PAN-FRIED TOMATOES WITH A CORNMEAL CRUST

Pan-Fried Tomatoes with a Cornmeal Crust image

In the American South cornmeal is often used to coat oysters, catfish, and chicken before frying them, but this dish, with its crunchy exterior and red-ripe, smooth tomato inside, becomes very Mediterranean. It would be a waste to use extra virgin olive oil for frying the tomatoes, but regular olive oil will impart more flavor than plain vegetable oil.

Number Of Ingredients 5

9 large ripe but firm plum tomatoes (about 1¾ pounds)
½ cup polenta or coarsely ground yellow cornmeal
Salt and freshly ground black pepper
2 tablespoons finely chopped Italian parsley
1/3 cup olive oil or vegetable oil

Steps:

  • SLICE THE TOMATOES crosswise about ½ inch thick. Discard or eat the very top and bottom slices. Mix the polenta, ½ teaspoon salt, pepper to taste, and parsley in a shallow soup bowl and dredge the tomato slices evenly in the mixture, pressing the coating to make it stick to the cut surfaces of the tomatoes.
  • IN A LARGE HEAVY NONSTICK SKILLET, heat the oil over medium-high heat until it is very hot but not smoking. Add as many tomato slices as you can without crowding the pan, and sauté for about 3 minutes. Turn the slices to the other side and sauté for another 3 minutes, or until golden. Remove to a paper towel-lined plate, sprinkle with salt, and keep warm in a low oven while you finish frying the other tomatoes. Serve warm.

PANKO FRIED GREEN TOMATOES

Panko Fried Green Tomatoes image

Panko bread crumbs have a coarser texture than ordinary bread crumbs, which you can also use to coat the tomatoes. However, the panko crumbs will give them a uniquely light and crispy texture. -Jacquelynne Stine, Las Vegas, Nevada

MOM'S FRIED RED TOMATOES

Mom's Fried Red Tomatoes image

My mom's simple recipe. Easy, great and tasty! Please remember the nutritional facts are not correct, because you are not eating all the coating ingredients. Also, these amounts are to my families tastes, adjust to your liking. REMEMBER: TO ADD MORE BUTTER AND OLIVE OIL TO THE PAN AS NEEDED. THERE SHOULD ALWAYS BE A LAYER OF LIQUID TO FRY IN.

Provided by CGchef

Categories     Vegetable

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 7

3 large tomatoes (not to ripe because you want them to hold up during cooking)
1 1/2 cups flour
2 teaspoons salt
2 teaspoons pepper
2 teaspoons seasoning salt (I use Lowery's)
1 tablespoon butter (per frying batch- maybe 3 Tbsps. needed total)
1 tablespoon olive oil (per frying batch- maybe 3 Tbsps. needed total)

Steps:

  • Cut tomatoes into thick slices. Put aside.
  • Mix flour, salt and pepper in shallow dish for coating.
  • Heat butter and olive oil in pan, until it's hot enough to fry inches.
  • Pre-heat oven to warm setting. (Lowest setting).
  • Coat tomato slices in flour mixture.
  • Place in pan until gloden brown.
  • Place on baking sheet and place in warm oven until ready to serve. (I think they taste better if put in the oven for a little bit because it crisps them up a bit.).
