Green Beans with Vinaigrette image

These fresh green beans help balance out the richness of the rest of the Thanksgiving meal.

2 pounds green beans, stem ends trimmed
2 tablespoons extra-virgin olive oil
1 tablespoon white-wine vinegar
1 teaspoon Dijon mustard
1 teaspoon coarse salt
1/4 teaspoon ground pepper

Steps:

  • Bring 1 inch of water to a boil in a large pot fitted with a steamer basket. Fill a large bowl with ice water; set aside.
  • Place green beans, stem ends trimmed, in basket. Cover; steam until crisp-tender, 5 to 8 minutes. Plunge beans in ice water. When cool, drain; pat dry with paper towels. Transfer to a large bowl.
  • In a small bowl or jar, whisk or shake extra-virgin olive oil, white-wine vinegar, Dijon mustard, coarse salt, and ground pepper until thickened and combined. Pour over beans; toss to coat.

Pan-Roasted Green Beans with Dijon Vinaigrette image

Roasting green beans in a hot pan concentrates their flavor so they hold their own with the Dijon mustard and lemon in the vinaigrette.

Zest and juice of 1 lemon
1 tablespoon apple cider vinegar
¼ cup whole-​grain Dijon mustard
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup plus 1 tablespoon extra virgin olive oil
½ medium red onion, thinly sliced into half-​moons
1 pound green beans, stemmed

Steps:

  • In a small bowl, whisk together the lemon juice, vinegar, mustard, salt, and pepper. Whisk in ¼ cup of the olive oil and lemon zest and set the vinaigrette aside.
  • Heat 1½ teaspoons of the olive oil in a large skillet over medium-​high heat. Add the red onion and cook until golden, 7 to 9 minutes. Transfer to a bowl and set aside.
  • Return the pan to the heat, add the remaining 1½ teaspoons of olive oil, and spread out the beans in a single layer as much as possible. Allow the beans to cook without moving until they begin to blister and start to turn brown in spots. Stir and continue to cook to the desired tenderness, 8 to 10 minutes. Just before turning off the heat, add the onion back to the pan and stir to combine.
  • Remove the pan from the heat and pour the vinaigrette directly into the pan. Stir to combine, then let stand for 10 to 15 minutes so the beans can absorb some of the dressing. Serve warm or make ahead and serve as a cold salad.

1 pound fresh green beans, trimmed
¼ cup extra-virgin olive oil
sea salt and freshly ground black pepper to taste
½ large lemon, juiced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Toss beans with olive oil in a medium mixing bowl until well coated. Spread beans out on a rimmed baking sheet, or in a roasting pan. Sprinkle lightly with salt and pepper.
  • Roast in the preheated oven until beans look shriveled and browned, about 20 minutes.
  • Remove beans from the oven, gather into a pile, and squeeze lemon juice over the top. Toss and serve.

Steps:

  • Combine olive oil, red wine vinegar, Dijon mustard, and maple syrup in a bowl. Whisk until smooth.
  • Place green beans into a pot and cover with salted water; bring to a boil and cook for no more than 3 minutes. Remove from heat and drain.
  • Toss green beans in dressing mixture or serve with dressing on the side.

1 tablespoon olive oil, or as needed
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
  • Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

  • Wash, dry, and remove ends from green beans. Mince garlic, chop almonds, and chop parsley.
  • Heat a large pan or skillet over medium heat, and add olive oil and garlic. Sauté for ~2 minutes, until the garlic starts to brown. Add green beans and cook for about 10-12 minutes, stirring every minute or two. Green beans should be tender but still crunchy when done.
  • While green beans cook, make the dijon vinaigrette by combining all vinaigrette ingredients into a jar and shaking vigorously. Set aside.
  • Toast almonds in a separate pan. Heat over medium and add chopped almonds (no oil is needed). Stir almonds frequently, for about 7-10 minutes. Make sure not to burn - almonds should be lightly browned, toasted, and fragrant. Remove from heat once done.
