PAN-ROASTED BROCCOLI
Pan-roasting broccoli results in a carmelized flavor, a completely different taste using broccoli, salt, and pepper. Adapted from Cook's Illustrated.

Steps:
- Stir water, salt, and pepper together in small bowl, til salt dissolves.
- In a large skillet, heat oil over medium high then add the broccoli stems in an even layer.
- Don't stir for about two minutes until they get light browned.
- Add the florets and toss to combine and don't stir for another two minutes, until they just begin to brown.
- Add water spice mixture and cover pan with lid, cooking for two minutes.
- Uncover and cook until desired doneness.
- Note: I eyeballed my broccoli measurements and it worked fine. I did add a little water to mine.
EASY 10 MINUTE PAN-ROASTED BROCCOLI
This recipe for pan-roasted broccoli is SO easy and delicious that it's guaranteed to be your new go-to side dish! You only need 4 ingredients and it's ready in 10 minutes!

Steps:
- In a cast iron skillet or heavy-bottom pan, heat olive oil over medium-low heat for 2-3 minutes.
- Meanwhile, prepare the broccoli by cutting entire head of broccoli in half. Laying the flat side down, cut off each floret from the base of the floret all the way down to the bottom of the stem.
- When the oil is hot, add all the broccoli to the pan, arranging so that as many pieces as possible are touching the bottom of the pan. Season with 1/2 tsp salt plus pepper to taste and allow to cook for 5 minutes, undisturbed.
- After 5 minutes, stir and rearrange the broccoli so that the sides that were down are now facing up. Season again with salt and pepper and cover with a lid. Allow to cook for 3 more minutes.
- Stir before serving. Best when served hot.

PAN STEAMED BROCCOLI
Steps:
- Peel the stalk of the broccoli, remove the florets and cut into 1-inch pieces. Cut the stalk in half crosswise and then slice each half into 1/8-inch thick slices lengthwise. Place the stalk pieces in the bottom of a 2 1/2 to 3-quart saucepan, add the water and salt. Lay the florets on top. Cover, place over high heat and cook for 3 minutes. Decrease the heat to low and cook for an additional 3 minutes. Remove from the heat, add the butter and stir to combine. Serve immediately.

- Heat oil in a pan over medium heat until it begins to shimmer.
- Add the broccoli and sprinkle with salt, stirring to coat in the oil.
- Cook for 5 minutes, without moving the broccoli.

PANKO-PARMESAN ROASTED BROCCOLI
This roasted broccoli side dish is crunchy, salty, earthy, and super addicting! The crusty panko-Parmesan coating may add some calories but it's definitely a good way to introduce broccoli to anyone who says they don't like it, plus it satisfies a craving for fried food. - Preheat the oven to 425 degrees F (220 degrees C). Line a large rimmed baking sheet with foil.
- Toss broccoli, bread crumbs, olive oil, garlic powder, lemon zest, salt, black pepper, and pepper flakes on the prepared baking sheet.
- Roast in the preheated oven for 10 minutes. Toss broccoli and continue to roast until golden brown around the edges and slightly crisp, but not mushy, about 10 more minutes.
- Remove from the oven. Immediately drizzle with lemon juice, then sprinkle with Parmesan cheese and serve.

PAN FRIED BROCCOLI
This is my husband's creation. When he makes it, he uses double the amount of red pepper flakes. My man likes his spices!

- Heat olive oil in a large frying pan or wok.
- Cook chopped garlic in oil at medium-high heat or until light brown (being careful not to burn).
- Add broccoli spears to pan. Sprinkle remaining ingredients onto broccoli and toss to combine.
- Cover and cook for 7-10 minutes or until broccoli heads begin to darken (but not burn), stirring every minute or so. If necessary, lower the heat.
- Sometimes I like to add a little parmesan cheese to the pan right before the broccoli goes onto the plate.

PAN-SEARED POLPETTONE WITH BROCCOLI

- 1. Blanch broccoli 2-3 min in large pot of boiling salted water; Drain; transfer to bowl of ice water; drain and set aside. 2. Combine ground beef, onions, breadcrumbs, milk, egg, and 2 Tbsp basting oil; shape into 6 oblong patties. Dust with pan-searing flour; pat off excess. 3. Heat olive oil in skillet on MEDIUM-HIGH until oil faintly smokes; add patties. Turn over when patties change color one quarter way up and seared side has turned turn paper-bag brown, 2-3 min. When internal temp of patties reaches 160 degrees (check by inserting thermometer into thickest part of patty), remove from skillet; keep warm. Drain excess drippings from pan. 4. Add remaining 1 Tbsp basting oil and butter; swirl, being careful not to burn butter. Baste patties with spoon, 1-3 min. Transfer patties to clean platter; let rest 5-10 min. 5. Discard pan drippings. Add broccoli, red pepper flakes, lemon zest, salt and pepper to taste; toss gently to warm through. To Serve: Spoon warmed sauce onto six plates; top each with meat patty. Serve with broccoli. Chef Tip: 3 pkgs(16 oz ea) frozen broccoli can be substituted for the fresh, and you don't have to blanch it.
