BIBINGKA (FILIPINO COCONUT-RICE CAKE)

Bibingka (Filipino Coconut-Rice Cake) image

This recipe for bibingka, the celebratory rice cake traditionally eaten around Christmastime in the Philippines, comes from the New York restaurateur Nicole Ponseca. It's a savory side dish with an edge of sweetness, and she always includes it on her Thanksgiving table. Cooked in cast-iron for a deeply golden crust, and hiding slices of salty preserved eggs, the bibingka is topped with grated cheese that gets brown and crisp. Though Ms. Ponseca prefers bibingka without additional coconut on top, traditionalists may want to add a sprinkle.

Categories     cakes, dessert

Time 40m

Yield 6 servings

Number Of Ingredients 12

2 cups/320 grams rice flour
1/2 cup/55 grams glutinous rice flour
1 tablespoon baking powder
1 teaspoon salt
3/4 cup/150 grams granulated sugar
1/3 cup/76 grams unsalted butter, melted, plus more melted butter for topping, and butter for greasing pan
1 1/2 cups/355 milliliters coconut milk
3 eggs, lightly beaten
1 banana leaf (optional)
1 salted duck egg, sliced (optional)
1 cup/80 grams grated queso de bola or Cheddar cheese
1/2 cup/52 grams grated coconut, for topping (optional)

Steps:

  • Heat oven to 350 degrees. In a large bowl, whisk together rice flours, baking powder, salt and sugar. Make a well in the center and pour in melted butter, coconut milk and eggs. Whisk mixture until smooth.
  • Wash and dry banana leaf, if using, and line a 9-inch cast-iron skillet with it. (One leaf should be enough, but if more are needed, make sure to overlap leaves so there are no gaps.) Butter the leaf, and trim edges leaving a 1- to 2-inch overhang. Alternatively, generously grease skillet with butter.
  • Pour mixture into skillet and bake 15 minutes. Remove from oven and top with salted egg and cheese. Return skillet to oven until bibingka is golden and browned, and a toothpick inserted in center comes out clean, 20 to 25 minutes more. Brush with more melted butter and sprinkle with coconut, if desired.

CHEWY COCONUT BIBINGKA (FILIPINO RICE CAKE)

Chewy Coconut Bibingka (Filipino Rice Cake) image

A very coconutty and chewy rice flour dessert. Traditionally, this is baked in banana leaves, but my family prefers the crispy edges, which is why I use a sheet pan. I have been testing out several types of chewy desserts using rice flour, and this seems to be the favorite.

BIBINGKA (SWEET RICE FLOUR)

Bibingka (Sweet Rice Flour) image

Made with Mochiko (sweet rice flour) and coconut milk. This is one of my favorite Filipino desserts that I had growing up. Pieces of this dessert are like eating Pringles...you can't eat just one.

Provided by Chef Kimchee

Categories     Dessert

Time 45m

Yield 24 pieces

Number Of Ingredients 10

16 ounces mochiko sweet rice flour (1 box)
1/2 cup butter (1 stick)
2 cups sugar
4 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1/4 teaspoon salt
8 ounces sour cream
14 ounces coconut milk (1 can)
1/2 cup shredded coconut (optional)

Steps:

  • Preheat oven to 350 degrees and butter or spray a 9 x 13 glass dish.
  • Cream the butter, sugar and eggs in a bowl.
  • Add remaining ingredients and blend well.
  • Pour into glass dish and bake for 40-50 minutes.
  • Edges should have a nice light brown color while the middle is a nice cream color. Eat hot or cold.
  • (Optional) I like to add the shredded coconut to the batter. For the last 15 minutes of baking, I also like to take some of the shredded coconut and sprinkle it to the top of the cake to toast the coconut. Very delicious!

EASY BIBINGKA RECIPE (FILIPINO RICE CAKE)

Easy Bibingka Recipe (Filipino Rice Cake) image

This is the easiest and yummiest bibingka! Moist, tender, slightly gooey, and buttery rice cake. Why wait for Christmas when you can make these anytime of the year?

Provided by Mella

Categories     Dessert

Number Of Ingredients 15

1/4 cup unsalted butter
3/4 cup + 2 tbsp white sugar
3 large eggs
1/2 teaspoon salt
1 teaspoon vanilla extract
1/3 cup evaporated milk
1 cup coconut milk (canned, see note 1)
1 1/2 cup glutinous rice flour (see note 2)
1/2 cup rice flour
2 1/2 teaspoon baking powder (see note 3)
grilled banana leaves (for lining)
processed cheese (sliced into strips, divided-see note 4)
grated coconut or coconut flakes (unsweetened)
salted duck egg
coconut palm sugar

Steps:

  • Pre-heat the oven to 190c/375f. Grease large muffin cups with melted butter or line with grilled banana leaves. Place in an oven-proof tray.
  • In a small pot, melt butter slowly over low heat until it turns clear and brown. Watch carefully to prevent burning. Remove from heat and pour onto a heat-proof bowl. Residual. Let it cool completely.
  • In a large bowl, whisk brown butter and sugar. Add eggs, salt, vanilla, evaporated milk, and coconut milk. Whisk until sugar has completely dissolved.
  • Sift the rice flour, glutinous rice flour, and baking powder into a strainer over the liquid ingredients. Stir until well combined and lump-free.
  • Immediately fill the muffin cups with the bibingka batter. If the batter sits on the counter for a period of time, make sure to stir it well before pouring it over the muffin cups.
  • Top with a slice of cheese and sliced salted egg on top. Bake for 12 to 15 minutes in the top rack of the oven until the top is brown. Start checking at 10 minutes. Move the rice cakes to the middle rack and bake for another 10 to 12 minutes until the toothpick inserted comes out clean (see notes for oven types).
  • Let it cool completely. Sprinkle with sugar or grated coconut on top. Serve and enjoy!

BIBINGKA (FILIPINO RICE CAKE)

Bibingka (Filipino Rice Cake) image

A coconut-flavored, banana-leaf scented rice cake topped with caramelized coconut strips.

Provided by Yana Gilbuena

Categories     Breakfast     Dessert     Snack

Time 40m

Yield 1 eight-inch cake

Number Of Ingredients 10

1 banana leaf, cut into two 8-inch-wide by 10-inch-long pieces (optional, see note)
2 ounces unsalted butter (4 tablespoons; 55g), melted, divided
3 ounces white rice flour (1/2 cup; 85g)
1 1/4 ounces sweet rice flour (1/4 cup; 40g), preferably mochiko (see note)
1 1/2 teaspoons (7g) baking powder
1/8 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume
2 3/4 ounces sugar (1/4 cup plus 2 tablespoons; 80g), plus extra for sprinkling
3/4 cup (175ml) full-fat coconut milk
1 large egg (1 3/4 ounces; 50g)
3 ounces (85g) macapuno, drained (see note)

Steps:

  • Adjust oven rack to middle position and preheat to 375°F (190°C). If using banana leaf, rinse banana leaf pieces under cold running water and pat dry with paper towels. Working with one piece of banana leaf at a time, hold banana leaf with tongs about 2 inches above medium-high flame of a gas burner, turning every 3 to 5 seconds, until soft and pliable, about 15 seconds. Transfer to a plate and repeat with remaining piece of banana leaf. Place banana leaf pieces in an 8-inch anodized aluminum cake pan or cast iron skillet, arranging them in an overlapping configuration to completely cover the bottom and sides of the pan, pressing down on them with your hands to ensure they are flush with the pan. Brush evenly with 1/2 ounce (1 tablespoon; 15g) melted butter and set aside. Alternatively, if not using banana leaf, grease an 8-inch anodized aluminum cake pan or cast iron skillet with melted butter or pan spray and line with parchment ; set aside.
  • In a medium bowl, whisk together white rice flour, sweet rice flour, baking powder, and salt until well combined, about 1 minute. This dry mixture will look homogeneous well before it truly is, so use patience at this stage, and whisk longer than may seem necessary.
  • In a large bowl, whisk together 1 ounce (2 tablespoons; 30g) melted butter, sugar, coconut milk, and egg, until sugar is dissolved and mixture is thoroughly combined. Add flour mixture to coconut milk mixture and whisk together until completely smooth and no dry flour remains, about 1 minute. Using a flexible spatula, fold batter once or twice from the bottom up, then scrape into prepared pan.
  • Bake until batter is beginning to set at the edges, about 10 minutes. Remove from oven and evenly distribute macapuno in a single layer over top. Return pan to oven and continue to bake until cake is puffed, edges are lightly browned, and a toothpick inserted in the center comes out with few moist crumbs attached, or to an internal temperature of around 200°F (93°C), about 12 minutes.
  • Remove from oven and preheat broiler. Brush top of cake with remaining melted butter and lightly sprinkle sugar evenly over top. Broil until cake is golden brown and macapuno is slightly caramelized, about 2 minutes.
  • Transfer pan to a wire rack and cool for 10 minutes. Run a butter knife along edges to loosen, then invert onto a wire rack, remove banana leaves or parchment, and place cake right side up on serving platter. Serve warm.

Time 40m

Yield 12

Number Of Ingredients 14

4 cups grated fresh cassava
3 cups coconut milk
3 tablespoons melted butter
3 eggs
1 ½ cups white sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon zest
¼ cup shredded mozzarella cheese

  • Pour batter into a 9x5 inch loaf pan and bake at 350 degrees F (175 C) for 30-35 minutes or until done.
  • To Make Topping: Put 2 cups coconut milk, condensed milk, flour, and some grated cheese in a saucepan and boil, stirring constantly. When thick, add the slightly beaten egg yolks. Cook for two minutes. Spread on top of the cooked cassava and bake at 400 degrees F (200 degrees C) for ten minutes or until golden brown.

BIBINGKANG CASSAVA (CASSAVA CAKE)

Bibingkang Cassava (Cassava Cake) image

The term bibingka usually refers to a certain variety of sweet Filipino cakes made from rice flour, though cassava (yuca) root can also be used to make a sweet and rich bibingka as well. In the United States, fresh cassava root can easily be found in Asian or Latin markets and sometimes in larger grocery stores. However, to save time and effort I do prefer to use frozen grated cassava found in Asian markets. Don't be alarmed by the absence of flour in this cake recipe. Because of the high starch content in cassava, it alone will be able to absorb the liquid and transform into a sweet and soft cake that may be the easiest dessert you'll ever make.

Categories     Dessert     Cake     Yuca     Philippines     Wheat/Gluten-Free     Coconut

Yield Makes one 8 x 8-in. cake

Number Of Ingredients 9

For the cake:
4 egg yolks, beaten
One 1-lb (500 g) package frozen grated cassava, thawed
1 cup (250 g) jarred macapuno coconut strings, or sweetened shredded coconut
1½ cups (375 ml) canned unsweetened coconut milk
½ cup (125 ml) sweetened condensed milk
For the topping:
4 egg whites
¼ cup (65 ml) sweetened condensed milk

Steps:

  • Preheat the oven to 350°F.
  • To make the cake, combine the egg yolks, cassava, macapuno (or shredded coconut, if using), coconut milk and the ½ cup sweetened condensed milk in a large bowl and mix well.
  • Pour the cake batter into a greased 8 x 8-in (20 x 20-cm) cake pan. The cake batter will appear to be very loose and wet at this point, but don't worry, the cassava will absorb most of the liquid during baking. Place the cake pan into the oven and bake until the top of the cake appears dry and no liquid is floating on the surface, 45-60 minutes.
  • Meanwhile, to make the topping, whisk together the egg whites and the ¼ cup (65 ml) sweetened condensed milk in a medium bowl until very well incorporated. Although you are using egg whites, don't be concerned with making a foam or a meringue, just mix until combined.
  • Remove the cake from the oven and evenly pour the topping onto the cake. Return the cake to the oven and bake until the topping sets, about 10 minutes more.
  • Remove the cake from the oven and rest the cake in its pan on a cooling rack. Cool the cake completely before cutting it into squares. The cassava cake can be served at room temperature, or cold out of the refrigerator.
