SAGE RUBBED PORK CHOPS WITH WARM APPLE SLAW
NOTE: To make this quicker and easier you can use one 16-ounce bag of pre-shredded carrots and cabbage, called "Slaw Mix" instead of starting with whole cabbage and carrots. This dish can also be a one-pot-meal if you need to swap around. Just serve with some nice brown bread or whole-grain or whole-wheat bread.

- Combine the 3 teaspoons of the fresh sage or 1 teaspoon dried, garlic, 1/2 teaspoon of salt and a few grinds of fresh pepper. Rub this mixture all over the pork chops and let the chops sit at room temperature for 10 minutes. Meanwhile, thinly slice the onion, apple and cabbage and julienne the carrots (very thin sticks).
- Heat 1 teaspoon of the oil in a large nonstick frying pan until hot but not smoking. Add the chops and brown on both sides, 1 to 2 minutes per side. Remove.
- Carefully wipe out the pan. Heat the remaining teaspoon oil over moderate heat and add the onion, apples and remaining teaspoon fresh sage or 1/2 teaspoon dried. Cook, stirring occasionally, until the mixture is soft and golden brown, 4 to 5 minutes. Add the cabbage, carrots, vinegar and 1/2 teaspoon salt and continue cooking until the cabbage and carrots begin to soften, about 5 minutes. Add the broth and return the pork chops to the pan burying them in the vegetable mixture. Cover and cook just until the pork chops are just slightly blush in the center, 5 to 7 minutes longer.
- To serve, arrange the warm slaw on individual plates and top with a pork chop and pan juices.

- Heat the oven to 200°C/180°C fan/gas 6. Heat the oil in a small ovenproof frying pan and season the chop on both sides. Hold the chop in the pan with tongs, skin-side down, for about 5 minutes to help crisp up the skin and render some fat.
- Once the fat is browned, fry the chop for 3 minutes on each side until just golden. Add 4 sage leaves to the pan, then transfer the pan to the oven and cook for 5-6 minutes until the sage leaves are crisp and the chop is just cooked through (just over 60°C in the centre on a digital thermometer or when the juices run clear when pierced with a skewer). Set aside for the chop to rest in the pan for 5 minutes.
- Meanwhile, chop the remaining 2 sage leaves. Put them in a small pan with a lid, along with the chopped apple and potato. Add the milk and just enough water to cover, then put the lid on and bring to the boil. Turn down the heat and simmer for 10 minutes until the apple and potato are soft. Drain, reserving the cooking liquid, then return the apple, potato and sage to the pan and mash until smooth. Mix in the crème fraîche and just enough reserved cooking liquid to give a smooth consistency. Taste and season with salt and pepper.
- Serve the chop, mash, crispy sage leaves and steamed kale with wholegrain mustard and the chop's cooking juices spooned over the top.

- Put the potatoes and garlic in a saucepan, cover with cold water and season with salt. Cover and bring to a boil, then uncover and continue cooking until tender, about 15 minutes. Cover and set aside.
- Meanwhile, rub both sides of the pork chops with the sage, and salt and pepper to taste. Heat a large cast-iron skillet over high heat, then add 1 teaspoon olive oil and sear the chops until golden on both sides, about 5 minutes total. Transfer to a plate. Wipe out the skillet and add the remaining 2 teaspoons olive oil. Add the onion and apples and cook over medium-high heat until lightly browned, about 5 minutes. Season with salt and pepper and stir in the cider.
- Return the chops to the skillet. Cover and cook, turning once, until just cooked through, 4 to 5 minutes. Drain the potatoes, reserving 1/4 cup liquid. Return the potatoes to the pan; add the buttermilk and mash, adding cooking liquid as needed. Season with salt and pepper. Serve with the pork chops, onion and apples. Drizzle with the pan juices.

- Mix flour, sage, garlic, thyme, salt, allspice, and paprika together in a bowl. Sprinkle about 1 tablespoon of the flour mixture over both sides of each pork chop.
- Heat olive oil in a large skillet over medium-high heat. Cook pork chops in hot oil until browned completely, 2 to 3 minutes more side. Remove pork chops to a platter.
- Cook and stir onion in the oil and drippings retained in the skillet until tender, about 3 minutes; add apple slices and continue cooking until the apple slices are tender, about 2 minutes. PAN-FRIED BREADED PORK CHOPS
Look for beautiful good-quality pork, such as Berkshire, and ask for center-cut loin chops with bone. For the bread crumbs, use day-old firm white sandwich bread or French loaf, cubed and whirled in a food processor, for about three cups of soft, fluffy crumbs. Dry, fine store-bought crumbs will not yield the same result. Make sure to fry these chops very gently over medium-high heat, to allow the bread-crumb coating to brown slowly, creating a crisp, golden crust. - Lay pork chops on a baking sheet, and season well on both sides with salt and pepper.
- Combine eggs and milk in a low, flat bowl. Season with salt, pepper and the small pinch of cayenne.
- Sprinkle flour generously over the chops on both sides, then shake off excess.
- Submerge the floured chops in the egg mixture, and turn them over several times to coat well. Leave chops in egg mixture for 5 minutes.
- Use your left hand to remove a chop from the batter and drain off excess liquid. Place chop on a baking sheet and, with your right hand, heavily sprinkle with bread crumbs on both sides. Repeat with remaining chops.
- Sprinkle each chop again with crumbs, patting with your hand to make sure crumbs adhere and coat well. Refrigerate, uncovered, until ready to fry.
- Set a wide cast-iron or other heavy skillet over medium-high heat. Add clarified butter to a depth of 1/2 inch. When butter is hot, lay in the chops without crowding, and let them fry very gently, about 4 to 5 minutes per side, until beautifully golden brown. (Turn down heat if they seem to be browning too fast.) If your pan is small, cook in 2 batches and keep finished chops warm in a 250-degree oven.
- Blot cooked chops on paper towels. Transfer to a warm platter or individual plates. Serve with lemon wedges.

I don't use as much oil as stated in the recipe to fry the pork chops and since I never measure how much I use I just listed the amount of oil as it was given in the original recipe.

- Combine first 5 ingredients and beat well.
- Dip pork chops in egg mixture and dredge in the flour.
- Reserve 2 tablespoons flour to make gravy.
- In a large skillet heat 1/2 inch of vegetable oil to 350°F.
- Fry pork chops in oil until golden brown and tender.
- Turning as needed.
- Drain pork chops on paper toweling and keep warm while preparing apples and gravy.
- Reserve pan drippings in skillet.
- Take 2 tablespoons of the pan drippings and put in a small skillet.
- Add reserved flour, stirring until smooth.
- Cook for 1 minute, stirring constantly.
- Gradually add milk; stirring constantly over medium heat until thickened.
- Pour gravy in serving bowl.
- Fry apples in reserved hot pan drippings until tender, turning once.
- Drain apples well on paper towels.
- Place apple slices back in skillet and sprinkle with sugar.

- Heat grill to high. Grate the zest from half the lemon and squeeze the juice from both halves. Split the pork fillet down the centre, cutting almost all the way through, and open out like a book. - Preheat oven to 400°F. Season pork chops on both sides with salt and pepper. Heat oil in a large skillet over medium-high. Sear pork chops, turning occasionally (including outside edge of fat cap), until browned all over, 8-10 minutes. Transfer chops to a roasting pan.

BAKED PORK CHOPS WITH APPLES AND SAGE
The tastes of Autumn in this recipe are enough to warm any winter day. It's not necessary to thicken the liquid, but it does help make a better sauce. It can be made ahead up to a certain point in the recipe, refrigerated and finished later. See directions.

- Preheat the oven to 350°F.
- Heat 1 tbsp of butter with the oil in a large frying pan. Sauté the onions on medium high until golden. Layer in the bottom of a 9x13 baking dish.
- Peel, core and slice the apples, the same size as if for a pie. Heat the remaining tbsp of butter in the same pan. Sauté the apples until they begin to soften and brown slightly. Remove and add to the onions.
- Season both sides of the chops with salt and pepper. In the same pan, sear the pork chops on each side on high heat, two at a time. Use a little more oil if necessary. They should have a slightly browned crust but are not cooked through. Remove and arrange on top of the onions and apple slices.
- If making ahead, stop at this point, cover the pan with foil and refrigerate.
- Mix the cornstarch and water. Mix the apple cider, cinnamon and sage together, add the cornstarch, and pour over the chops. If desired, add more pepper and salt at this time.
- Cover with foil and bake in the centre of the oven for 30 minutes.
