar, or Parmesan Linguini, make tasty, quick meals served with a bowl of tossed salad, purple grapes, and whole-wheat bread with All Fruit Jam. Noodle Roni's Shells and White Cheddar's fat grams go from 16 per cup down to 6 per cup when you replace the 2 tablespoons of butter with 2 tablespoons of fat free cream cheese. And the end result is creamy, rich, and delicious! My family can't tell the difference. SpaghettiO's and other similar products are also good "B+" Choices. They are low in fat but not extremely high in fiber, so add fiber with lots of vegetables, fruits, and whole-grain breads or rolls. Remember, the point is not fanaticism it's lifetime liveability!
