Good Old Fashioned Pancakes image

This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

2 cups all-purpose Flour
4 tablespoons salted butter (if unsalted increase salt by 1 tsp)
4 tablespoons Sugar
2 tablespoons baking powder
1.25 tablespoons baking soda
1 teaspoon salt
2 eggs
8 ounces evaporated milk
8 ounces water - up to 8 oz
4 tablespoons apple cider vinegar (use 0.5 tablespoon less if using regular white vinegar)

Steps:

  • 1. mix all dry ingredients in a bowl.
  • 2. put in all of the liquid ingredients EXCEPT vinegar
  • 3. mix up the ingredients thoroughly but slowly
  • 4. heat grill to 375
  • 5. when ready to cook, pour in 4T of vinegar and stir in thoroughly
  • 6. use 1/3 to 1/2 cup scoop and pour onto grill
  • 7. when browned around edges, flip over and cook until done

Steps:

  • Add the flour, salt, baking powder and sugar into a mixing bowl and mix until combined.
  • In another bowl combine the egg, oil, water/milk and vanilla extract.
  • Put the egg mix into the flour mix and whisk. It can still be a little lumpy it doesn't make a difference to the taste.
  • Pour 1/2 a ladel into a hot frying pan that has oil so the pancake doesn't stick. Make them fairly small but not too small. When bubbles appear on the top. Flip the pancake and wait 1 minute for the other side to cook then you are ready for the next pancake
