FRIED BLUEGILL FILLETS

"The secret to this recipe is double-dipping the fish fillets," writes Doug Wright of Maize, Kansas.

Number Of Ingredients 8

1 cup seasoned bread crumbs
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon pepper
6 eggs
1-1/2 pounds bluegill or crappie fillets
1/2 cup canola oil, divided

Steps:

  • In a shallow bowl, combine the first five ingredients. In another bowl, whisk eggs. Dip fillets in eggs, then coat with crumb mixture. Dip again in eggs and crumb mixture., In a large skillet over medium-high heat, cook fillets in batches in 2 tablespoons oil for 2-3 minutes on each side or until fish flakes easily with a fork, adding oil as needed.

12-15 fillets of fresh bluegill
2 c. milk
1 egg (slightly beaten)
1 c. cornmeal
1- 2 t. Old Bay seasoning
salt and pepper to taste
4 c. canola oil
1 lemon; sliced

Steps:

  • Pour milk and egg in a medium bowl. Add fish fillets and let soak for at least one hour prior to cooking.
  • In a medium bowl add cornmeal, Old Bay seasoning, and salt and pepper.
  • Heat oil in medium pan over medium heat. Once ready, quickly take fish fillets and coat in cornmeal mixture. Then using tongs, place in hot oil for frying. Depending on size of fish, it takes 1-2 minutes per side, until cooked. Carefully watch and place on a plate with paper towel. Garnish with lemon and / or tartar sauce.

1/4 cup butter, melted
1/2 cup dry bread crumbs
1/3 cup grated Parmesan cheese
2 tablespoons minced fresh parsley
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon pepper
1 pound bluegill or crappie

Steps:

  • Place butter in a shallow bowl. In another shallow bowl, combine the bread crumbs, cheese and seasonings. Dip fish in butter, then coat with crumb mixture. , Place in a greased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 20 minutes or until fish flakes easily with a fork.

  • Dredge and Fry the Fish. Pour the oil in a large pan over medium heat. Meanwhile, pour the cornmeal and tapioca onto a plate and set next to the stove. Swirl with finger tips to disperse. Gently press the bluegill fillets into the flour mixture, coating front to back. When the oil is hot, lower the fillets into the hot oil (it should bubble right away when the oil is ready). Fry until crispy, about 3 to 4 minutes per batch. Use a spider to transfer cooked fillets to a paper towel lined plate and sprinkle while hot with sea salt.
  • Make the Aioli. Crack the egg into a medium bowl and add the lemon juice, salt, and mustard. Use an immersion blender and ever so slowly, add the oil drop by drop until it thickens*-around the time half the oil is added. Once thick, you can safely drizzle the rest of the oil in without the mayonnaise breaking. Taste and adjust lemon juice and salt to taste.
  • Serve the fish hot with a dash of cayenne pepper for a spicy kick. Serve with the lemon aioli sauce for dipping.
