1 tablespoon cinnamon
1 tablespoon vanilla extract
12 slices thick bread
2 cups coarsely ground almonds
2 tablespoons butter
Powdered sugar
Sliced seasonal fruit

Steps:

  • Beat the eggs, add the cream, salt, cinnamon and vanilla. Submerge the bread slices in the egg mixture for 5 minutes. Lay both sides of the bread in the almonds to coat. Heat the butter in a heavy pan until the foam subsides, then add the slices of bread. Cook over low flame until delicate brown. Sprinkle with powdered sugar, garnish with sliced fruit and serve hot.

Steps:

  • In a microwave, melt the candy coating, butter and cream over low heat until smooth, stirring frequently. Stir in sugar. (If mixture separates, beat with a mixer for 30 seconds.) Pour into an 8-in. square pan. Chill for 20 minutes or until slightly hardened. , Using a melon baller or spoon, scoop out and shape into 1-in. balls. Roll in sugar. ¼ cup vegetable oil, divided
3 large white onions, sliced 1/4-inch thick
½ cup butter, room temperature
1 small shallot, minced
1 teaspoon white truffle oil
2 (14 ounce) Black Angus ribeye steaks
kosher salt and freshly ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 2 tablespoons oil in a saucepan over medium-high heat. Add onions; cook, stirring occasionally, until onions are dark and soft, about 25 minutes.
  • Mix butter, shallot, and truffle oil in a bowl until blended. Refrigerate until set, about 10 minutes.
  • Preheat an oven-safe skillet over medium-high heat. Pour in remaining 2 tablespoons oil. Season steaks with salt and pepper on both sides. Cook steaks until browned, about 2 minutes per side. Cover with aluminum foil.
  • Transfer skillet to the preheated oven and bake until steaks are reddish-pink and juicy in the center, 4 to 6 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Let rest in the skillet, covered, about 5 minutes.

1/2 cup unsalted butter
1 1/2 cups freshly grated Parmesan cheese
1 cup heavy cream
Coarse salt and freshly ground pepper to taste
About 1 ounce white truffle

Steps:

  • Cook the pasta in plenty of boiling salted water. Drain.
  • Meanwhile, in a large saucepan big enough to hold the cooked pasta easily, melt the butter.
  • Stir in the cheese and cream. Add the cooked pasta, toss well and sprinkle with salt and pepper.
  • Put into a serving dish and grate the truffle over the pasta or serve the truffle at the table allowing each guest to help himself. Serve additional cheese in a small bowl.

Half a tablespoon coarse salt
1/3 to three-quarters of a pound fettuccine
2 tablespoons butter
Freshly ground pepper to taste
2 tablespoons freshly ground Parmesan cheese
1 white truffle (about one-third ounce)

Steps:

  • Bring the water and salt to a rolling boil and cook the pasta until al dente (firm and resilient to the bite).
  • Drain the fettuccine and return to the saucepan you have cooked it in with the butter. Add salt and pepper. Turn onto individual heated plates and serve. Sprinkle with Parmesan cheese. Grate the truffles on top.

4 cups warm milk
Dash of ground nutmeg

  • Cook pasta until tender but still firm to bite. Drain. Rinse under cold water; drain well. Drizzle with oil; toss. Set aside.
  • Melt 8 tablespoons butter in large pot over medium heat. Whisk in flour. Stir constantly for 3 minutes (do not brown). Gradually whisk in milk. Bring to boil, whisking. Reduce heat to medium-low. Simmer until sauce is thick and smooth, whisking often, about 5 minutes. Add nutmeg. Season with salt and pepper. Cool 30 minutes, whisking occasionally. Whisk in truffle powder. 3 cups whole milk
4 tablespoons butter
3 tablespoons all-purpose flour
1 teaspoon salt
1 pinch ground black pepper to taste
1 pinch ground nutmeg
3 cups shredded Gruyere cheese
2 cups shredded extra-sharp Cheddar cheese
⅓ cup cooked and crumbled bacon
1 tablespoon white truffle oil
3 tablespoons bread crumbs, or as needed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  • Combine milk and butter in a large pot over medium heat. Heat just until butter melts, 3 to 5 minutes. Whisk in flour gradually until sauce is smooth again. Add salt, pepper, and nutmeg.
